½ cup water
2 cups white sugar
½ cup light corn syrup
1 ½ cups peanuts
2 tablespoons butter
1 teaspoon vanilla extract
3 drops red food coloring

Steps:

  • Grease a cookie sheet or other flat surface.
  • In a 2 quart glass measuring cup combine water, sugar and corn syrup. Microwave on high until boiling. Stir in peanuts.
  • Microwave on medium to between 234 and 240 degrees F (112 to 116 degrees C), or until a small amount of syrup dropped into cold water forms a soft ball that flattens when removed from the water and placed on a flat surface.
  • Stir in butter, vanilla and food coloring. Beat until creamy and cool. Drop by teaspoonfuls onto prepared pan.

2 cups Granulated sugar
1/2 cup Water
1 tablespoon Milk
1/2 cup Light Corn Syrup
dash Salt
1 1/2 cups Raw peanuts
2 1/2 tablespoons Butter or margarine
1 teaspoon Vanilla
2 drops Red food coloring

Steps:

  • Combine sugar, water, milk, corn syrup, salt and peanuts in a 2-quart, microwave safe glass (Pyrex) measuring cup or similar glass/corningware cooking dish. Cook on high for 4 min.; stir. Return to microwave and cook 7-9 minutes more until it reaches soft ball stage (234 degrees using a candy thermometer) is reached. If you prefer, use the cold water method to test for soft ball. Remove from microwave and stir in butter, vanilla and red food coloring. Beat with a wooden spoon as the mixture cools until the color turns creamy and it begins to thicken up (if you beat too long it will be too stiff to work with). Working quicdkly, drop by tablespoon onto greased cookie sheet. Mixture is very hot! It helps to use two spoons - one for scooping, and one to scrape off the spoonful onto the cookie sheet. Makes approx. 20 two-inch peanut patties.

1 cup white sugar
½ cup light corn syrup
1 cup salted peanuts
1 teaspoon butter
1 teaspoon vanilla extract
1 teaspoon baking soda

Steps:

  • Butter a cookie sheet. Combine sugar and corn syrup in a 2 quart glass bowl and microwave on high 4 minutes. Stir in peanuts and microwave on high 3 1/2 minutes more, then stir in butter and vanilla and microwave for 1 1/2 minutes.
  • Stir in baking soda until light and foamy. Pour onto cookie sheet and spread thin. Cool completely and break into pieces and serve.

1 cup white sugar
½ cup light corn syrup
1 ½ cups peanuts, or more to taste
1 tablespoon butter
1 teaspoon baking soda
1 teaspoon vanilla extract

Steps:

  • Spray a baking sheet and a wooden spoon with cooking spray.
  • Mix sugar and corn syrup together in a microwaveable bowl safe for high temperatures.
  • Heat sugar mixture in microwave on high for 5 minutes.
  • Stir peanuts and butter into sugar mixture. Heat in microwave until mixture becomes a caramel color, 3 to 4 minutes.

1 ½ cups dry roasted peanuts
1 cup white sugar
½ cup light corn syrup
1 pinch salt
1 tablespoon butter
1 teaspoon vanilla extract
1 teaspoon baking soda

Steps:

  • Grease a baking sheet, and set aside. In a glass bowl, combine peanuts, sugar, corn syrup, and salt. Cook in microwave for 6 to 7 minutes on High (700 W); mixture should be bubbly and peanuts browned. Stir in butter and vanilla; cook 2 to 3 minutes longer.
  • Quickly stir in baking soda, just until mixture is foamy. Pour immediately onto greased baking sheet. Let cool 15 minutes, or until set. Break into pieces, and store in an airtight container.

2 Tbsp butter
1 tsp vanilla
2-3 drops red food color

Steps:

  • Combine in 2 quart casserole or measure cup sugar, water, salt and white corn syrup. Bring to boil in microwave (approx. 3 min.) Stir and add raw peanuts. Return to microwave and cook approx. 7-9 minutes or until soft ball stage.
  • Remove from microwave and add butter, vanilla, and food color. Cool and beat until creamy.
  • Drop by tablespoons onto greased cookie sheets or make into large patties.

There was a candy co., "Tom's," in the South that made these wonderful pink peanut patties. This recipe tastes just as yummy! It's the raw peanuts --they're not cooked to roasted stage. I adapted the recipe from stove-top directions back in the late 60's. It's so easy my sons made it, too, as kids. No scorching, no continuous stirring: let the microwave work for you. I use a 2-qt. glass measuring cup with handle, a wooden spoon for stirring and have a glass lid that fits. The handle helps when the candy hits over 200* The cooling pad of waxed paper over newspaper keeps the wax from sticking to your counter top. Time numbers in brackets are for double batch. See the companion recipe for Pecan Pralines. Both are great for gifts!

  • Stir in vanilla and powdered sugar.
  • Mix well, then drop by spoonfuls onto waxed paper on newspaper pad. Enjoy! They're better than Tom's.

2/3 cup corn syrup
2 cups peanuts, raw
1 tablespoon butter

  • Combine sugar, milk & corn syrup on indirect heat- add peanuts-cook until it forms a firm ball in cold water-or hard boil stage. Remove from heat- add butter, vanilla,coloring. Beat until mixture drops from a spoon on buttered sheet.
  • I typed as it was written in her file from her friend. I used direct heat the whole time and had to beat for quite a while to get it thick enough to drop into patties. These taste amazing- but are a lot of effort. My Papa's favorite candy, mine too ! Good old fashioned candy !

3/4 cup evaporated milk

2 cups Spanish peanuts

Steps:

  • Combine the sugar, pudding mix, and milk in medium sauce pan over medium high heat stirring frequently. Bring the mixture to a boil; reduce the heat to medium and boil for 5 minutes.
  • Remove from the heat and stir in the vanilla.
  • Beat for 3 minutes until thickens and stir in the peanuts.
  • Drop by tablespoon full onto wax paper and allow candy to harden.
  • Store in an airtight container.
  • For gifts, give in tins.

  • Add vanilla and pecans.
  • Stir, then cook on High 2min. (5).
  • Stir in powdered sugar.
  • Drop by teaspoonfuls onto waxed paper over newsprint. If candy gets too thick, reheat 20-30 secs.
  • Add more nuts at the end if you run out of nuts before candy, (but these don't taste as good as the cooked nuts.).
  • You can also drizzle the extra candy at the end over the first pralines which don't have as much because it was too hot at first.
  • It's the powdered sugar that makes the syrup crystalize as it cools.
  • You can cook on stove---get syrup to softball stage -234*; stir constantly.
