An easy, no-fail Traditional Meatloaf Recipe made simple and delicious! Topped with a sweet and tangy meatloaf glaze. Always juicy, tender, and never dry!

- Preheat the oven to 350° and have ready a rimmed sheet pan lined with foil, preferably nonstick foil.
- In a large bowl, use a fork to mix together breadcrumbs, salt, pepper, garlic powder, and onion powder. Add the milk, egg, and Worcestershire and mix once more.
- Add the ground beef and minced onion and mix with your hands until all of the ingredients are evenly incorporated. Transfer the mixture to the prepared pan and shape into a narrow loaf (the meatloaf will spread as it bakes).
- To make the topping, combine ketchup, sugar, Worcestershire sauce, salt, garlic powder, onion powder, and black pepper in a small bowl and whisk to combine.
- Pour half of the sauce mixture over the meatloaf and bake for 35 minutes. Remove from the oven, carefully pour over the remaining sauce, and bake an additional 30-35 minutes.
- Allow the meatloaf to rest about 15 minutes before slicing into. Serve and enjoy!

- In a large skillet heat the butter over medium-high heat until melted. Add all but 1/4 cup of the onions, the celery and all but 2 tablespoons of the bell pepper and cook, stirring occasionally, until vegetables are softened and beginning to caramelize around the edges, about 6 minutes. Add 2 teaspoons of the garlic, the thyme, rosemary, and parsley and cook for 2 minutes. Remove from the heat and allow to cool.
- Preheat the oven to 350 degrees F.
- When the vegetable mixture is cooled, transfer to a mixing bowl and add the eggs, mustard, 1/4 cup of the ketchup, 1 teaspoon of the Worcestershire sauce, and heavy cream and mix until thoroughly combined. Add the breadcrumbs, ground chuck, pork sausage, ground veal, 1 teaspoon of the salt and 1/4 teaspoon of the pepper and mix until just combined. Do not overmix. Transfer meat mixture to a 9 by 5 by 3-inch loaf pan and using your hands, form mixture into a loaf shape. Arrange the slices of bacon on the top of the meatloaf and set aside.
- In a small saucepan combine the remaining 1/4 cup of chopped onion, remaining 2 tablespoons of green pepper, remaining teaspoon of garlic, remaining 1/2 cup of ketchup, remaining 2 tablespoons of Worcestershire sauce, remaining 1/2 teaspoon of salt, remaining 2 teaspoons of pepper, vinegar, and canned tomatoes and bring to a boil over medium-high heat. Cook until thickened, about 5 minutes.
- Pour the sauce over the uncooked meatloaf and bake for 45 minutes to 1 hour, or until the bacon and sauce are slightly caramelized on the top of the meatloaf. Remove from the oven and cover loosely with aluminum foil. Let stand for 10 minutes before serving. Slice and serve along with the Macaroni with 4 Cheeses.
GROUND TURKEY MEATLOAF WITH A KICK
This moist and versatile meatloaf is packed with flavor. I make it with hot peppers to add a spicy layer that complements but doesn't overpower. For mild taste preferences, substitute green bell pepper for the hot peppers.

- Preheat the oven to 350 degrees F (175 degrees C).
- Mix together ground turkey, milk, eggs, jalapeno peppers, serrano peppers, carrot, onion, chives, Worcestershire sauce, olive oil, salt, rosemary, thyme, garlic powder, mustard powder, black pepper, and sage in a large bowl.
- Place 5 slices bread in the bowl of a food processor; pulse for a few seconds at a time until bread is ground into crumbs. Add bread crumbs to turkey mixture. Rake a fork across the surface of the mixture. When the surface barely retains the fork impression, the consistency is correct. Add more bread crumbs if mixture is too moist; add more milk if mixture is too dry.
- Form turkey mixture into a loaf shape and place in a large cast-iron skillet.
- Bake in the preheated oven until no longer pink in the center, about 1 1/2 hours. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

- Preheat oven to 350 degrees.
- Combine ground beef, oatmeal, milk, egg, onion, salt, and pepper in a medium-sized mixing bowl. Using your hand, incorporate everything into the meat. This only takes 30 seconds or so. You do not want to over-mix.
- Transfer meat into a large loaf pan and press it down evenly into the pan.
- For the glaze, mix ketchup, brown sugar, and mustard in a small bowl. Pour evenly over meatloaf.
- Bake at 350 degrees for 1 hour and 20 minutes.
- Remove from oven and drain off excess grease. Let stand for 5 minutes before serving.

MEATLOAF WITH A KICK!
We loved this meatloaf which was printed in Redbook magazine. The original recipe says to shape it in a loaf and cook it on a cookie sheet, but we just put it in a loaf pan cooking for about the same amount of time. Served with baked potatoes and cooked carrots this is my idea of comfort food!

- To make glaze whisk together glaze ingredients in a measuring cup or bowl and set aside.
- Heat oven to 325 degrees F.
- In a food processor or blender grind the oatmeal and then transfer them to a large bowl. Add egg, milk, salt, peppers and cumin to oats and stir to combine.
- In the food processor add the vegetables (onion - garlic) and pulse until chopped (I processed a bit too long so mine resembled baby food but it still worked out well). Add to the ground beef mixture, stirring to combine -- do not over mix.
- Spoon into a loaf pan (original recipe said to form into a oval that is 8 x 4 x 3 -- but the loaf pan is so much easier.
- Bake for 10 minutes and then spoon glaze over loaf. Cook for another 50 minutes or until done. Let rest a few minutes before serving.

I love having a nice bit of spice in most of my meals, and this meatloaf has a nice kick of spice to if thats what your into!! If not, you may need to adjust the cayenne and red pepper!!

I was playing around with my meatloaf recipe to make it more healthy. This is the result, and we loved it - perhaps more than the original recipe. I use the whole wheat/wheat germ options for fiber, and fresh home made spicy salsa for a fresh taste. The nonfat half and half helps keep the low fat meat very moist.

- Preheat oven to 375.
- Spray a loaf pan with vegetable spray.
- Gently break up ground beef in large bowl.
- In separate small bowl, shred bread slice into small pieces.
- Add half and half, mash bread in the half and half with a fork.
- Add egg, 4 tbsp of salsa, dried onion flakes, bread crumbs (or wheat germ), and salt.
- Stir with fork and let rest for 5 minutes.
- Add half and half mixture to ground beef.
- Stir gently to combine.
- Place beef into loaf pan, forming to fit and smoothing the top.
- Pour remainder of salsa on top of the meat loaf and spread out to cover.
- Bake until done, about 1 hour and 15 minutes.
