- Place bread in a greased 13x9-in. baking dish. In a large bowl, beat eggs, milk, vanilla and cinnamon; pour over the bread. Cover and refrigerate overnight. Remove from the refrigerator 30 minutes before baking. , Meanwhile, in a bowl, cream butter, brown sugar and syrup until smooth; spread over bread. Sprinkle with nuts. Bake, uncovered, at 350° for 1 hour or until golden brown.

- First allow your sliced bread to sit at room temperature for approximately 1 hour to allow the surfaces to dry out.
- In a wide bowl, beat your eggs with your maple syrup until the mixture is slightly thickened.
- Beat in the milk, vanilla, nutmeg and salt.
- Place your bread slices in the mixture and allow them to soak in the mixture for approximately 5 minutes until saturated well.
- Next you will want to preheat your skillet over medium heat and add 2 Tablespoons of butter.
- Once your butter has melted reduce your heat to medium-low and saute bread slices for about 5-6 minutes per side, making sure that you flip each slice over every 2 minutes or so to make sure that they brown evenly.
- You may have to cook in 2 batches if you use a smaller skillet.
- Sprinkle with confectioners' sugar, and place random berries around the plate for a nice look and tasty meal.
CRUNCHY MAPLE NUT FRENCH TOAST
The key here is to finely crush the cornflakes and nuts. I use my hand cranked nut chopper and just put them all thru it together. The combinations on this are endless, we like maple flavoring with pecans or walnuts, but use almond or vanilla extract with almonds, or butter flavoring with peanuts! Enjoy using your imagination!

- Preheat oven to 350 degrees.
- Whisk together the eggs, milk, half-and-half, extract, cinnamon, nutmeg, and salt in a shallow baking dishm I use a pie pan and set aside.
- Combine the cornflakes and nuts in another shallow dish, I use a paper plate.
- Melt 1/3 tablespoon butter in a large skillet over low heat.
- Dip 2 slices of bread in the egg mixture and lightly coat each side.
- Transfer the slices to the cornflake mixture, turn to coat, and place in the prepared skillet.
- Cook for 3 minutes on each side, transfer to a baking sheet, and set aside.
- Repeat with the remaining butter and bread slices.
- Place in the oven and bake for 10 minutes. Serve immediately or keep warm in 200 degree oven.

- Preheat oven to 200°. Place a baking sheet in oven to warm. In a large bowl, combine eggs, milk, sugar, vanilla, and cinnamon. Whisk until blended; set aside. Combine brown sugar, nuts, and bread crumbs. Combine maple syrup and vanilla; set aside in a pitcher. Dip a slice of bread in egg mixture and allow excess egg to drip off. Lay bread on nut mixture, then flip to coat both sides. In a large skillet over medium heat, melt about 1 tablespoon butter without allowing it to brown. Cook French toast until golden on both sides, about 2 to 3 minutes, being careful not to let nuts burn. Place on baking sheet in oven and continue with remaining slices. Dip and coat each slice just before cooking,adding more butter as needed. Serve with syrup and butter, if desired.

- FRENCH TOAST:.
- Trim ends from the loaf of bread and cut the bread into six 1-1/2" thick slices.
- To make a pocket in each slice, beginning at the top, cut lengthwise in half to within 1" of the bottom.
- Set aside.
- In a small bowl, beat 3/4 cup of cherries, cream cheese or mascarpone, whipping cream and 2 tablespoons powdered sugar.
- If you like, with an electric mixer until well combined.
- Spread about 1/4 cup of the mixture into pocket of each slice of bread.
- Gently press pieces of bread together, distributing filling evenly inside pocket.
- Combine eggs, cinnamon and vanilla in a shallow dish.
- Dip bread into egg mixture to coat all sides.
- On a griddle or in a skillet, cook bread in hot butter or margarine over medium heat for 2-3 minutes on each side or until golden brown.
- Add more butter or margarine, if needed.
- Remove from heat and cut French toast in half diagonally, forming two triangles.
- Place three triangles for each serving on warm plates.
- Sprinkle with additional powdered sugar and remaining cherries.
- MAPLE-PECAN SYRUP:.
- Melt butter or margarine, add nuts; brown lightly: remove nuts.
- Add maple syrup, honey, cinnamon and salt to butter in saucepan over medium heat, stirring often, until slightly thickened, about 10 minutes.
- Remove from heat and stir in pecans and cinnamon.
- Let cool; mixture will thicken as it cools.
- Serve the french toast with warm syrup and slices of apple on to, or with powdered sugar.
- *If you choose you can sub any kind of fruit.

- Preheat oven to 300 degrees F. Whisk the eggs in a medium bowl until well beaten. Add the milk, sugar, and cinnamon; mix well.
- Combine the coconut and cornflakes in a shallow pan. Heat the butter in a large skillet over medium heat until bubbly. Dip 4 bread slices into the egg mixture, then coat with the coconut mixture. - FOR Creamy Maple Syrup: Combine sugar, 1/2 cup evaporated milk, syrup and 1 teaspoon vanilla extract in small saucepan.
- Cook over medium heat, stirring constantly, until sugar is dissolved.
- Remove from heat; stir in 2 tablespoons butter. Makes 1 1/2 cups.
- FOR FRENCH TOAST: whisk together eggs, remaining 1 cup evaporated milk, vanilla extract and cinnamon in medium bowl.

NUTMEG-COATED CREAMY FRENCH TOAST

- Cut the bread into thick slices a little shy of 1 inch (see Note). Arrange the bread in a single layer in a 13-by-9-inch pan, using an additional 8-inch square pan if necessary.
- Whisk the eggs, egg yolks, and salt together in a medium bowl for 1 to 2 minutes, or until they are light, frothy, and completely smooth. (There should be no bits of egg or stringiness remaining, or you will have pieces of cooked egg on the toast.) Whisk in the half-and-half, yogurt, granulated sugar, and 2 teaspoons nutmeg until well blended. Pour the egg mixture over the bread. Cover with plastic wrap and refrigerate overnight, carefully turning the bread once or twice if possible.
- When ready to cook, preheat an electric nonstick griddle to 350°F or heat a nonstick skillet over medium heat. Lightly brush the griddle or skillet with some butter and cook the bread in batches for 6 to 8 minutes or until golden brown on the outside but still soft in the center, turning once. Adjust the heat as necessary.
- While the bread is frying, stir together the powdered sugar and 1/8 teaspoon nutmeg and put in a fine-mesh strainer. Sprinkle the hot French toast with the powdered sugar mixture and serve topped with maple syrup or preserves.
