My Grandmother's Cabbage and Noodles image

I don't like cabbage, really. But my grandmother passed this recipe down. If you like bacon and noodles, then you'll love this. You can't even taste the cabbage.

3 cups water
2 tablespoons butter
1 (12 ounce) package bacon, chopped
1 head cabbage, cored and chopped
1 (8 ounce) package egg noodles
salt and ground black pepper to taste

Steps:

  • Place water and butter in a large, deep skillet and bring to a boil; stir in bacon and return to a boil.
  • Stir cabbage into the bacon mixture; simmer until the thickest pieces of cabbage are fork-tender and the liquid has almost evaporated, about 20 minutes. Drain.
  • Fill a large pot with lightly salted water and bring to a rolling boil. Stir in egg noodles and return to a boil. Cook noodles uncovered, stirring occasionally, until tender but still slightly firm, about 5 minutes. Drain well.
  • Lightly toss egg noodles with bacon and cabbage; season to taste with salt and black pepper.

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook the egg noodles in the boiling water until the pasta is tender yet firm to the bite, about 5 minutes. Drain.
  • While the noodles cook, melt the butter in a large skillet over low heat. Add the cabbage to the melted butter; season with salt and pepper. 1/2 cup butter
2 cups sliced sweet onions, about 1/8 inch thick
2 teaspoons brown sugar

  • Cook egg noodles according to package directions, then drizzle with a bit of oil to prevent the noodles from sticking together and set aside.

0.5 head Green cabbage (600 g)
1 onion
100 grams smoked Bacon
1 Tbsp vegetable oil
1 tsp powdered sugar
1 Tbsp Wine vinegar
1 tsp Caraway

150 grams cream cheese
300 grams Pastry flour
3 eggs
1 tsp vegetable oil
salt
Pastry flour (for kneading)

Steps:

  • For the noodles: In a bowl, knead the flour with the eggs, oil and 1/2 teaspoon salt until smooth. Wrap in plastic wrap and rest for 30 minutes.
  • Roll the dough into thin portions on a lightly floured surface or roll through a pasta machine. Cut the dough into 2-3 cm (approximately 3/4-1 1/4 inch) squares. Spread on a floured baking sheet so they don't stick together. Let dry for 1 hour.
  • For the sauce: Cut cabbage in half, core and thinly slice. Cut crosswise into pieces equal in size to the noodles. Rinse cabbage and drain in a colander. Peel and finely chop the onion. Finely dice the bacon.
  • Heat the oil in a skillet. Add the bacon, and cook until browned. Stir in the powdered sugar and allow to caramelize. Stir in the onion and cook until translucent, about 1-2 minutes. Stir in the vinegar. Add the cabbage and caraway. Cover the pan and allow to braise until the cabbage is tender, about 20 minutes. If necessary, add water. Season with salt and pepper to taste.
  • Cook the noodles in boiling salted water until al dente, about 4-5 minutes. Drain and stir with the cabbage mixture. Season with salt and pepper to taste. Divide the noodles between bowls and top with the cream cheese. Serve immediately.

2 cups thinly sliced yellow or white onions (1/4-inch thick)
3 tablespoons unsalted butter
4 cups thinly sliced green cabbage (1/4-inch thick)
1 1/2 cups low-sodium chicken stock
8 ounces large egg noodles
1/4 cup roughly chopped or torn flat-leaf parsley
1/4 cup sour cream

Steps:

  • Bring a large pot of salted water to a boil.
  • Place a large saute pan over medium-high heat. When the pan is hot, add a film of oil along with the onions and a pinch of salt. Cook, stirring occasionally, until the onions begin to soften and caramelize, 2 to 3 minutes. Move the onions to one side of the pan, and then add the butter, cabbage and a pinch of salt. Cook until everything is caramelized and softened, 4 to 5 minutes. Add the chicken stock. Simmer this mixture until the cabbage is cooked through and the liquid has reduced, about 5 minutes.
  • In the meantime, drop your pasta. Cook at a gentle boil for 2 minutes less than the package directions. Then drain and add to the cabbage mixture. Gently fold in the parsley and sour cream and serve immediately, adding black pepper and a drizzle of oil.

2 tablespoons olive oil, (divided, plus more during saute')
2 tablespoons butter, (divided)
4-6 ounces mushrooms, (white or cremini, sliced)
1 large onion, (diced or sliced thin)
2 cloves garlic, (smashed and rough chopped)
½ head green cabbage, (sliced into 1/2" slices (more if desired))
½ teaspoon garlic powder
½ teaspoon onion powder
8 ounces egg noodles, (I used homemade style. Gluten free linguine is excellent too)
1 teaspoon salt, (plus more during serving if needed)
¼ teaspoon black pepper, (more if desired)
½ cup peas, frozen or fresh
2 tablespoons flat leaf parsley, (minced)

Steps:

  • Heat water in a large pot and cook the pasta according to directions. See recipe note #1 regarding different pasta choices. The pasta should cook while you prepare the other ingredients in next step. But watch the timing on the pasta if using gluten-free noodles as they'll be done before you're ready to add them into the cabbage mixture. NOTE: Save about one cup of your pasta water when you drain the noodles!
  • In a large skillet, heat one tablespoon olive oil over medium high heat. Add sliced mushrooms and saute' until golden, about 5 minutes. If needed, add ½ tablespoon butter to help with browning. Add onions and cook, stirring occasionally, until onions are soft, about 3 minutes. Add chopped garlic and cook until fragrant, 30 seconds.
  • Start with half of the cabbage and stir into the mushroom, onion mixture. Add one tablespoon of the butter and cook until the cabbage begins to brown. See recipe note #2 if wanting to add less oil. Add remaining cabbage and additional tablespoon butter. Add the granulated garlic and onion at this time and continue to cook, stirring until the cabbage has softened and browned around the edges.
  • Once the noodles are al dente and drained (remember to save some of that pasta water), add the noodles a little at a time until you are happy with the ratio of noodles to cabbage. Add 1 teaspoon salt and ¼ teaspoon black pepper, less if desired, taste and add more if needed. Add the peas and stir to combine. If you want the dish to be a little "creamy", add some of the pasta water, about ¼ cup at a time until desired wetness is achieved.
  • At this point, the recipe is delicious and may be served right out of the skillet. The cabbage and noodles are tasty for sure but to infuse even more flavor, place the mixture into a buttered large casserole dish or roasting pan, add up to ½ cup of the pasta water, cover with aluminum foil and bake in a preheated 300F degree oven for 10 minutes, remove the foil and continue to bake 15 minutes more. Baking in the oven helps to tenderize the noodles and cabbage a little more and infuses the onion and garlic flavors into the noodles. I highly recommend the baking step.
  • Just before serving, whether you serve from the skillet or after baking in the oven, drizzle extra olive oil over the dish and sprinkle with the parsley just before serving. See recipe note # 4 regarding leftovers.

My Cabbage and Noodles image

My version of a well loved combination. Caramelising the sugar gives it the special something. The flavoring with vinegar, butter and caraway is typically German. The flavor of egg noodles is essential for this dish I think, so best don't use pasta.

1/2 lb broad egg noodle
2 tablespoons oil
1 tablespoon sugar
1 medium onion, minced
1 tablespoon butter
4 tablespoons cider vinegar
6 cups cabbage, shredded (1 1/4 lb)
1 teaspoon caraway seed (sub with 1/8 t ground caraway)
1/2 teaspoon salt
1/4-1 cup hot water
black pepper

Steps:

  • FOR THE NOODLES.
  • While preparing the cabbage cook noodels according to package directions and when drained, cut crosswise with a knife to get 1-2 inch sized pieces. OR break noodles into pieces before cooking.
  • FOR CABBAGE.
  • Have all ingredients ready before you start cooking the cabbage. Heat oil over medium high heat in a wide pot that will hold cabbage and noodles.
  • Add sugar and let caramelize without stirring until golden to light brown. Immediately add onion and butter and stir until soft, 30-60 seconds.
  • Add vinegar and cook until almost all has cooked off.
  • Add cabbage, caraway and salt. Mix until cabbage has wilted and looks glazed, 2 minutes. Add 1/4 cup water, cover and reduce heat to medium low.
  • Braise cabbage in as little water as possible until desired softness, about 15 minutes. Stir occasionally and add more water if necessary. Cabbage should be rather dry when done.
  • Taste with salt, pepper, and sugar or vinegar.
  • TO ASSEMLE.
  • Mix drained noodles into cabbage. Cover and let flavors blend for 2 minutes. Serve with a sprinkle of freshly ground pepper on top for a nicer look.
