INDIAN LEMONADE (NIMBU PANI)
Indian lemonade or nimbu pani is a sweet an sour refreshing summer drink made with fresh lemon juice. It is quick and easy to make this drink to accompany your meals, to beat the heat, or to complement your bbq parties. It takes only a few seconds to make it in a blender like Vitamix but you can make without one equally easily.

Steps:
- Pour water, sugar, salt, and black salt into the blender.
- Blend on medium speed until the sugar dissolves.
- Add fresh lemon juice.
- Blend for a few seconds, you will see some fizz.
- Pour in a glass over ice and garnish with mint leaves.
- Mix all the ingredients - lemon juice, water, sugar, salt, and black salt in a pitcher.
- Mix well until the sugar dissolves.
- Pour in a glass over ice and garnish with mint leaves.

Steps:
- Take a large Jug, add one glass of normal water to it. Now add sugar (you can adjust the sweetness as per your taste) and stir till it dissolves into the water nicely & completely. Squeeze all lemons and add the juice to the same jug. Add pinch of salt and cumin seeds powder to it and continue to stir. Now add chilled water and crushed ice to the jug and stir again. Add in few mint leaves to it too. Serve in chilled glasses garnished with lemon slices and mint sprigs.
NIMBU PANI (LIMEADE)
Funky, salty and exceedingly sour, nimbu pani is a cool reprieve from the sweltering summer days in Lahore and across most parts of South Asia. It also makes for an excellent iftar drink: It's instantly nourishing, and the salt hits differently after a long day of fasting. Kala namak, or Himalayan black salt, adds pungence to an already punchy drink. Add sugar, if you prefer balance over funk.

- Peel the limes: Slice off the tops and bottoms then, working with one at a time, place each one vertically on a cutting board, setting it on one flat, cut side. Next, slice off the skin and pith. Repeat with remaining limes.
- Put peeled limes, ice cubes, kala namak, fine sea salt and sugar, if using, in a blender, along with 3 cups of water. Blend on high until the ice is crushed and the nimbu pani is frothy.
- Strain, then serve in a glass with a sprig of mint, if you like.
NIMBU PANI (LEMONADE)
Found online while searching for traditional Indian recipes at "Sailu's Kitchen". The recipe seems to use lemons and limes interchangeably, but I just used lemons in the ingredients as it is compared to lemonade. Here is what is stated about this drink: Vitamin C rich, Nimbu Pani aka Lemon water, a refreshing thirst quencher is a common summer drink in Indian homes. Basic recipe involves lime juice, water, sugar and pinch of salt. For a deeper lemony flavor, add the squeezed out lemons to the prepared lemonade and allow to sit for an hour or so. Strain and serve. For variation, add pinch of cardamom OR pinch of chat masala powder OR pinch of jaljira powder to a glass of Nimbu Pani.

Steps:
- Prepare sugar syrup first by simmering a cup of water to which 2/3 cup sugar or brown sugar is added. Allow sugar to dissolve completely and cool.
- Extract juice from 9-10 limes/lemons or approx 1 cup of lime/lemon juice. Strain and discard the seeds. Keep aside.
- Take a pitcher and add 10 cups of cold water, add the extracted lime/lemon juice and cooled sugar syrup and combine. Add 1 tsp of salt and combine. If you find it to be less sweet, add more sugar syrup and if it needs to be more tart, add more lime/lemon juice. Serve with ice in tall glasses.
