ITALIAN STEAK RECIPE -PALERMO STYLE
A Palermo Style Italian Steak Recipe: perfectly grilled rib-eye steaks topped with a salty crunchy mixture of garlicky capers over a bed of wine broiled tomatoes.

- Preheat your broiler.
- Pat the steaks dry with paper towels and allow them to rest at room temperature for 20 minutes before cooking.
- Slice the tomatoes and add them to a broiler proof dish. Drizzle with a lug of olive oil and a good pinch of sea salt. Add half of the thyme leaves and a splash of wine.
- Broil the tomatoes for a few minutes until they burst and are charged around the edges and the top. Transfer to a serving plate together with all the juices.
- Meanwhile drizzle the steaks with a lug of liv oil and sprinkle generously with the salt and pepper. Massage the oil and spices into the steaks with your hands and set aside.
- Preheat a cast iron pan or griddle on medium high flame and sear the steaks for 3 minutes on each side for a medium rare steak.
- in a small bowl combine the capers, garlic, anchovies, bread crumbs with a lug of olive oil. Spoon the mixture on top of the steaks and transfer them to the broiler for a couple of minutes until golden brown on top, making sure not to burn them.
- Transfer the steaks on top of the broiled tomatoes and serve garnished with the remaining thyme leaves and a drizzle of extra virgin olive oil.

- Combine artichoke hearts, mayonnaise, Parmesan cheese, lemon zest, lemon juice, red pepper flakes, salt, and black pepper in a food processor or blender. Blend until smooth. Cover and refrigerate until ready to use.
- Heat olive oil in a large pot or Dutch oven over medium-high heat. Stir tri-tip steak slices into the hot oil and cook, stirring constantly until they begin to brown, about 3 minutes. Sprinkle with Italian seasoning, salt, and black pepper. Add onion, yellow pepper, orange pepper, sweet hot peppers, and garlic basil spread; cook and stir until onion begins to soften, about 5 minutes. Stir in mushrooms, capers, Marsala wine, and anchovy fillet and cook until mushrooms are browned and wine has evaporated, about 5 minutes.
- Place provolone cheese and Gorgonzola cheese on top of the hot beef mixture and gently fold until cheese is melted, about 2 minutes. Remove beef-cheese mixture from heat.
- Spread each hoagie bun with about 1/4 cup artichoke aioli. Spoon beef-cheese mixture into buns and garnish with basil.

SICILIAN-STYLE GRILLED TUNA STEAKS

- Brush the tuna with some oil and sprinkle with salt and pepper. Heat the grill and brush the cooking grates with oil.
- Heat the oil in a small skillet over medium heat and cook the garlic for a minute. Add the tomatoes and cook for another couple of minutes. Add the wine and bring to a rapid boil for two minutes. Add all remaining ingredients except for the parsley and simmer uncovered for 5 minutes. Stir in the parsley and remove from heat.
- Sear the tuna steaks over high, direct heat for 1-2 minutes on each side. (For the best texture and to prevent becoming dried out tuna should be rare to medium rare on the inside.)
- Serve the tuna steaks immediately topped with the sauce.

SICILIAN STEAK (BISTECCA ALLA SICILIANA)
I found this recipe in the "Authentic Italian Recipes Cookbook", compiled by The Christopher Columbus Ladies Auxiliary of San Antonio, Texas. My husband loves this steak! It's a nice change from the normal way we grill our steaks. I serve it with either Fettuccini Alfredo or baked potatoes.

Steps:
- Marinate steaks in garlic and olive oil for 30 minutes (15 minutes on each side).
- Combine cheese, oregano and breadcrumbs, salt and pepper.
- Dip steaks in the bread mixture.
- Cook steaks under broiler, turning once.
- For rare, cook 8-10 minutes; for medium cook 12-14 minutes; for well done cook 18-20 minutes.

Got this while going through a bag of old recipes. The recipe didn't specify the size round steak, but I used a 1 lb steak and had extra breading, so I'd guess about 1 3/4-2lb would work with the bread crumb mix. The round steak came out nice and tender.

- Blend bread crumbs, Parmesan cheese, garlic salt, parsley and seasoning in medium bowl.
- Set aside.
- Cut round steak into individual serving size pieces, set aside.
- Beat 2 eggs in a separate shallow bowl.
- Grease or oil a 13 x 9 baking pan.
- Dip pieces into egg and then dredge in crumb mixture and lay in pan (do not overlap pieces).
- Preheat oven to 325°F.

- Preheat an oven to 350 degrees F (175 degrees C). Lightly grease a broiler pan.

- Mix all the ingredients of marinade. Reserve 2 tbsp of this marinade as dressing in a small bowl. Use rest to marinate tuna. You can marinate at least 30 minutes to couple of hours in refrigerator.
- Cook the grains according to the instruction on packet.
- Chop and dice the veggies and fruit.
- Heat oil to smoking hot in a pan. Pat dry the fish and place it in a pan.
