Artichoke Aioli:
1 (6.5 ounce) jar marinated artichoke hearts, drained
2 tablespoons mayonnaise
2 tablespoons grated Parmesan cheese
1 teaspoon lemon zest
½ lemon, juiced
¼ teaspoon red pepper flakes
salt and ground black pepper to taste
Filling:
2 tablespoons olive oil
1 ½ pounds beef tri-tip steak, thinly sliced
1 teaspoon Italian seasoning
1 onion, sliced thin
1 yellow bell pepper, sliced into strips
1 orange bell pepper, sliced into strips
¼ cup pickled sweet and hot pepper rings
¼ cup garlic basil spread (see footnote for recipe link)
1 cup sliced mushrooms
1 tablespoon capers
1 tablespoon Marsala wine
1 anchovy fillet
12 slices aged provolone cheese
¼ cup crumbled Gorgonzola cheese
Assembly:
4 Italian-style hoagie buns, split lengthwise
¼ cup chopped fresh basil

Steps:

  • Combine artichoke hearts, mayonnaise, Parmesan cheese, lemon zest, lemon juice, red pepper flakes, salt, and black pepper in a food processor or blender. Blend until smooth. Cover and refrigerate until ready to use.
  • Heat olive oil in a large pot or Dutch oven over medium-high heat. Stir tri-tip steak slices into the hot oil and cook, stirring constantly until they begin to brown, about 3 minutes. Sprinkle with Italian seasoning, salt, and black pepper. Add onion, yellow pepper, orange pepper, sweet hot peppers, and garlic basil spread; cook and stir until onion begins to soften, about 5 minutes. Stir in mushrooms, capers, Marsala wine, and anchovy fillet and cook until mushrooms are browned and wine has evaporated, about 5 minutes.
  • Place provolone cheese and Gorgonzola cheese on top of the hot beef mixture and gently fold until cheese is melted, about 2 minutes. Remove beef-cheese mixture from heat.
  • Spread each hoagie bun with about 1/4 cup artichoke aioli. Spoon beef-cheese mixture into buns and garnish with basil.

Provided by Kimberly Killebrew

Time 20m

Number Of Ingredients 15

4 tuna steaks (,about 6 ounces each and 1 inch thick (swordfish makes a great substitute))
Extra virgin olive oil for brushing
Kosher salt and freshly ground black pepper
1 tablespoon extra virgin olive oil
2 cloves garlic (minced)
1 cup diced fresh tomatoes
1 cup dry white wine
2/3 cup sliced firm green olives ((I used Lindsay Sicilian-style Olives))
1/4 cup capers (,drained (I used Lindsay))
1 1/2 tablespoons fresh lemon zest
2 tablespoons fresh lemon juice
2 teaspoons chopped fresh thyme
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/4 cup chopped fresh parsley

Steps:

  • Brush the tuna with some oil and sprinkle with salt and pepper. Heat the grill and brush the cooking grates with oil.
  • Heat the oil in a small skillet over medium heat and cook the garlic for a minute. Add the tomatoes and cook for another couple of minutes. Add the wine and bring to a rapid boil for two minutes. Add all remaining ingredients except for the parsley and simmer uncovered for 5 minutes. Stir in the parsley and remove from heat.
  • Sear the tuna steaks over high, direct heat for 1-2 minutes on each side. (For the best texture and to prevent becoming dried out tuna should be rare to medium rare on the inside.)
  • Serve the tuna steaks immediately topped with the sauce.

SICILIAN STEAK

Sicilian Steak image

Got this while going through a bag of old recipes. The recipe didn't specify the size round steak, but I used a 1 lb steak and had extra breading, so I'd guess about 1 3/4-2lb would work with the bread crumb mix. The round steak came out nice and tender.

Provided by pines506

Categories     Meat

Time 1h20m

Yield 4 serving(s)

Number Of Ingredients 8

1 cup breadcrumbs
1/4 cup grated parmesan cheese
2 teaspoons garlic salt
2 teaspoons crushed parsley
2 teaspoons italian seasoning
2 eggs
1 round steak
2 -3 tomatoes, sliced

Steps:

  • Blend bread crumbs, Parmesan cheese, garlic salt, parsley and seasoning in medium bowl.
  • Set aside.
  • Cut round steak into individual serving size pieces, set aside.
  • Beat 2 eggs in a separate shallow bowl.
  • Grease or oil a 13 x 9 baking pan.
  • Dip pieces into egg and then dredge in crumb mixture and lay in pan (do not overlap pieces).
  • Preheat oven to 325°F.
  • Lay tomato slices over breaded steak.
  • Cover pan with foil and bake for one hour at 325.
  • Pull foil off and bake for an additional 10 minutes.
