Steps:
- For the sauce: Whisk together the ketchup and hot sauce in a small bowl and set aside.
- For the meatloaf: Preheat the oven to 350 degrees F. Grease a 9-by-5-by-3-inch loaf pan with cooking spray and set aside.
- Melt the butter in a medium saute pan over medium-high heat. Once melted, saute the celery and onion until softened, 3 to 5 minutes. Transfer the mixture, with the drippings, to a large bowl. Add the hot sauce to the bowl and stir to combine. Add the chicken, blue cheese, salt, pepper, eggs and 1 1/2 cups of the panko and mix until well combined.
- Press the mixture into the prepared loaf pan, pressing more in the center of the loaf to create a divot. This will allow the meatloaf to bake evenly and not create a mound after it is baked. Spread the sauce over the top of the meatloaf. Mix the Parmesan with 1/2 cup of the panko and sprinkle the mixture on top of the sauce. Bake until the center is set and the top is golden brown, 45 minutes to an hour. Let rest about 15 minutes before cutting to serve.
- Meanwhile, toast the remaining 1/4 cup panko in a dry pan until lightly golden and set aside.
- Garnish the meatloaf slices with the toasted panko and chopped celery leaves.

SPICY, GARLICKY MEATLOAF
This meatloaf is as pungent and zesty as a meatball, but baked in that iconic, sliceable loaf form. A combination of chilies and sage add a spicy, earthy note, and a glaze of tomato paste and olive oil elevates a traditional dish away from its ketchup roots. The pine nuts are a visual cue: this is something a little different. And it tastes great the day after.

Steps:
- In a large bowl, gently mix the chicken, garlic, egg, bread crumbs, Worcestershire, paprika, onion powder, oregano, thyme, brown sugar, lemon zest, 2 healthy pinches of salt and a few grinds of pepper in a bowl. Form into mini meatballs, slightly smaller than a golf ball; it should make 28 to 30 meatballs. Warm the butter and oil in a large pan over medium-high heat. Transfer the meatballs to the pan and do not disturb for 3 minutes to brown well. Turn, cooking another 3 minutes without disturbing. Keep cooking until browned and cooked on all sides, but still juicy and plump with a spring to the touch. Transfer to a paper towel-lined plate to drain. Serve atop Collard Green Pesto Linguine, if desired.
- Bring a large pot of salted water to a boil over medium heat. Blanch collards until bright green, about 1 minute. Transfer immediately to an ice bath to shock, saving the boiling water for cooking the pasta. Remove the collards from the ice water and pat dry with paper towels before transferring them to a food processor.
- Add the linguine to the pot of salted boiling water and cook according to package instructions.
- Meanwhile, in a dry skillet, over low heat, toast the pecans until fragrant. Transfer to the food processor with Parmesan, olives and garlic. With food processor running, slowly drizzle in olive oil until pesto comes together. Taste for seasoning, and add salt and freshly ground black pepper, to taste.
- To serve, put enough pesto to coat the pasta into a large serving bowl. Drain the pasta and quickly add it to the bowl. The water still clinging to the pasta will loosen up the pesto. Toss to coat. Add more pesto, if needed. Transfer the pasta to a serving bowl and garnish with Parmesan sprinkled over the top.

- Remove the crusts from the bread and tear roughly into small pieces. Place in a large mixing bowl and sprinkle over the milk. Set aside to soak.
- Heat the oil in a frying pan over a medium-high heat. Add onion and cook, stirring frequently until soft and translucent (about 5 minutes). Add garlic, ginger, lemongrass and chilli, cook for another minute, then remove from heat. Transfer to the bowl with the soaking bread and allow to cool for a few minutes.
- Add the coriander, fish sauce, dark soy sauce, eggs, sugar, salt and pepper to the bowl and mix to combine. Add the minced chicken and mix gently with clean hands until combined. Refrigerate while the oven heats up to 190C (175C fan-forced).
- Transfer the mixture to a large, 1kg-capacity loaf pan (approx 23cm x 12cm x 7cm), packing it down lightly to knock out any air pockets. Cover the pan loosely with a large, double layer of aluminium foil, then place a rimmed baking tray over it. Carefully invert the tray so that the foil is on the bottom and the meatloaf is upside down, with the pan over it. Loosen the foil and spread it out, as if lining the base of the baking tray.
