1 cup butter, at room temperature
1 (3 ounce) package cream cheese, at room temperature
½ cup white sugar
1 teaspoon vanilla extract
8 drops green food coloring, or as desired
2 cups all-purpose flour

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Cream butter and cream cheese together in a bowl using an electric mixer; add sugar and beat well. Mix in vanilla extract and food coloring. Slowly add flour and mix well to combine.
  • Fill a cookie press with dough and form cookies onto ungreased cookie sheets.
  • Bake in the preheated oven until edges are set, 8 to 10 minutes, making sure to remove at the first hint of browning.

1/2 teaspoon vanilla
1 cup flour
2 -3 drops food coloring, of choice if desired (optional)

Steps:

  • Cream butter and cream cheese.
  • Add sugar , mix well.
  • Add vanilla.
  • Slowly add the flour.
  • Mix well.
  • Add food coloring, if desired.
  • Fill cookie press half full.
  • Press onto cookie sheet.
  • Bake 8-10 minutes at 375.

1 cup (2 sticks) unsalted butter
1 teaspoon finely grated lemon zest
1 large egg yolk
6 tablespoons heavy cream
1 3/4 cups all-purpose flour
3/4 cup finely grated Pecorino cheese
1/2 cup finely grated Parmesan cheese
1 tablespoon sugar
2 teaspoons minced fresh rosemary leaves
1 teaspoons fine salt
Pinch freshly ground nutmeg

Steps:

  • Bring all ingredients to room temperature.
  • Beat the butter and lemon zest with an electric mixer at medium speed until smooth, about 30 seconds. Slowly beat in the egg yolk and cream.
  • Whisk the flour, pecorino, 1/4 cup of the Parmesan, sugar, rosemary, salt, and nutmeg together in a bowl. Gradually add the flour mixture into the butter mixture while mixing slowly. Scrape down the sides of the bowl, then beat on medium speed to make a slightly sticky dough.
  • Fill the cookie press with the dough. Assemble the press with the desired disk shape (see cook's note), and press cookies onto ungreased baking sheets. Leave about one inch between cookies. Sprinkle with the remaining 1/4 cup Parmesan and refrigerate cookies for 20 minutes.
  • Preheat oven to 325 degrees F.
  • Bake cookies, rotating pan halfway through, until golden, the cheese browns a bit, and the cookies smell nutty, about 20 to 25 minutes. Briefly cool the cookies on the baking sheets, then transfer to racks to cool. Serve or store in a tightly sealed container for up to 1 month.

I have a fondness for cookies with cream cheese and enjoy these. Sometimes I use almond or anise flavoring. Note added Dec. 2013: It seems improvements are in need so I am making corrections which are my own since I cannot find the original recipe. I am sorry for the mishaps you have had with the given recipe. I may recommend dividing the dough in thirds and working with smaller amounts.

  • Changes were made to the amount of cream cheese, flour, and the addition of 1 egg yolk. I found this made a delicious cookie. If you like you may add up to 1/2 teaspoons salt. We are sensitive to sodium so I use as little as possible.
  • Cream together butter and cream cheese in a large mixing bowl.
  • Gradually add sugar, beating until light and fluffy.
  • Add egg yolk and beat well.
  • Stir in vanilla extract.
  • Combine flour and salt; gradually add to creamed mixture, beating until well blended.
  • Shape dough into 3 balls and chill thoroughly at least 25 minutes.
  • Press dough from a cookie press 2 inches apart onto ungreased cookie sheets, using desired shaping discs.

2 3/4 sticks (1 cup plus 6 tablespoons) unsalted butter, at room temperature
1 teaspoon pure vanilla extract or vanilla bean paste
One 8-ounce package cream cheese, 6 ounces at room temperature, 2 ounces frozen
1 1/4 teaspoons kosher salt
4 cups confectioners' sugar, sifted
1 large egg yolk
3 1/2 cups all-purpose flour, plus more for flouring (see Cook's Note)
2 tablespoons whole milk, plus more if needed
Very finely grated lime zest or finely minced cranberries, for garnish, optional

Steps:

  • Position an oven rack in the center of the oven and preheat to 325 degrees F. Line a baking sheet with parchment.
  • Combine the butter, vanilla, 4 ounces of the room-temperature cream cheese and 1 teaspoon of the salt in a large bowl and beat with an electric mixer on medium speed until creamy, about 1 minute. Add 2 cups of the sugar and beat until pale and fluffy, about 3 minutes. Add the egg yolk and beat until smooth, then add the flour and beat on low until the dough just comes together. Remove the frozen cream cheese from the freezer and chop into 1/4-inch cubes. Add the cubes to the dough, quickly stirring with a rubber spatula to evenly incorporate them into the dough. Refrigerate the dough for 1 hour.
  • Using a 1-ounce ice cream scoop or 2 tablespoons, scoop 12 portions of dough, roll into balls and transfer to the prepared baking sheet, spacing them evenly apart. Lightly flour the bottom of a 1/2-cup measuring cup and use it to flatten each cookie into a disk about 1/2 inch thick, re-flouring the cup after each cookie.
  • Bake, rotating the baking sheet halfway through, until the cookies look set but are still pale and barely brown on the bottom, 20 to 24 minutes. Cool the cookies on the baking sheet for 1 minute, then transfer them to a wire rack to cool completely. Repeat with the remaining cookie dough.
  • Meanwhile, combine the remaining 2 ounces room-temperature cream cheese, 2 cups sugar and 1/4 teaspoon salt in a medium bowl and beat with an electric mixer on low speed until the mixture forms a thick paste. Add the milk and stir slowly until a thick glaze forms.
  • When the cookies are cool, dip the entire surface of the top of each cookie in the glaze and lift up, letting the excess glaze drip off, then flip the cookie right-side up and onto the cooling rack. If the glaze is too thick, add another teaspoon of milk to loosen it. If using the cranberries or lime zest, sprinkle on top of the cookies while the glaze is still wet. Allow the glaze to set before serving, at least 10 minutes. Store the cookies in a single layer in an airtight container for up to 5 days.
