This recipe is very easy to make! Perfect for summer barbeques, but it can be broiled indoors anytime. Always a favorite!

Steps:
- In a shallow glass dish, mix the oil, lime juice, lime zest, garlic, oregano, red pepper flakes, salt, and black pepper. Add chicken, and turn to coat. Cover, and marinate in the refrigerator for 1 hour, turning occasionally.
- Preheat grill for medium-high heat.
- Lightly oil the grill grate. Drain and discard marinade. Grill chicken for 6 to 8 minutes each side, or until juices run clear.

SPICY GRILLED CHICKEN BREASTS
A quick , tasty and spicy grilled chicken dish. Tastes best when done on a bbq, but just as tasty on an indoor grill. For more spice, use Frank's Extra Hot or sprinkle some cayenne pepper over the breasts.

Steps:
- Coat both sides of chicken breasts in Frank's Red Hot.
- Sprinkle both sides generously with garlic powder.
- Sprinkle both sides with black pepper.
- Let stand in fridge for at least 30 minutes.
- Spray grill with oil.
- Preheat on high for 10 minutes.
- Transfer chicken breasts to grill with tongs and cook for 7-10 minutes on each side until done.
- Baste with hot sauce while cooking for more flavour.
SWEET AND SPICY GRILLED CHICKEN BREASTS
Brown sugar gives these grilled chicken breasts a glistening glaze and caramel-like sweetness, while mustard powder and cayenne add an earthy kick. If you don't want to bother making a mustard sauce for dipping, just serve these with dollops of good, strong Dijon mustard on the side. A crisp salad and some grilled corn completes the meal. And if you prefer dark meat, this recipe will also work with boneless, skinless thighs, though you might have to add a minute or so to the cooking time. Or use a combination of breasts and thighs for maximum crowd appeal.

- Place chicken breasts between two sheets of parchment or plastic wrap. Using a mallet or rolling pin, pound each to an even thickness of 1/2 inch. Do not make them any thinner or they could dry out.
- In a small bowl, combine sugar, coriander, salt, mustard powder and cayenne. Place chicken breasts in a bowl and rub well with spice mixture. Cover and refrigerate 1 to 2 hours. Remove chicken from fridge while you heat the grill.
- Light the grill, building a hot fire, or heat your gas grill to high. Once grill is fully heated, brush breasts lightly with olive oil and place chicken on the grill. Cook until undersides are browned and chicken is about halfway cooked, 3 to 5 minutes. Flip breasts and grill until cooked through, 3 to 5 minutes more.
- Transfer chicken to a platter. In a small bowl, whisk together mustard and chives. Whisk in 1 1/2 tablespoons oil. Serve chicken with mustard for dipping.

- First: Prepare the Spicy Asian Marinade as directed in the recipe. Put the chicken breasts in a bowl, pour in the Spicy Asian Marinade, and toss lightly to coat. Cover with plastic wrap and refrigerate for an hour, or longer if possible.
- Second: Prepare a medium-hot fire for grilling or preheat a gas grill or the broiler. If grilling, brush the rack with olive oil and place the meat 3 inches from the source of the heat. Grill, covered, 5 to 7 minutes per side, or until the chicken is opaque all the way through. Alternatively, you can heat a nonstick skillet until very hot over high heat and sear the chicken until done, about 8 to 10 minutes, turning once. Remove from the heat and cool slightly. Cut the chicken meat across the grain into thin slices. Serve with a vegetable and rice or noodles. or use in salads or stir-fried dishes.
GRILLED CHICKEN BREASTS WITH SPICY COCONUT SAUCE

- To make the chicken, buzz the onion, garlic, ginger, coconut milk, lemon juice, salt, black pepper, and red pepper flakes in a food processor until smooth. Drop the chicken pieces into a ziploc bag and pour in the marinade. Place the bag in a shallow dish and marinate in the fridge for at least 4 hours, but overnight is better, turning several times.
- To make the sauce, heat the oil in a large skillet over medium heat. Add the onion and cook, stirring often, until golden brown, about 7 minutes. Reduce the heat to low, add the lemon zest, ginger, red pepper flakes, and tomato paste, and cook, stirring often, until the colors deepen and the mixture is very fragrant, 8 to 10 minutes. Toss in garlic and cook for 1 minute more.
- Pour in the coconut milk and cream and bring to a boil, e turn heat to low and simmer, uncovered, until the liquid has reduced by one quarter, about 10 minutes. Season to taste with salt and pepper. Cover and keep warm.
- Meanwhile heat a grill to high. Remove the chicken from the fridge and let sit out for 30 minutes.
- Lower the heat of the grill to medium and brush the grate with oil. Remove chicken from marinade and grill until well marked and cooked through, about 5 to six minutes per side.
- To serve, slice each chicken breast into 3 pieces on the bias. Place cooked rice onto plates, top with chicken slices, and spoon sauce over top.

- In a large baggie, combine the grill seasoning, chili powder, paprika and brown sugar. Place the chicken breasts in the baggie and give them a good shimmy shake.

SPICY LIME MARINATED GRILLED CHICKEN BREASTS
This marinade is adapted from a recipe found in Chile Pepper magazine. Although I found it delicious, I did not find it "spicy", so if you are not a fan of spicy food, don't let the name scare you away. Next time I make it, I will probably add some crushed red pepper to the marinade. Prep time includes 1 hour to marinate, but you will probably want to marinate the breasts longer than that.
