Here's how to make pan seared salmon! It's an easy way to cook it up in a flash, and the pan fried flavor is unbeatable.

1 pound salmon fillets, skin on (wild caught if possible)
3/4 teaspoon kosher salt, plus more for brining
Fresh ground black pepper
1 tablespoon butter (or olive oil for dairy free)
2 tablespoons olive oil, plus one drizzle
1 tablespoon lemon juice, plus a few lemon wedges
Optional seasonings: Blackened Seasoning or Magic Salmon Seasoning

Steps:

  • In a large shallow dish, whisk together 4 cups room temperature water and 3 tablespoons kosher salt until dissolved. Place the salmon in the water and wait for 15 minutes.
  • Pat the salmon dry with a clean towel. Rub it generously with oil and sprinkle it with the kosher salt and generous grinds of fresh ground pepper. (Optional: Use 1/2 kosher salt and season with 2 tablespoons Blackened Seasoning or Magic Salmon Seasoning.)
  • Heat a large skillet over medium high heat and add the butter and olive oil. When butter is melted, add the salmon skin side up and cook for 2 to 3 minutes until cooked about 1/2 way to center of thick part of salmon.
  • Flip the salmon (a fish spatula makes easy work of it). Tilt the pan down slightly and quickly spoon the pan juices over the top of the fish a few times. Drizzle with the lemon juice and spoon the pan juices a few times again. Cook for 2 to 5 minutes, depending on the thickness, until just tender and pink at the center (the internal temperature should be between 125 to 130 Fahrenheit in the center when removed). Remove from the heat. Spritz with juice from a few lemon wedges and serve.

CRISPY PAN SEARED SALMON



Crispy Pan Seared Salmon image

This 15-minute crispy pan seared salmon will quickly become a go-to dinner! Prepared Mediterranean-style and served with a simple arugula salad. Be sure to read all the tips in the post above.

1 lb boneless salmon fillet (4 fillets about 4 oz each, skin on)
Kosher salt and pepper
1 ½ tbsp dry oregano
1 tbsp garlic powder
¾ tsp paprika
Extra virgin olive oil
Zest of 1 lemon + Juice of 1 ½ lemon
5 oz baby arugula to serve along

Steps:

  • Pat salmon dry on both sides and sprinkle with kosher salt and black pepper.
  • Make seasoning mix & season salmon. In small bowl, mix together the dry oregano, garlic powder and paprika. Season the flesh side of the fish with this spice mixture.
  • Sear the Salmon. In a large cast iron skillet, heat 2 tbsp extra virgin olive oil over medium-high heat until shimmering but not smoking. Reduce the heat to medium-low and add one salmon fillet, skin-side down, and press the top with the back of a fish spatula for about 10 seconds (this prevents the skin from curling up.) Add the remaining salmon fillets, one at a time, pressing each with the spatula for 10 seconds. Cook for about 4 minutes. If skin resists lifting (or if it's sticking to the pan), allow the fish to cook for a little bit longer until you are able to lift up easily (no more than 6 minutes in total). Using the spatula and a fork to assist in flipping, flip the fish to the flesh side to cook for about 15 seconds or so. ( Salmon is ready when it registers 110°F (43°C) in the very center for rare, 120°F (49°C) for medium-rare, or 130°F (54°C) for medium, 5 to 7 minutes total.)
  • Remove salmon from heat and immediately add lemon juice and lemon zest.
  • Make arugula salad. In a bowl, add the baby arugula. Season with salt and add juice of ½ lemon and extra virgin olive oil. Toss to combine.
  • Serve salmon with arugula salad (or any of the sides or salads suggested in the post). Enjoy!

4 (6-ounce) salmon fillets, skin on
Salt and pepper

Steps:

  • Heat a large non-stick pan over high with olive oil. Liberally season salmon with salt and pepper. Place skin side down in pan and reduce heat to medium-low. Do not move fillets. Allow to cook about 7 minutes or until well browned and cooked about three quarters of the way through. Turn fillets and cook about 3 minutes more, or until still just barely pink in the center. Serve immediately, with the skin side up.

PAN-SEARED WILD PACIFIC KING SALMON WITH LEMON AND THYME POLENTA CAKE



Pan-Seared Wild Pacific King Salmon with Lemon and Thyme Polenta Cake image

2 cups water
2 cups milk
1 cup polenta
2 tablespoons lemon zest
2 tablespoons grated Parmesan
1 bunch fresh lemon thyme, picked
Olive oil, as needed
2 pounds wild Pacific king salmon
10 to 12 yellow pattypan squash, quartered
1 large green zucchini, diced
1 tablespoon minced shallots
1 tablespoon extra-virgin olive oil
1 tablespoon butter
1 shallot, minced
1/2 teaspoon fresh minced thyme
2 teaspoons sherry vinegar
1/4 cup demi-glace
1 tablespoon tomato concasse* (See Cook's Note)

Steps:

  • For the polenta cake:
  • Bring water and milk to a boil. Whisk in polenta, turn down heat to low and stir often with wooden spoon, cooking until polenta is soft, approximately 20 minutes. Look for polenta to firm up and start coming away from the sides of the saucepan. When desired texture is reached, remove saucepan from heat and fold in lemon zest, Parmesan, and thyme. On a cookie sheet evenly spread out polenta mixture to 3/4-inch thickness and place in refrigerator to cool. Remove polenta from the refrigerator and cut out cakes of about 4-inch circumference.** (See Cook's Note)
  • For the salmon:
  • Place small amount of oil in a large cast iron or heavy-bottomed pan on high heat. Sear both sides of salmon being careful not to cook beyond medium for best results.
  • For the vegetables:
  • Saute pattypan squash and zucchini in saute pan with shallots and extra-virgin olive oil. Do not overcook, leaving a nice crunch to the vegetable For the sauce: Make the sauce by browning butter over medium heat until light brown. Add shallots, thyme, sherry vinegar and reduce by a quarter. Add demi-glace and bring to a quick boil. Remove and finish with tomato concasse.
  • To finish:
  • Sear both sides of the polenta cakes over medium heat, allowing them to warm through, as well as, achieve a golden crust. Serve with vegetables and salmon pouring the sauce over the salmon.

Learn how to pan sear salmon perfectly every time! This 15-minute pan seared salmon recipe (pan fried salmon) is flaky and buttery inside, with a crust on the outside, crispy skin, and herb lemon butter sauce.

4 6-ounce Salmon fillets ((skin on, about 1 inch thick))
1 tsp Sea salt
1/4 tsp Black pepper
1 tbsp Olive oil
6 tbsp Salted butter ((softened))
1 1/2 tbsp Lemon juice
4 cloves Garlic ((minced))
1 tbsp Fresh dill ((chopped))
1 tbsp Fresh parsley ((chopped))

Steps:

  • If your salmon fillets are not descaled, use a knife to gently scrape off the scales.
  • In a small bowl, mash together the butter, lemon juice, garlic, dill, and parsley. Set aside.
  • Use paper towels to pat the salmon fillets completely dry - this will ensure even browning.
  • Heat the olive oil in a large, heavy bottomed nonstick skillet over medium-high heat for 2 minutes, until shimmering and hot. (You can test that it's hot enough by adding a drop of water to the pan; if it sizzles, the pan is ready.)
  • Once the pan is hot, right before you are ready to sear the salmon, season both sides with sea salt and black pepper.
  • Add the fish fillets to the pan in a single layer, skin side down. Use a fish spatula to press down on top of each fillet for the first 10 seconds immediately after adding it to the pan, to prevent curling. Sear, without moving, for 5-6 minutes, until the salmon is 80-90% opaque; only the top will be not quite done.
  • Use the fish spatula to flip the salmon fillets. Working quickly, immediately add the herb butter mixture to the pan near (but not on top of) the salmon. Cook the salmon for about 1 minute, stirring the butter around the salmon as it melts, but without moving the salmon, until the seared salmon internal temperature reaches your desired doneness: 125 degrees F (51 degrees C) for medium rare, 130 degrees F (54 degrees C) for medium, or 140 degrees F (60 degrees C) for well done.
  • Flip salmon over and spoon the lemon butter sauce over it. Remove from the pan immediately to avoid overcooking.
