Spoon this sauce over ice cream or pound cake, drizzle over pancakes or waffles, or stir into plain yogurt or hot oatmeal.

Steps:
- In a medium saucepan, heat raspberry jam over medium heat, stirring occasionally, until liquefied, about 3 minutes.
- Add frozen strawberries. Simmer until softened, 5 to 10 minutes. With a potato masher, lightly mash strawberries, leaving some large pieces. Cool completely.
- Transfer to an airtight container; refrigerate up to 1 week. (If sauce solidifies, warm in the microwave or over low heat.)

Steps:
- Place sugar and 1/3 cup water in a small saucepan, stir and bring to a boil; Simmer until the sugar is completely dissolved.
- Allow the syrup to cool completely (You can speed up the cooling by setting pan in a shallow bowl of ice water.).
- Place half the berries in the jar of a blender; add lemon juice and all the cooled syrup; Puree until smooth.
- Press through fine strainer to remove some of the strawberry seeds,if desired.
- Coarsely chop remaining strawberries and add to strawberry puree and serve.
- This sauce can be stored refrigerated, in tightly covered containers for up to 4 days.

- In a blender, place the strawberries, yogurt, and lime juice and puree a few seconds until smooth. Strain out the seeds and then taste. Whisk in sugar, if needed. Chill until ready to use as a dip for fresh fruit or over angel food cake.
- Note: You may substitute frozen strawberries, just thaw them before measuring.

This pound cake doesn't use the traditional pound of butter, it only uses half a cup! But you can definitely taste the butter in it, it's delicious and moist. Top with fruit, use in a trifle, or just have a plain slice with coffee.

- Heat oven to 325°.
- In a medium bowl, stir together the flour, the baking powder and salt, set aside.
- In a large mixing bowl at medium speed, beat together the butter and the sugar until it's light and fluffy.
- Beat in the eggs,the yogurt and extract until well blended.
- Reduce mixer speed to low.
- Add the flour mixture, 1/2 cup at a time, beating just until blended.
- Spread evenly in a greased and floured 9 x 5 x 3-inch loaf pan.
- Bake in about 70 minutes,until cake tester inserted near center comes out clean.
- Cool on wire rack for 10 minutes.
- Remove from pan and cool completely.

Steps:
- Combine baking mix, cornstarch, Equal Sugar Lite in mixing bowl.
- Mix in yogurt, melted butter, milk, eggs and flavorings until well blended.
- Spoon mixture into a 9 or 12-cup Bundt® cake pan or a 9 x 5-inch loaf pan well-sprayed with non-stick cooking spray.
- Bake in preheated 350°F oven 45 to 50 minutes or until wooden pick inserted in center comes out clean.
- Let cool in pan 10 minutes.
- Carefully remove cake from pan and cool completely on wire rack.

Steps:
- Sprinkle sliced strawberries with 2 tablespoons sugar; cover and chill until ready to serve.
- Beat butter and cream cheese at medium speed with an electric mixer until creamy; gradually add 2 1/2 cups sugar, beating well.
- Add eggs, l at a time, beating until combined.
- Stir in flour by hand just until moistened.
- Stir in salt and vanilla.
- Pour batter into a greased and floured 10-inch tube pan.
- Bake at 300° for 1 hour and 50 minutes or until a wooden pick inserted in center comes out clean.
- Cool in pan on a wire rack 10 to 15 minutes; remove from pan, and let cool completely on wire rack.
- Cut into slices.
- Beat whipping cream and 3 tablespoons sugar at high speed with an electric mixer until stiff peaks form.
- Serve with cake; top with strawberry mixture, and drizzle with Strawberry Syrup.
- Garnish, if desired.
- Note: Great results for this recipe were gotten from using a hand mixer and then stirring the flour in by hand.
- High-powered stand mixers can over beat some pound cakes, giving them a tough texture.

- Place strawberries, lemon juice and honey in a small pot and bring to a boil over medium heat, stirring occasionally.
- Reduce heat to medium low to maintain a constant simmer, and cook for 10 minutes, stirring occasionally.
- Turn off the heat and let the sauce sit for a minute. Transfer to a blender or to a blender cup for use with a hand blender. (I don’t recommend using a hand blender in your pan for this sauce; it can cause splatters.)
- Blend until smooth (or leave slightly chunky if you prefer). Cool completely then store in a covered container in the refrigerator until ready to use. The sauce will keep in the refrigerator for up to 10 days. You can also freeze it for up to 6 months.
