EASY CHEDDAR CHEESE SAUCE



Easy Cheddar Cheese Sauce image

This easy cheese sauce is prepared with a simple white sauce base and shredded cheese. Serve it with vegetables, pasta, rice, or even on sandwich melts.

3 tablespoons butter
3 tablespoons all-purpose flour
1/2 teaspoon salt
1/4 teaspoon dry mustard
1/8 teaspoon ground black pepper (or white pepper)
1 1/2 cups milk (or light cream)
1 cup grated cheddar cheese (mild or sharp)

Steps:

  • Gather ingredients.
  • Melt the butter in a saucepan over medium-low heat; remove from heat. Stir in the flour, salt, dry mustard, and pepper.
  • Put the saucepan back on the heat and cook, stirring, for 1 minute.
  • Gradually add milk or light cream, stirring until well mixed.
  • Continue cooking, stirring constantly, until thickened and smooth. Reduce the heat to low and simmer, stirring, for 5 minutes.
  • Add the cheese and cook, stirring, until the cheese has melted and the sauce is smooth and well blended.
  • Serve with pasta or vegetables and enjoy.

It's nice to have an easy recipe for cheese sauce on hand. You can drizzle this over broccoli, cauliflower or pretty much any other favourite veggie. It is also nice tossed with pasta but you may need to increase the amount of sauce. Enjoy!

1 tablespoon butter
1 tablespoon all-purpose flour
3/4 cup milk
3/4 cup old cheddar cheese, grated
1/4 teaspoon sweet paprika
1 pinch salt
1 pinch cayenne pepper

Steps:

  • In a small saucepan, melt butter over medium heat. Add flour and whisk very frequently for at least 2 minutes or until bubbly.
  • Whisk in milk and heat until thickened, about 2 minutes.
  • Remove from heat and immediately whisk in cheese and paprika until melted and smooth.
  • Add salt and cayenne pepper to your taste.

NO-COOK CHEDDAR CHEESE SAUCE

Very easy, creamy sauce with a bit of a kick. Good low-carb dip for veggies or sauce for meat. For those not low-carbing this is great over baked or mashed potatoes, rice or pasta.

NIF'S VERY BASIC CHEESE QUESADILLAS



Nif's Very Basic Cheese Quesadillas image

Only 3 ingredients but my youngest DS loves it! Like the name says, it is very basic and is also very low maintenance. I would saute meat and/or veggies and have nonfat sour cream, salsa or guacamole to dip it in, but this is the basic-est version of the quesadilla. You can also use this as an appetizer and cut into thinner wedges. My DS can eat the whole thing now for dinner, but I thought I would list 2 servings. Enjoy!

1 1/2 cups low-fat cheddar cheese, grated
2 (10 inch) flour tortillas, soft (I use whole wheat)
low-sodium taco seasoning, to taste

Steps:

  • Place one tortilla in a nonstick pan and set on stove with the burner off. Sprinkle with cheddar cheese and taco seasoning.
  • Turn heat to medium and place other tortilla on top. After about 5 minutes, gently lift edge of quesadilla to see if bottom tortilla is starting to brown. It should take a little longer, but keep a close eye on it. When it is a light golden colour, slide quesadilla on to a plate.
  • Flip quesadilla into the pan and brown other side, checking frequently. Slide on to a cutting board. Let sit for a couple of minutes and then cut into quarters.

500ml milk
4 tbsp plain flour
50g butter
100g grated strong cheddar (or 50g grated cheddar, 50g crumbled blue cheese)

Steps:

  • Pour 500ml milk into a large saucepan and add 4 tbsp plain flour and 50g butter.
  • Turn on the heat to medium and start to whisk the mixture. Keep whisking fast as the butter melts and the mixture comes to the boil - the flour will disappear and the sauce will begin to thicken.
  • Whisk for another 2 mins while the sauce bubbles then stir in 100g grated strong cheddar cheese (or 50g grated cheddar, 50g crumbled blue cheese) until melted.

2 cups half-and-half cream
2 tablespoons butter
2 tablespoons flour
2 egg yolks
1 teaspoon salt
1/2 teaspoon white pepper
1/4 teaspoon nutmeg
2 cups finely grated cheddar cheese (preferably old cheddar for a stronger taste)

Steps:

  • Melt the butter in a heavy-bottomed saucepan.
  • Add in flour and whisk for 1 minute.
  • Slowly add in the half and half cream and whisk until the sauce is thick.
  • Add in the yolks and cook over low heat for 2 minutes.
  • Add in the cheese, and stir over low heat until melted.
  • Remove the sauce from the heat and season with salt, white pepper and nutmeg.
  • Pour the sauce into a bowl.

1 1/2 lbs shaped pasta
water, to boil pasta in
1 teaspoon chicken bouillon
1/4 cup butter
1/4 cup all-purpose flour
1/2 teaspoon garlic powder
1/2 teaspoon seasoning salt
1/4 teaspoon black pepper, freshly ground
2 1/2 cups skim milk
2 cups old cheddar cheese, low fat, grated
1/4 cup seasoned breadcrumbs (optional)

Steps:

  • Preheat oven to 375°F.
  • Bring water to a boil and add chicken bouillon. Cook pasta in water for 1-2 minutes LESS than the package instructs. You want it to be more al dente than what you would typically cook it to.
  • Meanwhile, add butter, flour, garlic powder, seasoned salt and pepper to a saucepan. Stir together until butter is fully melted. Whisk in milk and stirring constantly, bring to a boil. Remove from heat and stir in cheese until melted. Set aside.
  • Strain pasta when done. Return to pot and stir in cheese sauce.
  • Spray 4 litre (4 quart) casserole dish and pour in pasta and cheese sauce.
  • Sprinkle breadcrumbs over top and bake for 20 minutes.
  • *** If you don't want to bake this, cook pasta to desired doneness, mix with sauce and serve.
