- In a small bowl, mix the first 9 ingredients until blended. Transfer to a serving dish; sprinkle with pumpkin seeds., Refrigerate, covered, 2 hours before serving. Serve with crackers.

BRANDIED BLUE CHEESE & DATES ON CRACKERS
This is another so easy-to-fix recipe for the blue cheese lovers among us & is from the *Finger Food* cookbook of the Australian Womens Weekly cookbook series. It showcases an ingredient combo that never would have occured to me, but is truly wonderful & will get you raves of admiration! It is simply the perfect bite of sweet & savory. *Enjoy* !

Steps:
- Beat cheeses, brandy & chives in a sml bowl w/an electric mixer till well-combined.
- Slice dates into very fine strips.
- Just b4 serving, spread or pipe cheese mixture onto crackers & top w/date strips & parsley.
- NOTE: Cheese mix can be prepared 2 dys ahead of need, covered & stored in refrigerator.

WARM DATES WITH BLUE CHEESE AND PROSCIUTTO
Steps:
- Preheat the oven to 400 degrees F.
- With a small paring knife, slit each date lengthwise and spread open just enough to remove the pit while leaving the date intact. Fill the cavity of each date with a small piece of blue cheese and fold the date over the cheese, pressing it back into its original shape.
- Cut a strip of prosciutto as wide as each date is long and wrap it around twice, enclosing the date almost completely. Place the dates on a sheet pan and bake for about 8 minutes, until the prosciutto is browned and the cheese starts to melt.
- Cool slightly and serve warm.
BACON-WRAPPED DATES
Steps:
- Preheat the oven to 400 degrees F.
- Slice the dates lengthwise three-quarters of the way down. In a small bowl, press the cream into the blue cheese with a fork. Press a small scoop of the blue cheese into the center of the dates and close them back up. Cut each piece of bacon in half. Wrap each halved bacon strip around a date. Secure with a toothpick.
- Place the bacon-wrapped dates on a baking sheet. Bake until the bacon is crisp, 15 to 20 minutes.
BLUE CHEESE AND WALNUT CRACKERS
Steps:
- In the bowl of an electric mixer fitted with the paddle attachment, cream the butter and Stilton together for 1 minute, or until smooth. With the mixer on low speed, add the flour, salt and pepper and mix until it's in large crumbles, about 1 minute. Add 1 tablespoon of water and mix until combined.
- Dump the dough onto a floured board, press it into a ball, and roll into a 12-inch long log. Brush the log completely with the egg wash. Spread the walnuts in a square on a cutting board and roll the log back and forth in the walnuts, pressing lightly, and distributing them evenly on the outside of the log. Wrap in plastic and refrigerate for at least 30 minutes or for up to 4 days.
- Meanwhile, preheat the oven to 350 degrees F.
- Cut the log 3/8ths-inch thick with a small, sharp knife and place the crackers on a sheet pan lined with parchment paper. Bake for 22 minutes until very lightly browned. Rotate the pan once during baking. Cool and serve at room temperature.
WARM BLUE CHEESE DIP WITH GARLIC AND BACON
This is a great combination of flavors for you blue cheese lovers! Serve this with crackers, sliced, lightly toasted French bread, and/or vegetables. Originally from a September 1989 issue of Bon Appetit magazine in the "Great Cook/Great Party" feature.

Steps:
- Cook bacon in heavy large skillet over medium-high heat until almost crisp, about 7 minutes;drain excess fat from skillet.
- Add garlic and cook until bacon is crisp, about 3 minutes.
- Preheat oven to 350 degrees.
- Using electric mixer, beat cream cheese until smooth; add half and half and beat until combined.
- Stir in bacon mixture, blue cheese and chives.
- Transfer to 2-cup ovenproof baking dish; cover with foil.
- (Can be prepared 1 day ahead. Bring to room temperature before continuing.).
- Bake until heated through, about 30 minutes.
- Sprinkle with chopped almonds and serve.

GOAT CHEESE & DATES CRACKERS
I made this little appetizer up in a pinch one day (when I was out of eggs and Mean Chef was coming to dinner). Most people do not see dates sliced like this, but they look so artful and the sweetness of the dates matches well with the tart cheese.

- Spread a light to medium coating of goat cheese on the crackers.
- Slice the dates into little 1/4 inch"O"s.
- Place 3 slices of dates on each cracker.
- Be sure to let everything come to room temperature before serving so you get the full flavor of the cheese and the dates.
