1 large onion, chopped
4 stalks celery, chopped

Steps:

  • Melt butter in a large skillet over medium-high heat. Add onion and celery; cook and stir until translucent, about 5 minutes. Season with salt and pepper. Scoop vegetables into a slow cooker.

A delicious New Year's Eve recipe to bring you luck in the new year! I sometimes just use the ham bone and some of the surrounding meat from the traditional Christmas ham that I make each year, but the ham hocks also add a nice, smokey, rustic flavor of their own.

1 pound dry black-eyed peas
2 tablespoons olive oil
1 large yellow onion, diced
2 cloves garlic, minced
2 (32 ounce) cartons chicken broth
8 cups water
1 pound smoked ham hocks
1 (14.5 ounce) can diced tomatoes
5 pepperoncini peppers
1 bay leaf
½ teaspoon garlic powder
¼ teaspoon ground thyme
salt and pepper to taste

Steps:

  • Place the black-eyed peas into a large container and cover with several inches of cool water; let stand 8 hours to overnight. Drain and rinse before using.
  • In a large stock pot over medium heat, cook and stir onion and garlic in olive oil until onion becomes translucent, about 5 minutes. Pour in the chicken broth and 8 cups water, bring to a boil, and reduce heat to a simmer. Stir in soaked black-eyed peas, ham hocks, tomatoes, pepperoncini, bay leaf, garlic powder, thyme, and salt and pepper. Cover and simmer until peas are tender, ham meat is falling off the bones, and the broth is thickened, about 3 hours.

Black-eyed peas symbolize coins and kale symbolizes folded money, which means wealth for the New Year. Also, pork symbolizes progress because pigs root forward and tomatoes symbolize health. Wealth, progress and health in a dip? Yes, please! NOTE: You can easily substitute dried black-eyed peas with canned black-eyed peas to save time.

8 ounces dried black-eyed peas
2 tablespoons butter
1/4 cup onion, minced
1 garlic clove, minced
3/4 lb ground sausage
1 1/2 cups kale, chopped
2 tomatoes, chopped
1/8 teaspoon cayenne pepper (to taste)
salt, to taste
pepper, to taste
6 ounces sharp cheddar cheese, shredded

Steps:

  • ***Skip this step if using canned black-eyed peas. Soak the black-eyed peas in a large pot of water overnight, or for at least 8 hours. Rinse thoroughly. Boil the black-eyed peas in a pot of salted water until they are tender, about 30 minutes. Drain and set aside.
  • Preheat oven to 325 degrees.
  • Melt the butter in a large skillet over medium heat. Add the onions and cook for 3 minutes. Stir in the sausage and garlic and cook for 5 minutes. Add the kale, season with salt and pepper, and cook for 3 minutes. Stir in the cooked black-eyed peas and tomatoes, and cook for 1 minute longer. Add the cayenne pepper. Season with salt and pepper, to taste.
  • Pour 1/3 of the black-eyed pea mixture in the bottom of an 8 x 8 baking dish and top with 2 ounces of cheese. Repeat two more times, ending with the cheese.
  • Bake in a preheated oven uncovered for 10 minutes. Allow it to sit for 5 minutes before serving.
  • Serve warm and enjoy!

This is the recipe I always make for New Year's Day. So many black-eyed pea recipes include ham, which you could add to this one, but we don't miss the meat because of the robust flavors of the kale, garlic and vinegar. This is one of the recipes you don't have to worry about measuring too much. Sometimes, I'll use more kale and fewer beans, if I'm serving this along with a meat main dish. In fact, I'll leave the black-eyed peas out entirely, if I want a light side dish.

1 1/2 lbs kale, washed and drained
1 tablespoon olive oil
1 tablespoon chopped fresh garlic (or more to taste)
1/2 small sweet onion (this is optional and you may prefer to use more. I use vidalias or texas sweets)
1 pinch dried red pepper (or more to taste)
2 cups cooked black-eyed peas (canned work great)
1 tablespoon cider vinegar, to taste (I often substitute balsamic vinegar)

Steps:

  • Pull the kale leaves from the tough stems.
  • Discard the stems and tear or chop the leaves into small (1 inch pieces).
  • In a large pot, boil about 2 inches of water, then add the kale.
  • Cover and cook until the leaves are tender, stirring occasionally (about 15-20 minutes).
  • Drain (reserve the stock for soup, if desired).
  • In a large skillet, combine the oil and onion.
  • Saute until onion is clear.
  • Add the garlic.
  • Cook the onion and garlic over low heat, stirring, about 2 minutes.
  • Add the black-eyed peas and red pepper and cook until blended, stirring (about 3 minutes).
  • Add the kale and stir to blend over low heat.
  • Add the vinegar just before serving.

3 tablespoons vegetable oil
1 onion, chopped
2 cloves garlic, minced
3 cups finely shredded napa cabbage
1 (8 ounce) can sliced water chestnuts, drained
1 pound ham hocks
⅛ teaspoon cayenne pepper
2 bay leaves
½ teaspoon Cajun seasoning
salt to taste
1 quart chicken stock
1 (10 ounce) package frozen black-eyed peas
1 ½ cups basmati rice, well rinsed
3 cups water

Steps:

  • Heat the oil in a deep pan or stockpot set over medium-high heat. Stir in the onions and garlic, and cook until transparent, about 5 minutes. Mix in the Napa cabbage; toss and cook until wilted, about 2 minutes. Add the ham hocks, cayenne pepper, bay leaf, Cajun seasoning, and salt, stirring for 2 minutes more. Pour in the chicken stock and black-eyed peas. Bring the mixture to a boil, then reduce heat to low and cook uncovered for 2 hours.
  • Meanwhile, place the rice and water into a saucepan. Bring to a boil, reduce heat to low, cover, and simmer until all liquid is absorbed and rice is light and fluffy, about 20 minutes.
  • Before serving, remove the ham hocks from the pot. Coarsely chop the meat, and return to the black-eyed pea mixture. Serve hot over Basmati rice.
