½ onion (finely diced)
1 tablespoon butter
3 cups ground ham (or very finely diced ham)
1 pound ground pork
1 egg
⅔ cup seasoned bread crumbs
½ cup milk
⅛ teaspoon ground black pepper
¼ cup brown sugar
1 tablespoon dijon mustard
2 tablespoons cider vinegar

Steps:

  • Preheat oven to 350°F.
  • Cook onion in butter for 5-6 minutes or until tender. Cool completely.
  • Combine all loaf ingredients in a bowl and mix well.
  • Place on a parchment lined pan and form into an 8"x 4" loaf. Bake for 1 hour or until the inside of the loaf reaches 160°F.
  • Combine topping ingredients and spread over the top of the loaf during the last 20 minutes of cooking.
  • Rest 5-7 minutes before slicing.

One 7- to 9-pound fully cooked spiral-cut ham
1 cup dark brown sugar
1/4 cup grainy brown mustard
2 tablespoons apple cider vinegar
1/2 teaspoon ground cinnamon
1/2 teaspoon paprika
1/2 teaspoon chili powder
3 medium oranges, zested and juiced
2 cloves garlic, grated
Kosher salt and freshly ground black pepper

Steps:

  • Let the ham sit at room temperature for 1 hour before baking. This will allow it to cook evenly.
  • Preheat the oven to 325 degrees F.
  • Make the glaze: In a medium pot over medium-high heat, combine the brown sugar, mustard, vinegar, cinnamon, paprika, chili powder, orange zest and juice, garlic and some salt and pepper. Bring to a gentle boil and cook for 10 minutes, stirring occasionally.
  • Place a rack in a roasting pan. Put the ham on the rack large open-face down (so the spiral cuts are stacked on top of one another). Brush half of the glaze over the surface of the ham, getting it between the slices as much as you can.
  • Pour about an inch of water in the base of the roasting pan; the water should not touch the ham. Tent the pan loosely with aluminum foil and bake for about 10 minutes per pound (1 hour 10 minutes to 1 hour 25 minutes).
  • Take the ham out of the oven and remove the foil. Raise the oven temperature to 375 degrees F. Brush half of the remaining glaze on the ham. When the oven is up to temperature, return the ham, uncovered, and bake for 15 minutes. Brush the remaining glaze over the ham and cook for another 15 minutes.
  • Carefully transfer the ham to a platter. Serve right away, or cover with foil and take it to your gathering!

1 lb ground ham
1 lb ground sausage or 1 lb pork
2 cups soft breadcrumbs
2 eggs
1 cup sour cream
1/3 cup onion, chopped
2 tablespoons lemon juice
1 teaspoon curry powder
1 teaspoon ground ginger
1 teaspoon prepared mustard
1/8 teaspoon nutmeg
1/8 teaspoon paprika
1 cup brown sugar
1/2 cup water
1/2 cup cider vinegar
1/4 teaspoon black pepper
cornstarch, to thicken as needed

Steps:

  • Have meat ground together for one 2 lb.
  • combination mixture; bring to room temperature.
  • (not included in prep time) Preheat oven to 350 degrees.
  • In large bowl, lightly but thoroughly combine meat and bread crumbs; use your hands if necessary.
  • In medium bowl, beat eggs, add sour cream, onion, lemon juice and spices.
  • Mix well, pour over meat mixture and blend together.
  • Form mixture into loaf and place in well oiled shallow baking dish.
  • Bake uncovered for 1 hour.
  • NOTE: This mixture isn't packed into a loaf pan, it is a free standing long loaf shape.
  • Meanwhile, prepare basting sauce.
  • In a small saucepan, mix all ingredients and bring to a boil.
  • Thicken with some cornstarch mixed with water; as needed.
  • When ham loaf has baked for 45 minutes, remove from oven and drain off grease.
  • Spoon sauce over ham loaf and continue baking another 15 minutes.
  • Baste every few minutes with sauce until done cooking.
  • Let sit for at least 10 minutes before cutting to allow loaf to retain shape.
  • Enjoy!

1 Tbsp butter
1/4 cup onion ((white or yellow onion, finely diced))
3 cups ham ((cubed and ground or very finely diced cooked ham))
1 lb ground pork
1 large egg
2/3 cup seasoned breadcrumbs ((Italian seasoned, Garlic & Herb, or seasoned Panko breadcrumbs))
1/2 cup milk
1/8 tsp ground black pepper
1/4 cup light brown sugar ((packed))
1 Tbsp Dijon mustard
1 Tbsp apple cider vinegar
pineapple rings & maraschino cherries ((optional toppings))

Steps:

  • Preheat your oven to 350°F (175°C) and line a rimmed baking sheet or baking dish with parchment paper.
  • Melt the butter in a small skillet or frying pan over medium heat, then saute the diced onion for 4-5 minutes or until it reaches your desired level of tenderness. Remove from heat when done and allow to cool.
  • Place cubed ham into a food processor and pulse until broken up and ground, but not turning into a paste consistency. Transfer the ham into a large mixing bowl.
  • Add the remaining ingredients (ground pork, egg, seasoned breadcrumbs, milk, ground black pepper, and sauteed onion) and mix until well combined.
  • Transfer the ham loaf mixture to your prepared baking sheet or pan and form into a loaf shape, approximately 8x4-inches in size. Place the loaf into your oven in the middle of the center rack and bake for 1 hour at 350°F (175°C) or until the internal temperature of the ham loaf reaches 160°F (71°C).
  • Combine the glaze ingredients in a small bowl (light brown sugar, Dijon mustard, and apple cider vinegar) until smooth. Coat the ham loaf with the glaze and top with optional pineapple rings and maraschino cherries then return to the oven for an additional 15 minutes.
  • Remove the cooked ham loaf from your oven and tent a sheet of aluminum foil over the loaf loosely. Allow the ham loaf to rest for 10 minutes before slicing and serving.

1 cup crushed saltines (about 30 crackers)

1 can (8 ounces) crushed pineapple, undrained

Steps:

  • In a bowl, combine the first five ingredients. Crumble ham and pork over mixture; mix well. Press into a 9x5-in. loaf pan coated with cooking spray. Steps:
