2 tablespoons finely chopped fresh ginger
10 fresh mint leaves, plus more for garnish
1 ounce honey
1 1/2 ounces fresh lemon juice
3 ounces bourbon
4 ounces sparkling apple cider, such as Martinelli's
2 Gala apple wedges

Steps:

  • Combine the ginger, mint and honey in a cocktail shaker. Muddle the mixture until the ginger and mint leaves break down and become fragrant. Add the lemon juice and bourbon along with some ice and shake to combine.
  • Add ice to 2 rocks glasses. Divide the bourbon mixture between the glasses, then top off each glass with sparkling apple cider. Garnish with the apple wedges.

1/2 gallon fresh, unfiltered apple cider (non-alcoholic)
1 orange
12 whole cloves
4 (3-inch) cinnamon sticks
15 allspice berries
1/4 teaspoon freshly ground nutmeg
7 whole cardamom pods
2 tablepoon brown sugar, optional

Steps:

  • Simmer the apple cider with orange and spices: Pour the apple cider into a 3-quart saucepan, cover, turn the heat on medium-high. While the cider is heating up, take a vegetable peeler and peel away a couple thick strips of peel from the orange. Press about half of the cloves into the peeled part of the orange. (You can also just quarter the orange and add the slices and cloves separately. I just like seeing the orange bob up and down.) Place orange, orange peel strips, the remaining cloves, and the rest of the ingredients into the sauce pan with the cider. Keep covered and heat the mulled cider mixture to a simmer and reduce heat to low. Simmer for 20 minutes on low heat.
  • Strain out the orange and spices: Use a fine mesh sieve to strain the hot mulled cider away from the orange, cloves, and other spices. If you want, you can add a touch of bourbon, brandy, or rum to spike it up a bit. Serve hot. Add a cinnamon stick to each cup if desired.

In this version, toasted cardamom, allspice berries and black peppercorns provide sophisticated spiciness, while fresh ginger and citrus add fresh zing. It's a subtle but noticeable makeover, resulting in cider that's tangy and aromatic with a savory edge. If you want to spike it, don't pour the whiskey into the pot with the cider; the alcohol will burn off over the course of an hour or so. Instead, let guests add whiskey to their own mugs. If you've got a slow-cooker, this recipe is for you.

2 teaspoons whole black peppercorns
2 (3- to 4-inch) cinnamon sticks, plus extra for garnish, if desired
1 teaspoon allspice berries
1 (4- to 5-inch) piece fresh ginger, peeled
1/2 lemon, scrubbed, thinly sliced and seeded, plus extra for garnish, if desired
1/2 small orange, scrubbed, thinly sliced and seeded, plus extra for garnish, if desired
Generous pinch of kosher salt
1 gallon apple cider, preferably unfiltered
1 teaspoon vanilla extract
1 (750-milliliter) bottle rye whiskey (optional)

Steps:

  • Put the cardamom pods on a cutting board. Lay the flat of a chef's knife over them and gently smack the flat of the knife to lightly crush and crack the pods. Add the cardamom pods, peppercorns, cinnamon sticks and allspice berries to a medium skillet over medium-high heat. Toast the spices, shaking the pan often, until very fragrant, about 3 minutes.
  • Transfer the cinnamon sticks into a large Dutch oven or pot. Tie up the remaining spices into a cheesecloth bundle, and add that to the slow cooker as well. (If you don't have cheesecloth, you can use tea infusers or loose tea bags. You could also put the spices directly into the slow cooker, then strain the mixture as you serve.)
  • Cut the piece of peeled ginger in half lengthwise and smash each piece by laying the flat of the knife over it and smacking with the heel of your hand.
  • Put the ginger, lemon, orange, salt and apple cider into the Dutch oven. Bring it to a boil over high heat, then reduce the heat to maintain a low simmer and simmer for 30 minutes. (If you use unfiltered cider, some solids may rise to the top as you simmer; it's not necessary to skim them, but if you find them unappetizing, you can.)
  • Decrease the heat to its lowest setting. (Use a heat diffuser if you have one.) Stir in the vanilla. You can leave the cider on the stove for several hours. Set the rye whiskey by the stove so guests can spike their mugs, if desired, and set out cinnamon sticks and sliced citrus, so guests can garnish as they like.

9 fluid ounces apple and ginger tea, from herbal teabag
1 1/2 ounces soft dark brown sugar
2 clementines
4 cloves
2 sticks cinnamon
2 fresh bay leaves
2 cardamom pods

Steps:

  • Pour the cider, rum and herbal tea into a wide saucepan. Add the sugar and place the saucepan over a low heat. Slice the clementines in half and stick a clove into each half. Add the clementines to the pan. Break the cinnamon sticks in half. Add the cinnamon, bay leaves and cardamom pods to the saucepan. Heat the saucepan until the mixture is almost boiling. Turn down the heat once the pan is near to boiling.
  • To serve, ladle the mulled cider into heatproof glasses with handles.
