MIXED LEAF SALAD WITH MOZZARELLA, MINT, PEACH & PROSCIUTTO

Mixed leaf salad with mozzarella, mint, peach & prosciutto image

Try to get hold of buffalo mozzarella. I like to crumble a little bit of dried chilli over my mozzarella, but I'm a chilli freak and you may not be, so you don't have to! And use any mixed leaves you fancy.

Provided by Jamie Oliver

Categories     Fruit Recipes     Fruit

Time 10m

Yield 1

Number Of Ingredients 8

ripe peach
buffalo mozzarella
higher-welfare prosciutto
fresh mint
mixed salad leaves
extra virgin olive oil
lemon
dried red chilli, optional

Steps:

  • If I make this for my lunch I'll use one nice, ripe peach, half a ball of mozzarella and a couple of slices of prosciutto.
  • Pinch the skin of the peaches and peel from the bottom to the top, then quarter.
  • Rip the mozzarella into small pieces and place on a plate with the peaches. Lightly season with sea salt and black pepper.
  • Lay a couple of slices of prosciutto over the top.
  • Tear up the mint leaves, toss with the mixed salad leaves and dress with a little of the extra virgin olive oil & lemon juice dressing.

PROSCIUTTO & MELON SALAD WITH BALSAMIC VINAIGRETTE

Prosciutto & Melon Salad with Balsamic Vinaigrette image

A lovely, summery salad featuring balls of juicy ripe cantaloupe, bits of salty prosciutto, creamy mozzarella and a flavorful (and easy!) homemade balsamic vinaigrette.

Provided by Love and Olive Oil

Time 20m

Yield 6 side servings

Number Of Ingredients 9

1/4 cup balsamic vinegar
1/2 teaspoon dijon mustard
1/2 teaspoon finely chopped fresh oregano
1/2 cup olive oil (or a mix of olive and another mild oil like grapeseed)
sea salt and freshly ground black pepper, to taste
8 ounces mixed tender greens (I used maché and pea shoots)
1 ripe cantaloupe, scooped into balls
8 ounces small mozzarella balls (ciliegine or bocconcini), halved
8-10 slices prosciutto, cut or torn into bite-sized pieces

Steps:

  • To make vinaigrette, whisk together vinegar, mustard, and oregano in a bowl. Slowly drizzle in oil, a little bit at a time, whisking vigorously until dressing is emulsified. After about half of the oil has been incorporated you can drizzle it in faster, but start out very slow at the beginning to create a nice, stable emulsion. Season to taste with salt and pepper. To assemble, rinse and dry greens. Toss with a few tablespoons of dressing until evenly coated. Arrange in serving bowl, then top with melon balls, mozzarella balls and prosciutto. Drizzle with more vinaigrette as desired, and sprinkle with a little flake sea salt and freshly ground black pepper, to taste. Serve immediately.

BALSAMIC TOMATO SALAD

Balsamic Tomato Salad image

It takes just minutes to toss together this fresh tomato salad with balsamic vinegar, olive oil, and garlic.

Provided by Miri Rotkovitz

Categories     Side Dish     Lunch     Dinner     Salad

Time 8m

Yield 6

Number Of Ingredients 8

24 ounces cherry, plum, or hot house tomatoes (or other variety of ripe tomato)
3 tablespoons extra-virgin olive oil
2 tablespoons balsamic vinegar
2 garlic cloves (minced)
1 teaspoon fresh oregano (or 1/2 teaspoon dried oregano , optional)
1 teaspoon fresh basil (chopped, or 1/2 teaspoon dried basil, optional)
Salt (to taste)
Black pepper (freshly ground, to taste)

Steps:

  • Gather the ingredients.
  • Slice the tomatoes in half and, if using plum or larger tomatoes, core them to remove the seeds . Chop the tomatoes into chunks (whatever size you desire). If using grape, cherry, or another small tomato, cut in half so they will absorb the flavors of the dressing. There's no need to seed them.
  • Place the chopped tomatoes in a large bowl. Add the olive oil, balsamic vinegar, garlic, and herbs (if using). Toss well.
  • Transfer to a serving dish and season with salt and pepper to taste. Or plate the salad individually for your guests and garnish with a sprig of fresh oregano or basil.

ROASTED TOMATO BALSAMIC VINAIGRETTE

Roasted Tomato Balsamic Vinaigrette image

I once worked with a chef who made an amazingly delicious roasted tomato vinaigrette. He would roast a whole pan of Roma tomatoes until the sugars and acids would condense and caramelize and concentrate into a delicious mass. I thought I could duplicate it by using a really good, double-concentrate tomato paste and nicely aged balsamic vinegar. It worked.

TOMATO, MOZZARELLA AND PROSCIUTTO SALAD RECIPE

Tomato, Mozzarella and Prosciutto Salad Recipe image

An Italian-style salad combining the fresh flavors of ripe tomatoes, aromatic basil, and smooth mozzarella with the richness of prosciutto and the tangy flavor of balsamic vinegar. You can also try our Green Tomato Salsa recipe for a way to prepare your green tomatoes.

Provided by RecipeTips

Time 45m

Number Of Ingredients 12

2 large ripe tomatoes
10 ounces fresh burrata or mozzarella cheese, sliced
salt and pepper to taste
small red onion, chopped fine
1 small garlic clove, peeled and diced small
3 tablespoons capers, rinsed
1/4 pound prosciutto ham, sliced thin
fresh basil leaves for garnish
DRESSING:
2/3 cup extra virgin olive oil
1 tablespoon balsamic or red wine vinegar
1 teaspoon Dijon mustard (or spicy brown mustard)

Steps:

  • Cut tomatoes into medium width slices, approximately 8 slices. Cut cheese into slices of similar sized widths as the tomato slices. A round buffalo mozzarella (di buffala) or a burratta cheese allows the slices to closely match the round slices of the tomatoes. On each salad plate, or on a large serving plate, arrange the tomato and cheese slices so they alternate, laying first a slice of tomato and then a slice of cheese. As each slice of tomato is placed on the plate, add a little salt and pepper over each slice. Sprinkle the onion, garlic and capers over the slices of cheese and tomatoes and then top with the sliced prosciutto ham. Whisk together olive oil, vinegar and mustard. Season to taste. Drizzle dressing over all the ingredients, and when ready to serve, garnish with basil. Serves 2 as an entrée or it can be divided to serve 4 as a side salad. When serving 4, use 2 slices of tomato and 1 slice of cheese or vary amounts as desired.

THE MOTHERSHIP TOMATO SALAD

The Mothership Tomato Salad image

Provided by Jamie Oliver

Categories     side-dish

Time 30m

Yield 4 servings

Number Of Ingredients 7

2 1/4 pounds mixed ripe tomatoes, different shapes and colors
Sea salt and freshly ground black pepper
A good pinch dried oregano
Red wine or balsamic vinegar
Extra-virgin olive oil
1 clove garlic, peeled and grated
1 fresh red chile, seeded and chopped

Steps:

  • This is an incredible tomato salad but there are two things to remember if you want to wow your guests with something so simple. The first is that you should try to get a mixture of different, tasty, local (if possible) tomatoes in all different shapes, sizes and colors. Second, the flavor is brought out by salting the tomatoes, so don't skip this bit. Some people get worried about putting this much salt on their food, but the bulk of it will drip off, leaving you with really beautiful, intensely flavored tomatoes.
  • If you can get hold of some dried flowering oregano then do, as it has the most heavenly flavor. Feel free to use the dried stuff that you get in a little container, but it can taste a bit like sawdust when compared to the fruity, fragrant flavor you get from the flowering variety. Oregano is also great to grow in the garden.
  • Depending on the size of your tomatoes, slice some in half, some into quarters and others into uneven chunks. Straightaway this will give you the beginnings of a tomato salad that's really brave and exciting to look at and eat. Put the tomatoes into a colander and season with a good pinch of sea salt.
  • Give them a toss, season again and give a couple more tosses. The salt won't be drawn into the tomatoes; instead it will draw any excess moisture out, concentrating all the lovely flavors. Leave the tomatoes in the colander on top of a bowl to stand for around 15 minutes, then discard any juice that has come out of them.
  • Transfer the tomatoes to a large bowl and sprinkle over the oregano. Make a dressing using 1 part vinegar to 3 parts oil, the garlic and the chile. Drizzle the tomatoes with enough dressing to coat everything nicely.
  • This is a fantastic tomato salad, which is totally delicious to eat on its own. It's also great served with some balls of mozzarella or some nice, grilled ciabatta bread.

Yield Makes 6 servings

Number Of Ingredients 10

2 large red bell peppers
1 cup (packed) fresh basil leaves
1 garlic clove
1/2 teaspoon salt
3/4 cup extra-virgin olive oil
1/2 pound thinly sliced prosciutto
2 8-ounce balls fresh water-packed mozzarella cheese, drained, thinly sliced into rounds

1/4 cup Kalamata olives or other brine-cured black olives, pitted, coarsely chopped

PERFECT POTATO SALAD

Perfect Potato Salad image

This is my mother Pauline's recipe. It's pretty much a classic American salad but remember, if you add onions, use sweet onions and chop with a very sharp knife, allow potatoes to cool to room temp before dressing them, and always taste for salt.

Provided by Chef John

Categories     Salad     Potato Salad Recipes     Creamy Potato Salad Recipes

Time 15h40m

Yield 12

Number Of Ingredients 15

3 pounds large russet potatoes
¼ cup kosher salt
10 cups cold water
½ cup finely diced celery
2 tablespoons finely diced sweet onion
2 tablespoons chopped fresh parsley
3 large hard-boiled eggs, peeled and cut into chunks
1 teaspoon chopped fresh chives for garnish
1 pinch paprika for garnish
1 ¼ cups mayonnaise, or more if needed
3 tablespoons apple cider vinegar
2 tablespoons Dijon mustard
1 teaspoon kosher salt, plus more as needed
½ teaspoon freshly ground black pepper
cayenne pepper to taste

Steps:

  • Place whole potatoes in a pot with 1/4 cup kosher salt. Cover with cold water. Bring to a boil over high heat. Reduce heat to medium-low. Simmer until tender, about 40 minutes (depending on size). Transfer cooked potatoes to a plate. Allow them to cool to room temperature.
  • When potatoes are completely cooled, peel off the skin. Cut into larger than bite-size pieces as the pieces will break down slightly when you toss with the dressing. Transfer potato pieces to a mixing bowl. Add celery, onions, parsley, chopped hard-boiled eggs. Combine ingredients, breaking up larger pieces of potato.
  • Place mayonnaise in mixing bowl. Add cider vinegar, mustard, salt, black pepper, and cayenne pepper. Whisk until well combined.
  • Pour mayonnaise mixture onto potatoes; stir until well combined. Cover and refrigerate until completely chilled, 2 to 3 hours. Taste for seasonings and texture. Salad may need a bit more salt and another spoonful of mayonnaise.
