White Chocolate Rice Krispie Treats With Candied Peanuts image

These are a bit more grown-up, though I'm sure kids would love them too. White chocolate gives these a boost- you'll never want to make a batch without it ever again. Salted butter and salty nuts also helps this normally bland treat become one of your favorites again! From David Lebovitz. (Cutting large marshmallows in half helps them melt faster, which prevents burning!) Note: Boston Baked Beans candies do not work for this recipe. You may used your favorite roasted, salted nut. I used canned salted peanuts, because they tend to be much more fresh than wrapper-packaged nuts.

Ingredients

3 tablespoons salted butter
3 1/2 ounces white chocolate, finely chopped
1 cup candied peanuts
10 ounces marshmallows, snipped in half or 10 ounces mini marshmallows
6 cups Rice Krispies

Steps:

Spray or lightly-oil a 13 x 9 inch rectangular pan.
In a large saucepan, melt the butter over low heat. Add white chocolate and stir until melted.
Add the marshmallows and stir constantly over the heat until completely melted. (If they start to scorch on the bottom, remove from heat and continue to stir, placing the pan back on the heat occasionally, stirring until smooth.).
Remove from the heat and add the candied peanuts and Rice Krispies until well combined. A rubber spatula or flexible pastry scraper works best.
Scrape into the prepared pan and smooth the top, let cool.
Serving and Storage: Cut into neat bars or squares with a sharp knife. These are best enjoyed the day they're made, although they can be covered snugly with a sheet of aluminum foil and stored at room temperature for 2 to 3 days longer.

6 cups rice krispie cereal
1 cup Karo syrup
2 cups peanut butter, separated
1 cup sugar
1 cup chocolate chips

Steps:

Combine 1 cup peanut butter, karo syrup and sugar and bring to a boil. Remove from heat and pour in rice krispie cereal. Mix together and put into 9 x 13 pan. Do not smash too much, or it will be too solid and difficult to eat and cut through.
Mix together 1 cup peanut butter and 1 cup chocolate chips. Melt in microwave, 30 seconds at a time, mixing after each interval until melted. Pour over rice krispie treats. Put into fridge and let set for 2 hours. Then ready to serve.

Warning! Addictive! I got this recipe out of our local newspaper. They melt in you mouth. These go into my holiday gift tins every year and they are always a big hit. This recipe makes about 150 pieces, so unless you want that many, you may want to halve it.

Ingredients

2 lbs white chocolate or 2 lbs almond bark
1 cup peanut butter
3 cups peanuts
3 cups miniature marshmallows
4 cups Rice Krispies

Steps:

Melt chocolate in a double boiler or in the microwave, being careful not to over cook.
Stir in peanut butter, blend well.
Mix with other ingredients until well blended.
Drop by teaspoonfuls onto waxed paper. (about the size of a small walnut).
Let stand until set.

I am not a fan of white chocolate but my youngest son likes it so I'll post this for him. This recipe has peanuts and peanut butter too. Takes 2 hours to firm up. They freeze well. I found it in a community church cookbook that I bought at a book sale. Guessed the number of servings.

1 lb white chocolate chips
5 1/2 tablespoons crunchy peanut butter
1 cup miniature marshmallow
1 cup unsalted dry roasted peanuts
1 1/2 cups Rice Krispies

Steps:

In a large Pyrex dish, melt the chocolate in a 200 degree oven for at least 10 minutes.
Add the peanut butter while in oven about 2-3 minutes.
Take the dish out of the oven and mix.
Add marshmallows; mix well.
Add peanuts and rice krispies; mix well.
Spoon out with teaspoons onto wax paper and let stand about 2 hours.
Refrigerate in air tight containers. Or you can freeze them.

These are very gooey, thick and rich treats with a dark chocolate layer on the top to put you over the edge! When I made this, the flavor and texture was spot-on but the bars were a little thin. I doubled all of the ingredients (not including the choco layer) here for a thicker bar. Choose whichever way works best for you.

4 tablespoons butter
40 large marshmallows (about 1 bag)
1/2 teaspoon vanilla
5 cups Rice Krispies
0.667 (11 ounce) bag dark chocolate chips

Steps:

Melt the butter in a large, non-stick saucepan. Add the marshmallows and stir constantly until they are completely melted.
Stir in rice krispie treats.
Turn into a buttered 9x9 pan and pack down using a buttered (so it won't stick) spatula.
Melt the chocolate in the microwave, until it can be stirred smooth. Spread the chocolate on top of the treats and refridgerate until cool and hardened.

Melt the butter in a large saucepan over low heat. Add the marshmallows and stir until completely melted. Remove from heat and stir in the peanut butter until melted.
Add the Rice Krispies cereal, white chocolate chips and peanut butter chips. Stir until well coated.
Using a greased spatula or spoon or a piece of wax paper, evenly press the mixture into the pan. Allow to sit at room temperature for at least 30 minutes, or until set. Cut into squares and serve.
