CINNAMON SWIRL RAISIN BREAD PUDDING
This is great if you like the ingredients! I copied this from somewhere and had it on a recipe card. NOT a diet recipe!

Steps:
- Preheat oven to 350 degrees.
- Tear bread into 2" pieces, drop into a large mixing bowl and pour the milk over it.
- Toss gently until bread is coated.
- Let bread soak about 15 minutes.
- In a small bowl, beat eggs together with sugar until mixture is light yellow, smooth and thick.
- Add vanilla extract and pour this mixture over the milk soaked bread.
- Gently but thoroughly mix together until bread is evenly coated with the egg mixture.
- Transfer to a buttered 9" X 13" X 2" baking dish and place uncovered in another pan containing 1-2 inches of water.
- If you like a crusty top, dot with pats of butter.
- Place these dishes in the oven and bake until set, when a knife inserted in the center comes out clean, about 1 hour.
- Serve with some heavy cream!

SUNNY'S EASY CINNAMON ROLL BREAD PUDDING

- For the rolls: Bake the cinnamon rolls according to the package directions (reserve the glaze). When they are cool enough to handle, cut each into fourths. Set aside.
- Preheat the oven to 350 degrees F. Coat the bottom and sides of a deep 8-inch square pan with cooking spray.
- In a large bowl, add the fruit cocktail, milk, pecans, walnuts, vanilla extract and eggs and mix together. Add the cinnamon roll pieces and stir. Let rest for a few minutes to allow the liquid to soak in.
- Pour the cinnamon roll mixture into the prepared pan. Bake until golden on top, 25 to 30 minutes.
- For the glaze and topping: Put the milk in a small microwave-safe bowl and microwave for 30 seconds. Add the espresso powder and stir until the granules dissolve. Add the reserve glaze from the cinnamon rolls and stir until combined.
- Drizzle the bread pudding with the glaze and add a dusting of cinnamon sugar. Serve with a pour of coffee over the top.
CHOCOLATE AND CINNAMON BREAD ON BREAD PUDDING

- For the bread pudding: Using a serrated knife, hollow out the boule. Cube the hollowed-out bread into 2-inch pieces and put in a large bowl. Using your fingers or a spoon, scrape any remaining bread from inside the boule to create a crusty bowl. Add any scraped bread to the bowl along with the bread cubes.
- In a medium pot, gently heat the milk, cream, butter, granulated sugar and vanilla paste until the butter is melted and the sugar is dissolved. Let cool completely.
- Add the eggs to the milk mixture and whisk until combined. Pour the custard over the cubed bread, stir in the chocolate chunks and let sit for 45 minutes to 1 hour.
- Preheat the oven to 350 degrees F.
- Line a baking sheet with parchment and spray with nonstick spray. Place the boule on the baking sheet. Pack the custard/bread mixture into the bread bowl. It will protrude a bit--that's a good thing! Mix together the demerara sugar, cinnamon and salt in a small bowl. Sprinkle the mixture on the top of the bread pudding. Bake until golden and crusty, 40 to 50 minutes. Let cool slightly.
- For the whipped cream: In a cold bowl, mix together the cream, granulated sugar, cinnamon, vanilla paste and salt. Beat to medium peaks.
- Cut the bread pudding into "slices" and top with the whipped cream.
CINNAMON RAISIN BREAD PUDDING

- Preheat oven to 350 degrees F.
- Tear 6 pieces of the bread into large bite size pieces. In a large bowl, combine the cream, sugar, and eggs. Reserve 1/4 of the mix for later use. Soak the bread in the custard for at least 30 minutes. Transfer it to a small baking dish and top with the remaining 1/4 of the custard mixture. Sprinkle the raisins over top and cover with aluminum foil. Cook for 35 minutes covered, and then for 10 minutes uncovered. Remove from the oven and hold for 15 minutes. - Place the cinnamon roll pieces into greased 9 x13-inch baking dish.
- Sprinkle the raisins and pecans over them.
- In large bowl, beat the milk, eggs, sugar and vanilla until well blended.
- Pour mixture over rolls.
- Cover and refrigerate overnight.
- Preheat oven to 350°.
- Dot the mixture with the butter slices.
- Place the dish in a roasting pan; fill pan with hot water halfway up sides of baking dish.
- Bake for 40-45 minutes or until bread pudding is set in center.
- To make the sauce, heat whipping cream and 1/4 cup sugar on top of a double boiler over simmering water.
- Combine egg yolks and remaining 1/4 cup sugar in a small bowl; beat until well blended.
- Stir some of the hot cream mixture into the egg mixture; return egg mixture to double boiler.
- Stirring constantly, cook 8-10 minutes or until thickens slightly and coats a spoon.
- Remove from heat and stir in the vanilla.

- Preheat the oven to 325°F Spray an 8-inch square pan with nonstick spray.
- To prepare the pudding, place the bread cubes in the prepared pan. In a medium bowl, whisk together the milk, eggs, sugars, vanilla and cinnamon. Pour over the bread cubes in the pan.
- To prepare the topping, in a medium bowl, combine the topping ingredients. Crumble the topping over the top of the pudding.

- Vigorously whisk eggs, egg yolks, salt, white sugar, and brown sugar together in a large bowl until mixture turns light and frothy, about 1 minute. Add vanilla, cinnamon, lemon zest, milk, and cream; whisk to combine. Toss in bread slices and press down until they start to soften and are submerged. Let sit, pressing down occasionally with a spatula, until custard has been absorbed, about 20 minutes.
