FRIED CHICKEN LETTUCE CUPS

Fried Chicken Lettuce Cups image

For this recipe, we took everything you love about a fried chicken sandwich and turn it into a small, handheld appetizer. Cutting the chicken into bite-sized nuggets before covering it with batter and frying it, is key here - doing so transforms the protein into the perfect topping for crunchy lettuce cups.

Time 1h20m

Yield 14 to 16 lettuce cups

Number Of Ingredients 17

2 skinless, boneless chicken thighs, cut into 1/2-inch cubes
1 1/4 cups buttermilk
1/3 cup diced spicy dill pickles, plus 2 tablespoons brine
1/4 teaspoon cayenne pepper
1/4 cup sour cream
1 teaspoon fresh lemon juice
1/2 teaspoon Worcestershire sauce
1 scallion, thinly sliced
2 tablespoons chopped fresh dill
Kosher salt
Vegetable oil, for frying
1 cup all-purpose flour
1 teaspoon mustard powder
1 teaspoon garlic powder
1 teaspoon onion powder
Freshly ground black pepper
14 to 16 leaves Little Gem lettuce

Steps:

  • Combine the chicken, 1 cup buttermilk, the pickle brine and cayenne in a bowl. Cover and refrigerate at least 1 hour.
  • Meanwhile, whisk the remaining 1/4 cup buttermilk, the sour cream, lemon juice, Worcestershire sauce, scallion, dill and a pinch of salt in a separate bowl. Chill until ready to use.
  • Heat 2 inches of vegetable oil in a large pot until it reaches 350˚ F. Combine the flour, mustard powder, garlic powder, onion powder, 1 1/2 teaspoons salt and 1 teaspoon black pepper in a bowl. Remove the chicken from the buttermilk mixture, letting the excess drip off, and toss with the flour mixture. Fry until golden and cooked through, 6 minutes. Remove to a rack and season with salt.
  • Divide the fried chicken among the lettuce cups. Top with the chilled dressing and diced pickles.

4 large Boston lettuce leaves, washed and spun dry
2 tablespoons hoisin sauce
1/2 skinless boneless chicken breast, chilled (about 6 ounces)
1 1/2 teaspoons cornstarch
2 teaspoons dry white wine
1/3 cup canned water chestnuts (about 2 ounces), rinsed, drained and chopped fine

2 tablespoons vegetable oil
1 small garlic clove, minced
2 tablespoons pine nuts, toasted

MINCED CHICKEN SALAD IN LETTUCE CUPS

Minced Chicken Salad in Lettuce Cups image

A not too far from traditional Chinese dish served in many restaurants near here. These make a great lunch or starter for a dinner party. Serving amount is an estimate for lunch portions. From the Kikkoman website. Cook time does not include chilling time. I usually serve these "warmish."

Categories     Chicken

Time 45m

Yield 8 serving(s)

Number Of Ingredients 12

2 teaspoons peanut oil
8 ounces ground chicken
1 tablespoon minced ginger
2 teaspoons hoisin sauce
2 tablespoons light soy sauce
1 teaspoon sesame oil
2 teaspoons rice vinegar
2 teaspoons granulated sugar
2 heads iceberg lettuce
2 tablespoons scallions, sliced thin
1/4 cup jicama
1/2 cup pomegranate seeds

Steps:

  • Heat a medium saute pan over high heat, add the peanut oil and the minced chicken. Reduce heat to medium and cook, stirring occasionally, until cooked through. Add the ginger and cook another 30 seconds. Remove from heat and drain, then chill.
  • Combine hoisin sauce, soy sauce, sesame oil, vinegar and sugar to make dressing. Set aside.
  • Cut the core from the iceberg lettuce and soak in ice water for 10 minutes to help separate the leaves. Carefully remove the leaves from the heads of lettuce one at a time, then take each leaf and trim into a perfect circle using kitchen scissors. You should get about 12 nice lettuce cups out of each head, depending on the size and condition of the lettuce. You can save the leftovers to add to salad.
  • Combine the chicken, scallions and jicama with the dressing, and place about 3 T of the mixture into each lettuce cup. Garnish with pomegranate seeds. I left the seeds off as they were impossible to find when I made these.

Categories     Lunch/Snacks

Time 35m

Yield 4 serving(s)

Number Of Ingredients 14

1 lb ground white chicken breast
3 green onions, trimmed and minced
1 teaspoon kosher salt (I omit because the soy sauce has plenty of salt)
1/2 teaspoon fresh ground pepper
1/4 cup seasoned rice wine vinegar
1/4 cup dry white wine
2 tablespoons soy sauce
2 tablespoons hoisin sauce
2 tablespoons peanut oil (I use much less or you can use a non-stick pan and cooking spray)
1 1/2 tablespoons garlic, finely chopped
1 tablespoon ginger, finely chopped
1/4 teaspoon red pepper flakes, crushed
2 tablespoons cilantro, chopped fresh
1 head iceberg lettuce (I prefer Butter lettuce)

Steps:

  • In a large bowl, combine the ground chicken and minced green onions. Add the kosher salt and pepper, and mix together well. Form into a large patty. Mix together the rice wine vinegar, wine, soy sauce, and hoisin sauce in a bowl or measuring cup and set aside.
  • Heat a wok over high heat, or an electric wok to 400 degrees. Add the oil and when smoking, carefully set the ground chicken patty in the wok. Brown on one side, then carefully break up and add the garlic, ginger, and red pepper flakes. Continue to stir until the chicken is thoroughly browned, about 5 minutes. Add the rice wine vinegar mixture and cook, stiring, until the liquid has just about evaporated, about 5 minutes. Remove from the heat. Taste and adjust the seasonings. Stir in the cilantro or if desired, mint.
  • Cut away the base of the lettuce and remove the outer leaves. Use the smaller inner leaves for cups. Place 2 or 3 cups on each plate, or line a platter, top with salad and serve.

  • If using iceberg lettuce: fill a large bowl with cold water. Place the head of lettuce on a cutting board; cut off the stem, then cut around the inner core of the lettuce and remove (do not cut all the way through the lettuce; just deep enough to remove the core). Discard the flimsy, ragged outer leaves and then place the head of lettuce in the bowl of water. Gently pull apart the leaves, then place them on a paper towel to dry. Cut any large leaves in half. Chill the lettuce cups in refrigerator until ready to serve. (If using butter lettuce, you won't have any issues pulling apart the leaves so this step is not necessary.)
  • Heat the oil in large sauté pan over medium heat. Add the onion and ginger and cook, stirring frequently, until soft, 4-5 minutes. Add the garlic and cook 1 minute more.
  • Add the ground chicken and turn the heat up to high. Cook, breaking up the meat with a wooden spoon, until partially cooked through, about 3 minutes. Add the soy sauce, fish sauce, brown sugar, lime zest, lime juice and red pepper flakes and continue cooking, stirring frequently to break up the meat, until the chicken is cooked through, 5-6 minutes more. Off the heat, stir in the scallions, cilantro, mint and nuts. Taste and adjust seasoning if necessary. Spoon into lettuce cups and serve with optional garnishes.
  • Freezer-Friendly Instructions: The meat mixture can be frozen in an airtight container for up to 3 months and reheated in the microwave om on the stovetop until hot.
