Home-Style Butterbeans image

These Southern-style butterbeans are flavored wtih bacon, brown sugar, and onion and offer the convenience of frozen butterbeans.

Yield Makes 6 to 8 servings

Number Of Ingredients 7

5 bacon slices, diced
1 small onion, minced
1/2 cup firmly packed brown sugar
1 (16-oz.) package frozen butterbeans
1/4 cup butter
2 teaspoons salt
1 teaspoon cracked pepper

Steps:

  • Cook bacon and onion in a large Dutch oven over medium heat 5 to 7 minutes. Add brown sugar, and cook, stirring occasionally, 1 to 2 minutes or until sugar is dissolved. Stir in butterbeans and butter until butter is melted and beans are thoroughly coated. Stir in 12 cups water.
  • Bring to a boil over medium-high heat; reduce heat to low, and simmer, stirring occasionally, 2 hours or until beans are very tender and liquid is thickened and just below top of beans. Stir in salt and pepper.
  • Home-Style Lima Beans: Substitute 1 (16-oz.) package frozen baby lima beans for butterbeans. Proceed with recipe as directed.

1 pound dried navy beans
1-1/2 teaspoons salt
4 quarts cold water, divided
1 cup chopped red onion
1/2 cup molasses
6 bacon strips, cooked and crumbled
1/4 cup packed brown sugar
1 teaspoon ground mustard
1/4 teaspoon pepper

Steps:

  • In a large saucepan or Dutch oven, bring beans, salt and 2 qt. water to a boil; boil for 2 minutes. Remove from the heat; let stand for 1 hour. Drain beans and discard liquid. Return beans to pan. Cover with remaining water; bring to a boil. Reduce heat; cover and simmer for 1-1/2 to 2 hours or until beans are tender. Drain, reserving liquid. In a greased 2-1/2 qt. baking dish, combine beans, 1 cup liquid, onion, molasses, bacon, brown sugar, mustard and pepper. Cover and bake at 325° for 3 to 3-1/2 hours or until beans are as thick as desired thickness, stirring occasionally. Add more of the reserved cooking liquid if needed.

Steps:

  • Arrange bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain on paper towels and crumble.
  • Heat butter beans, bacon, butter, and brown sugar in a saucepan over medium heat until bubbling, about 5 minutes. Season with salt and pepper.

1 (16 ounce) package dried lima beans
5 slices bacon, chopped
1 cup heavy whipping cream
½ cup butter
salt and ground black pepper to taste

Steps:

  • Cover lima beans with water in a large pot and soak overnight. Drain and return lima beans to the pot; cover beans with fresh water.
  • Heat a large skillet over medium-high heat; cook and stir bacon until crisp, about 5 minutes. Reserve about 2 teaspoons bacon drippings and drain bacon on paper towels.
  • Bring lima beans, bacon, and reserved bacon drippings to a boil. Reduce heat to medium-low and simmer until beans are just tender, 40 to 60 minutes. Stir heavy cream and butter into bean mixture and cook until thickened, about 15 minutes more. Season with salt and pepper.

FIXED AFTER 3-STAR REVIEW. This recipe falls under the category: Crowd Pleaser. Two VERY crucial ingredients distinguish it from the rest of the pack - molasses and sour cream (or yogurt) - so you won't want to forget to add them. It's adapted from an award-winning Midwestern (U.S.) cookbook "Hollyhocks and Radishes" and is great for picnics, barbecues and potlucks (just double the recipe). You can use fava (broad) beans as well as butter (lima) beans (I prefer fava myself). This can also be made a day or two ahead and reheated.

1/2 cup low-fat yogurt or 1/2 cup sour cream
1/2 cup brown sugar
2 tablespoons molasses
2 teaspoons dry mustard

4 (15 ounce) cans broad beans or 4 (15 ounce) cans butter beans, drained

Steps:

  • Preheat oven to 350 degrees.
  • Mix together all ingredients except beans, then combine with beans and pour into buttered 2 quart casserole.
  • Cover and bake 30 minutes. Uncover and bake another 30 minutes, or until liquid begins to cook away but not until dry.
  • NOTE: This recipe was designed to feed a crowd. If you would like to cut it in half please reduce cooking time.
