½ cup melted butter
1 10 ¼ ounce can of cream of chicken soup (or cream of cheddar)
1 pint sour cream
½ cup onion (finely chopped)
2 cups colby cheese (grated)
¼ teaspoon pepper

Steps:

  • Preheat oven to 350°F.
  • Combine all ingredients in a large bowl reserving ½ cup of cheese for topping.
  • Place in a greased 9×13 casserole dish and top with reserved cheese.
  • Bake for 45-55 minutes or until hot and bubbly.

Make ahead breakfasts are always a win at the holidays.

1 (30-ounce) package frozen shredded hashbrowns
1/2 cup melted butter (1 stick)
salt and pepper
1 & 1/2 cups shredded Monterey Jack cheese (packed )
1 & 1/2 cups shredded Cheddar cheese (packed )
1 & 1/2 cups black forest ham* (cut into bite-size pieces)
8 large eggs
1 & 1/3 cups evaporated milk OR cream
1 teaspoon seasoned salt (I like Lawry's)
1/2 teaspoon kosher salt (use 1/4 if all you have is table salt)
1/2 teaspoon pepper
1/4 teaspoon dry mustard powder (optional)
1/4 teaspoon onion powder (optional)

Steps:

  • Preheat your oven to 400 degrees F.
  • Spray a 9x13 inch pan with nonstick spray, or grease with butter.
  • Dump the bag of frozen hashbrowns into the pan. (There is no need to thaw first.)
  • Melt a stick of butter in a small bowl, and pour evenly over the potatoes. Sprinkle the potatoes with salt and pepper. Use a spoon to gently toss it all together, then spread it out so that it's even.
  • Bake at 400 degrees for 25-30 minutes, until the potatoes are tender and lightly browned on top. You can even nab a forkful to make sure they are done if you like.
  • Remove the casserole and reduce the oven temperature to 350.
  • Layer 1 and 1/2 cups each Monterey Jack and Cheddar cheese over the top of the potatoes (make sure you pack in your cheese! Don't skimp now!) Add the ham. You can either leave it layered or use a spoon to gently toss the cheese and potatoes and ham together. Either way is fine. (I like to toss for a more even distribution.)
  • In a large bowl or stand mixer, whisk together 8 eggs, 1 and 1/3 cups evaporated milk OR cream, 1 teaspoon seasoned salt, 1/2 teaspoon kosher salt (use less if all you have is table salt!), 1/2 teaspoon pepper, 1/4 teaspoon dry mustard, and 1/4 teaspoon onion powder. Beat well.
  • Pour the egg mixture evenly over the top of the casserole, making sure everything gets wet.
  • Bake at 350 degrees for about 40 minutes. It is done when bubbly. The edges should be starting to brown and the center should not wiggle when you shake the pan.
  • If the center of the casserole looks very wobbly but the top is starting to brown too much, cover with foil for the last few minutes of baking.

1 small garlic clove, minced
1.5 cups frozen, shredded hash brown potatoes
1 TBSP. all-purpose flour
3 TBSP. chicken broth
3 TBSP. sour cream or plain greek yogurt
1 TBSP. grated parmesan cheese
1/4 teaspoon salt
1/8 teaspoon ground pepper
1/2 cup sharp cheddar cheese shredded and firmly packed, divided
1/4 cup crushed cornflake cereal or panko bread crumbs

Steps:

  • Preheat oven to 350°F (177°C). In a medium sized skillet, add 1 Tablespoon butter and when melted add the diced onions and saute until translucent. Add the garlic and cook until fragrant. Remove from heat and set aside.
  • In a large bowl, mix together the cooked onions, garlic, hash browns, flour, chicken stock, sour cream, parmesan cheese, salt, pepper, and 1/2 of the cheddar cheese.
  • Spread into a small oval baking dish and top with remaining ½ cup cheddar cheese.
  • Melt the remaining Tablespoon of butter and mix with the crushed cornflake crumbs. Sprinkle evenly over the top of the casserole.
  • Bake for 50-55 minutes or until cooked throughout and and sides are bubbly.

1 (16 ounce) package shredded Cheddar cheese
1 pint sour cream
½ cup melted butter
½ cup finely chopped onion

½ teaspoon ground black pepper
1 sleeve buttery round crackers (such as Ritz®), crushed
½ cup melted butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a glass 9x13-inch baking pan.
  • Combine potatoes, cream of chicken soup, Cheddar cheese, sour cream, 1/2 cup melted butter, onion, salt, and pepper together in a bowl; spread into the prepared baking pan. Mix crushed crackers and 1/2 cup melted butter together in a bowl and sprinkle over potato mixture.

2 pounds shredded potatoes or bagged hashbrowns
2 cups cheddar cheese
1 1/2 cups milk
1/2 cup sour cream
4 tablespoons butter - melted
2 teaspoons salt
1/2 teaspoon garlic powder
1 teaspoon fresh cracked pepper
1 tablespoon chopped chives
1/2 cup shredded Parmesan cheese

Steps:

  • Heat oven to 350 degrees.
  • Butter bottom of 9 by 13 baking dish. Place hash browns evenly in bottom of dish and sprinkle with shredded cheddar cheese. Gently stir to combine.
  • In a small sauce pan, heat milk, butter, salt and garlic powder just until butter melts. Remove from heat and stir in sour cream. Pour milk mixture over potatoes and cheese.
  • Sprinkle on pepper, chives and Parmesan cheese.
  • Place in oven and bake for 50 to 60 minutes or until cheese is browned. Remove from oven and let cool for 5 minutes, then serve.

2 pounds frozen hashbrowns, thawed
2 cups shredded cheddar or American cheese - we like to use a medium or sharp cheddar
1 cup sour cream
1 can (10.5 ounces) cream of chicken soup
1/4 cup unsalted butter, melted
2 tablespoons minced dried onion
1/2 teaspoon kosher salt
1/2 teaspoon ground black pepper
1/4 teaspoon garlic powder
chopped green onions or chives, optional garnish

Steps:

  • Preheat oven to 350° F. Lightly spray a 9" x 13" baking dish with nonstick spray; set aside.
  • Place hashbrowns in a large mixing bowl; set aside.
  • In a medium bowl, combine shredded cheese, sour cream, cream of chicken soup, melted butter, dried onion, salt, pepper, and garlic powder. Add to hashbrowns and fold to combine. Pour mixture into prepared baking dish and spread to an even layer.
  • In a small bowl, combine melted butter with crushed corn flakes. Sprinkle over top of casserole.
  • Cover dish with foil and bake for 60 minutes. Remove foil and bake an additional 5 to 10 minutes, or until casserole is thoroughly hot. If you'd like an extra crunchy topping, set the dish under the broiler for a few minutes. Top with chopped green onions or chives, if desired. Serve and enjoy!
