¾ cup soy sauce
¾ cup brown sugar
¾ cup water
1 garlic clove, minced
2 green onions, chopped
1 tablespoon Asian (toasted) sesame oil
2 pounds Korean-style short ribs (beef chuck flanken, cut 1/3 to 1/2 inch thick across bones)

Steps:

  • In a bowl, stir together the soy sauce, brown sugar, water, garlic, green onions, and sesame oil until the sugar has dissolved.
  • Place the ribs in a large plastic zipper bag. Pour the marinade over the ribs, squeeze out all the air, and refrigerate the bag for 3 hours to overnight.
  • Preheat an outdoor grill for medium-high heat, and lightly oil the grate. Remove the ribs from the bag, shake off the excess marinade, and discard the marinade. Grill the ribs on the preheated grill until the meat is still pink but not bloody nearest the bone, 5 to 7 minutes per side.

Steps:

  • Place all ingredients, with the exception of the ribs, into your food processor and run until the garlic and ginger are both minced to small pieces. (You can also use a blender and mix in two or three batches or even mince the garlic and ginger by hand and stir everything in a large bowl) Once all items are mixed together, place ribs in a shallow pan or tub and pour the marinade over them being careful to make sure they are as submerged as possible. You can marinade them for as long as three days but I have had them within 24 hours and the flavor is still quite complete.

4 pounds bone-in beef short ribs (about 6), cut in 3 1/2-inch pieces

1 cup low-sodium soy sauce
6 tablespoons rice vinegar
1 tablespoon Sriracha or other chili sauce
3 cups 1-inch-cubed pineapple (1 pound)
Cooked white rice, for serving
Chopped scallion greens, for serving

Steps:

  • Place onions, garlic, and ginger in a 5- to 6-quart slow cooker. Top with short ribs in a tight layer. In a medium bowl, whisk together brown sugar, soy sauce, vinegar, and Sriracha and add to slow cooker. Cover and cook on high until ribs are almost tender, 4 hours. Add pineapple and cook until pineapple is tender, 1 hour.
  • With a slotted spoon, transfer ribs, pineapple, onions, and ginger to a platter and tent with foil. With a ladle, skim fat from cooking liquid. Serve ribs and pineapple mixture with rice; drizzle with some cooking liquid and sprinkle with scallions.

3½ lb Korean-style beef ribs, cut into 3-in. (8-cm) pieces 1.75 kg
1 onion, chopped
4 cloves garlic, minced
4 tsp minced fresh ginger 20 mL
1½ lb mini yellow-fleshed potatoes, halved 750 g
3 carrots, chopped
⅓ cup lightly packed brown sugar 75 mL
3 tbsp Korean chili paste (gochujang) or Sriracha sauce to taste 45 mL
⅓ cup rice vinegar 75 mL
⅓ cup reduced sodium soy sauce 75 mL
2 cups reduced sodium beef broth 500 mL
2 tbsp sesame oil 30 mL
2 green onions, chopped
1 tsp toasted sesame seeds 5 mL

Steps:

  • Preheat oven to 300˚F (150˚C). Heat oil in ovenproof Dutch oven or large saucepan over medium heat. Cook rib pieces in batches, 6 to 8 min. per batch, until browned on all sides. Transfer to plate.
  • Add onions, garlic and ginger to Dutch oven and cook 2 min. until softened. Stir in potatoes, carrots, brown sugar and chili paste; mix to coat. Stir in rice vinegar and soy sauce; bring to a boil. Pour in beef broth and sesame oil; bring to a simmer. Return ribs to Dutch oven.
  • Cover and transfer to oven. Cook, stirring occasionally, 2 to 2½ hr. until meat is very tender. Skim fat from sauce. Sprinkle with green onion and sesame seeds to serve.

1/2 cup sugar
1/4 cup soy sauce
2 cloves garlic, grated
1 tablespoon sweet chili sauce

Steps:

  • Place the beef short ribs in a re-sealable gallon bag. Add the sugar, soy sauce, garlic, sweet chili sauce, ginger and 1/2 cup water to the bag. Squeeze half of the orange in the bag, and add the remaining orange rind. Marinate the short ribs in the refrigerator for at least 12 hours, preferably 24 hours, so the juices and flavors can soak into the short ribs.

1 1/2 cups soy sauce, such as Kikkoman
1/2 cup packed golden brown sugar
2 Tbsp. finely chopped fresh ginger
2 to 3 large garlic cloves, crushed
2 tsp. sesame oil 8 (5 to 6 bone, 1/2" thick) strips of beef short rib (see Note)
Vegetable oil for the grill 2 to 3 green onions, thinly sliced

Steps:

  • Place the ribs in a sided dish just large enough to hold them in a slightly overlapping layer. Place remaining ingredients, except green onions, in a bowl, whisk to combine, and then pour over the ribs. Cover and marinate in the refrigerator overnight, turning occasionally. Preheat your grill to medium-high. Remove the ribs from the marinade; discard the marinade. Lightly oil the grill. Grill the ribs 4 to 5 minutes per side, until cooked through, nicely coloured, but still juicy in the middle. Sprinkle the ribs with green onions before serving.

1/4 cup dark brown sugar
1 tablespoon sesame oil

1 medium onion, roughly chopped
1 medium Asian pear, peeled, cored and roughly chopped

3 pounds boneless beef short ribs, cut 1/4-inch-thick (3 to 4 inches long)
Kosher salt
Olive oil, for drizzling
1/4 cup granulated sugar
1/4 cup rice vinegar

Juice of 1 lime

Steps:

  • For the short ribs: Whisk together the soy sauce, rice wine, brown sugar, sesame oil, gochujang and black pepper in a large bowl. Puree the garlic, onion, Asian pear and ginger in a food processor until smooth. Whisk into the soy mixture, then thin down with 1/3 cup water. Stir in the sesame seeds. Submerge the beef in the marinade and refrigerate for 2 hours or up to overnight, if time allows.
  • Remove the beef from the marinade and discard the marinade. Let the chill come off the beef for 30 minutes prior to grilling.
  • Preheat a grill or grill pan over high heat. Sprinkle the short ribs with salt and pepper and drizzle with olive oil. Place on the grill and cook until deeply charred on both sides, 1 to 1 1/2 minutes per side. Remove to a platter to rest while you make the salad.
  • For the banh mi salad: Whisk together the granulated sugar, rice vinegar, chile flakes and lime juice in a large bowl. Season well with salt and pepper, then add the cabbage, cilantro, mint and scallions, tossing to thoroughly coat.
  • Pile the salad up on one side of a platter. Shingle and stack the charred short ribs along the other side. Serve.

4 green onions, chopped
2 garlic cloves, chopped
1 jalapeno, seeded and chopped
1 orange, zested and juiced, plus orange slices, for serving

Steps:

  • In a large resealable bag, combine the ginger, half of the green onions, the garlic, jalapeno, orange zest and juice, teriyaki sauce and short ribs. Swirl around a few times to cover the ribs in the marinade. Marinate for at least 3 hours and up to overnight in the refrigerator. Midway thru, swirl the ribs again to ensure the marinade covers all.
  • Prepare a grill for medium-high heat. Remove the ribs from the marinade and shake off any excess liquid; reserve the remaining marinade for the sauce. Grill the ribs until well caramelized and cooked to desired doneness, 5 to 7 per side. Remove to a serving platter.
  • Meanwhile, pour the marinade from the bag into a saucepan. Bring to a rapid boil over high heat and boil until reduced by half, at least 5 minutes.
  • Pour the sauce over the grilled ribs. Sprinkle with the remaining green onions, and garnish with sesame seeds and orange slices. Serve with kimchi.

GALBI (KOREAN-STYLE SHORT RIBS)

This dish, known as galbi, is a fine thing to eat in a restaurant, but it also makes for a wonderful and easy meal at home. If you buy English-style short ribs, which are cut along the bone, you must butterfly the meat into a thin, long strip. If the ribs you buy are flanken-style, in which a band saw is used to cut across the ribs, creating half-inch slices of beef dotted with three little bones, rinse them under cold water before seasoning to remove any bone fragments. It's a good idea to let the ribs marinate for at least two hours to allow the seasoning to penetrate; marinating overnight is even better.

  • Put onion, garlic, pear and ginger in the work bowl of a food processor. Grind ingredients to a smooth purée, then add to soy sauce mixture. Add sesame seeds. Thin with ¼ cup water. Pour marinade over short ribs and mix well. Cover and refrigerate for at least 2 hours, or overnight. Bring to room temperature, drain and discard marinade.
  • Cook short ribs on a hot grill or under the broiler for 2 to 3 minutes per side, until nicely browned but juicy. Pile grilled meat on a platter and serve immediately with lettuce leaves on the side. Accompany with sliced hot peppers, ssamjang and steamed rice, if desired.

  • To make the ribs, in a very large bowl or measuring cup with a spout, whisk together the soy sauce, water, rice vinegar, sesame oil, fish sauce, brown sugar, ginger and garlic until well combined. Divide the short ribs into two or three gallon-size ziplock bags and pour equal parts of the marinade into each bag. Refrigerate for at least 8 hours. Although Alana recommends letting them chill overnight for optimal flavor! Just be sure to squish the bags at least three times throughout the marinating process to ensure the ribs get evenly marinaded.
  • To make the macaroni salad, cook the pasta according to package directions, and then drain. Transfer to a large mixing bowl and then while still hot, stir together the pasta with the vinegar, carrot and onion until combined. Set aside and allow to cool to room temperature. In a small bowl, whisk together the mayo, milk, sugar and salt and pepper until smooth. Pour into the cooled pasta mixture and add the cooled potatoes. Stir everything until combined. Cover with plastic wrap and chill for at least 3 hours or overnight. If the salad dries a bit, stir about a tablespoon or so of milk to loosen it.
  • Once ready to cook the ribs, heat an outdoor grill to medium. Remove the ribs from the marinade and cook them to your desired doneness, 4 to 5 minutes on each side for medium-rare. If the ribs seem to be burning, adjust the heat to medium-low and cook for a minute or two longer on each side. If you don't have an outdoor grill, you can also broil them in the oven for 5 minutes per side. Garnish the ribs with sesame seeds and green onions before serving. Serve with cooked white rice and mac salad. Enjoy!

  • Place ribs in a ziplock bag and set aside. Combine pineapple juice, brown sugar, sesame oil, soy sauce, vinegar, ginger, garlic, and green onions in a bowl and whisk to combine. Pour mixture over ribs in bag and marinate over night in the fridge. Turn bag occasionally to evenly distribute marinade.
  • Preheat BBQ grill. Lightly brush pineapple slices with olive or vegetable oil (or a spray works great). Give each slice a very light sprinkle of kosher salt. Place both ribs and pineapple on grill and cook until charred on both sides and evenly done. Steak time will depend on thickness of cut. Extra thin ribs cook for only a couple of minutes per side and thicker cuts (up to 1/2 inch) may take 5-6 minutes per side.

  • Pre-heat your grill to be quite hot (around 400 degrees or as hot as it will get).Rub the ribs down with a light coat of vegetable oil and then sprinkle with the Prairie Smoke and Spice Big Beef Rub. Use more than you think you will need because some will fall off during the cooking process. Let the ribs sit at room temperature for a couple of minutes until the rub starts to melt into the surface of the meat.
  • Place the ribs directly on the hot grill and watch them sizzle. You are going to flip them 3 times, so they end up cooking twice on each side. So every 2.5 minutes flip the ribs until each side has been cooking for around 10 minutes. Pull the ribs off the smoker and let rest for 5 minutes before serving.
  • I like to serve my BBQ sauce on the side, but you can also paint the surface of the ribs with the Prairie Smoke and Spice Blue Ribbin Sauce prior to serving. The bones are really easy to remove while eating, but when I’m serving to kids I like to cut the meat off before putting it on their plate.
