This is the staple of Korean fine dining, but too expensive in the restaurants. It is also simple to make at home, and will leave your guests asking for more. Total time includes marinating time. - Place the ribs in a large plastic zipper bag. Pour the marinade over the ribs, squeeze out all the air, and refrigerate the bag for 3 hours to overnight.

KALBI SHORT RIBS IN DA KITCHEN TERIYAKI SAUCE

- Place the beef short ribs in a re-sealable gallon bag. Add the sugar, soy sauce, garlic, sweet chili sauce, ginger and 1/2 cup water to the bag. Squeeze half of the orange in the bag, and add the remaining orange rind. Marinate the short ribs in the refrigerator for at least 12 hours, preferably 24 hours, so the juices and flavors can soak into the short ribs.
- Preheat a grill to medium heat.

- For the short ribs: Whisk together the soy sauce, rice wine, brown sugar, sesame oil, gochujang and black pepper in a large bowl. Puree the garlic, onion, Asian pear and ginger in a food processor until smooth. Whisk into the soy mixture, then thin down with 1/3 cup water. Stir in the sesame seeds. Submerge the beef in the marinade and refrigerate for 2 hours or up to overnight, if time allows.
- Remove the beef from the marinade and discard the marinade. Let the chill come off the beef for 30 minutes prior to grilling.
- Preheat a grill or grill pan over high heat. Sprinkle the short ribs with salt and pepper and drizzle with olive oil. Place on the grill and cook until deeply charred on both sides, 1 to 1 1/2 minutes per side. Remove to a platter to rest while you make the salad.
- For the banh mi salad: Whisk together the granulated sugar, rice vinegar, chile flakes and lime juice in a large bowl. Season well with salt and pepper, then add the cabbage, cilantro, mint and scallions, tossing to thoroughly coat.
- Pile the salad up on one side of a platter. Shingle and stack the charred short ribs along the other side. Serve.
KOREAN SHORT RIB KEBABS
When Martha made this recipe on Cooking School episode 411, she used bone-in short ribs and omitted the skewers. She also doubled the marinade but did not use any apple juice. Hot kimchi (store-bought is fine) is great with the sweet, gingery ribs.

- In a large resealable bag, combine the ginger, half of the green onions, the garlic, jalapeno, orange zest and juice, teriyaki sauce and short ribs. Swirl around a few times to cover the ribs in the marinade. Marinate for at least 3 hours and up to overnight in the refrigerator. Midway thru, swirl the ribs again to ensure the marinade covers all.

GALBI (KOREAN-STYLE SHORT RIBS)
This dish, known as galbi, is a fine thing to eat in a restaurant, but it also makes for a wonderful and easy meal at home. If you buy English-style short ribs, which are cut along the bone, you must butterfly the meat into a thin, long strip. If the ribs you buy are flanken-style, in which a band saw is used to cut across the ribs, creating half-inch slices of beef dotted with three little bones, rinse them under cold water before seasoning to remove any bone fragments. It's a good idea to let the ribs marinate for at least two hours to allow the seasoning to penetrate; marinating overnight is even better.

- Rinse short ribs in cold water, pat dry and place in a wide shallow bowl. In another bowl, mix together soy sauce, brown sugar, rice wine, sesame oil, black pepper and cayenne.

- To make the ribs, in a very large bowl or measuring cup with a spout, whisk together the soy sauce, water, rice vinegar, sesame oil, fish sauce, brown sugar, ginger and garlic until well combined. Divide the short ribs into two or three gallon-size ziplock bags and pour equal parts of the marinade into each bag. Refrigerate for at least 8 hours. Although Alana recommends letting them chill overnight for optimal flavor! Just be sure to squish the bags at least three times throughout the marinating process to ensure the ribs get evenly marinaded.
- To make the macaroni salad, cook the pasta according to package directions, and then drain. Transfer to a large mixing bowl and then while still hot, stir together the pasta with the vinegar, carrot and onion until combined. Set aside and allow to cool to room temperature. In a small bowl, whisk together the mayo, milk, sugar and salt and pepper until smooth. Pour into the cooled pasta mixture and add the cooled potatoes. Stir everything until combined. Cover with plastic wrap and chill for at least 3 hours or overnight. If the salad dries a bit, stir about a tablespoon or so of milk to loosen it.
- Once ready to cook the ribs, heat an outdoor grill to medium. Remove the ribs from the marinade and cook them to your desired doneness, 4 to 5 minutes on each side for medium-rare. If the ribs seem to be burning, adjust the heat to medium-low and cook for a minute or two longer on each side. If you don't have an outdoor grill, you can also broil them in the oven for 5 minutes per side. Garnish the ribs with sesame seeds and green onions before serving. Serve with cooked white rice and mac salad. Enjoy!

- In a blender carafe, combine the pear, the chopped 1/2 onion, garlic and ginger. Blend until smooth. Pour the purée over the short ribs and toss to completely coat the meat. - Place ribs in a ziplock bag and set aside. Combine pineapple juice, brown sugar, sesame oil, soy sauce, vinegar, ginger, garlic, and green onions in a bowl and whisk to combine. Pour mixture over ribs in bag and marinate over night in the fridge. Turn bag occasionally to evenly distribute marinade.

- Pre-heat your grill to be quite hot (around 400 degrees or as hot as it will get).Rub the ribs down with a light coat of vegetable oil and then sprinkle with the Prairie Smoke and Spice Big Beef Rub. Use more than you think you will need because some will fall off during the cooking process. Let the ribs sit at room temperature for a couple of minutes until the rub starts to melt into the surface of the meat.
- Place the ribs directly on the hot grill and watch them sizzle. You are going to flip them 3 times, so they end up cooking twice on each side. So every 2.5 minutes flip the ribs until each side has been cooking for around 10 minutes. Pull the ribs off the smoker and let rest for 5 minutes before serving.
- I like to serve my BBQ sauce on the side, but you can also paint the surface of the ribs with the Prairie Smoke and Spice Blue Ribbin Sauce prior to serving. The bones are really easy to remove while eating, but when I’m serving to kids I like to cut the meat off before putting it on their plate.
