2 pounds sweet potatoes or yams, scrubbed
2 tablespoons unsalted butter
2 tablespoons dark amber maple syrup, grade A or B
1/2 teaspoon grated orange zest
1/2 teaspoon balsamic vinegar
3/4 teaspoon kosher salt, plus more as needed
Freshly ground black pepper

Steps:

  • Preheat the oven to 400 degrees F. Pierce the sweet potatoes 2 or 3 times with a fork. Bake in a roasting pan for 45 to 60 minutes, until tender. Cut the potatoes in half, lengthwise. Hold the sweet potatoes with a potholder or towel and scoop out the potato flesh into a food mill or ricer.
  • In a medium saucepan, heat the butter, syrup, zest, and vinegar over medium heat. Remove from the heat and mash the sweet potatoes in the pan. Stir to combine evenly. Season to taste with salt and pepper. Serve immediately.

3/4 teaspoon kosher salt, plus more to taste

Steps:

  • Heat oven to 350 degrees. Wrap potatoes in foil, place on a rimmed baking sheet, and bake until tender, about 1 hour. Let rest until cool enough to handle but still warm, then remove the foil and peel off the skins.
  • Add sweet potatoes to a food processor, along with butter, brown sugar, bourbon or juice, lemon zest, salt, nutmeg, pepper and cloves. Purée until smooth. 1/2 teaspoon freshly grated nutmeg or 1/4 teaspoon ground nutmeg
1/4 teaspoon ground cinnamon

Steps:

1 cup brown sugar
½ cup butter
1 large orange, zested and juiced
1 tablespoon ground ginger

  • Preheat oven to 350 degrees F (175 degrees C). Place sweet potatoes on a baking sheet.
  • Bake in the preheated oven until a fork can easily puncture a sweet potato, about 1 hour. Remove baking sheet from oven and cool sweet potatoes until easily handled, about 15 minutes.

Steps:

  • Preheat oven to 450 degrees Fahrenheit.
  • Line a pie pan with rolled out dough; prick all over with fork; press a piece of heavy-duty foil directly into the pie shell.
  • Bake for 6 minutes; remove foil; bake for 4 more minutes until just beginning to brown.
  • Combine the sweet potatoes and sugar in a large bowl; beat in molasses and eggs.
  • Add the spices and orange zest and stir well.

I am updating this recipe based upon CountryLady's review. I made this recipe using fresh sweet potatoes and it is so much better. I am leaving the canned as an option. Both ways are good.

4 medium sweet potatoes or 2 (16 ounce) cans sweet potatoes
1 1/4 cups light brown sugar, firmly packed
2 tablespoons cornstarch
3/4 cup orange juice
1/4 cup lemon juice

1 teaspoon vanilla
1 tablespoon orange zest, finely grated

Steps:

  • Preheat oven to 350°F.
  • If using fresh sweet potatoes, slice in 1 1/4 inch slices, place in saucepan, cover with water and cook for 15 minutes or until tender when pierced with a fork.
  • Drain the potatoes and when cool enough to handle, remove the peel and place in a 2-quart casserole dish that has been lighly oiled or sprayed with non-stick cooking spray.
  • If using canned potatoes drain the potatoes and arrange in 2-quart casserole that has been prepared as indicated above.
  • In a medium bowl, combine sugar and cornstarch; add orange juice, lemon juice, butter, vanilla and orange zest.
  • Pour over potatoes and bake 50 to 60 minutes, basting occasionally with the sauce.
