3 tablespoons extra-virgin olive oil
4 slices thick-cut bacon or 4 slices pancetta, chopped
3 shallots, thinly sliced
2 cloves garlic, chopped
3 tablespoons sherry vinegar
2 pounds triple washed spinach, stems removed
Salt and freshly ground black pepper
Freshly grated nutmeg, to taste
4 hard-boiled eggs, quartered lengthwise
Parmigiano-Reggiano, for topping

Steps:

  • Heat the olive oil in large skillet over medium-high heat. Once hot, add bacon to skillet and brown, reserve the crispy bacon bits and add the shallots and garlic to the pan. Cook 3 to 4 minutes then deglaze the pan with vinegar, turn spinach into pan and wilt down a bit but do not fully cook the spinach, just give it a few turns with tongs. Season the greens with salt, pepper and nutmeg. Place spinach on a serving dish and top with quartered eggs, shavings of cheese and reserved bacon bits.

10 -12 ounces Baby Spinach, well cleaned and dried
4 -5 garlic cloves, sliced thin
1 -2 tablespoon olive oil
kosher salt
fresh grated nutmeg (optional)

Steps:

  • Heat oil In a large lidded sauce pan over a medium heat.
  • Add garlic and toss (or stir) until it just starts to turn color.
  • Remove from heat and IMMEDIATEY add spinach.
  • Toss with a set of tongs to coat the spinach with oil/garlic.
  • Salt to taste, some folks like it with a just a bit of fresh grated nutmeg.
  • Cover and let sit for a couple minutes, toss again and serve.
  • It should just be slightly warmed and retain it's crunch.

I came up with this recipe the same way I think a lot of cooks come up with new ideas - by sticking my head in the refrigerator and wondering what I could throw together with what I had. It turned out to be easy and very tasty so I thought I would share.

6 slices bacon
¼ cup red wine vinegar
¼ cup seasoned rice vinegar
1 (2 ounce) can anchovy fillets (such as King Oscar®), diced
½ teaspoon ground white pepper
2 tablespoons extra-virgin olive oil
1 yellow onion, thinly sliced
2 cloves garlic, minced
12 ounces baby spinach (such as Dole®)
4 hard-boiled eggs, peeled and sliced
½ cup green onions, finely chopped
¼ cup grated Asiago cheese

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels. Crumble bacon.
  • Whisk red wine vinegar, seasoned rice vinegar, anchovies, and white pepper together in a bowl until dressing is evenly mixed.
  • Heat olive oil in a large wok or skillet over medium-high heat; saute onion and garlic until onion is transparent, 5 to 10 minutes. Lower heat to medium. Add spinach, working in batches, to onion mixture, tossing and mixing until spinach wilts, 1 to 2 minutes.
  • Transfer spinach mixture to a serving bowl; top with egg slices and bacon.
  • Pour dressing into the wok; bring to just under a boil while scraping the browned bits of food off of the bottom of the pan with a wooden spoon. Pour dressing over spinach mixture; sprinkle with green onions and Asiago cheese.

5 cups crimini mushrooms, scrubbed clean with a damp cloth and quartered
1 medium red onion, chopped
1 tablespoon extra virgin olive oil
Pinch each fine sea salt and freshly ground black pepper
4 packed cups chopped kale or spinach (from 1 large bunch)
1/3 cup walnut halves, roasted if desired
1 ripe avocado, diced
2 pears, sliced
1/4 cup extra virgin olive oil
2 tablespoons balsamic vinegar
2 tablespoons freshly squeezed lemon juice
1/4 teaspoon fine sea salt
Freshly ground black pepper, to taste
2 garlic cloves, minced
1 teaspoon maple syrup or honey
1 tablespoon dijon mustard

Steps:

  • Preheat the oven to 400 degrees Fahrenheit. Place the quartered mushrooms and red onion in the centre of a baking sheet. Drizzle with oil and add a pinch of sea salt and freshly ground black pepper. Toss to coat and spread out in an even layer. Roast for 17-20 minutes.
  • Make the dressing: Combine the oil, balsamic, lemon juice, salt, pepper, garlic, maple syrup, and dijon mustard in a jar. Secure the lid and shake vigorously to combine.
  • Meanwhile, make the rest of the salad: Place the chopped spinach (no need to chop if using baby spinach) or kale in a large bowl. Add the still warm roasted mushrooms and onion. This will cause the spinach or kale to wilt slightly. Drizzle with 1/4 cup of the dressing and toss to coat. Top with walnuts, avocado, and pears (you can reserve some for garnishing individual servings if you like). Toss again and plate. Serve with additional dressing, as desired.

200 g millet
1 cup water
2 1/2 cups vegetable stock
50 g dried apricots, finely chopped
60 g sliced almonds
250 g baby spinach leaves
1/2 lemon, juiced
salt and pepper

Steps:

  • Place the millet, dried apricots, water and stock in a large saucepan. Bring to the boil, reduce heat to a slow simmer. SImmer 15 to 20 minutes or until the liquid has been absorbed and the millet is tender.
  • Meanwhile, using a dry pan, toast the flaked almonds until lightly golden and fragrant. Set aside.
  • Add the spinach and lemon juice to the millet and season with salt and freshly ground pepper (depending on the stock used, you may not need to add any salt). Cover the pan and cook on a very low heat for a few minutes to wilt the spinach.
  • Serve scattered with the flaked almonds over the top as garnish.
