QUESO FUNDITO DIABLITO (MELTED CHEESE WITH A KICK)
Queso Fundita means Melted Cheese in Spanish, but this is more than just melted cheese! It is very tasty, makes a nice presentation and has just the right kick (Diablito)!

Steps:
- Heat oven to 350°F.
- Mix together salsa, chilies and cheeses in a 2 quart casserole or baking dish.
- Bake for 30 minutes or until bubbly and cheese is partly melted; Do Not Stir!
- Garnish with olives and allow to stand for 10 minutes.
- Serve warm with chips.
- Enjoy!

Steps:
- Bring beer to boil in medium saucepan, reduce heat to low. Add cheese mixture, 1/2 cup at a time, stirring constantly until all cheese is melted. Repeat with the remaining cheese - but do not boil!
- Stir in the chiles, crushed garlic or garlic powder cilantro and seasoning. Pour into a warmed serving bowl.
- Before serving you can put the dip under a broiler to brown the top giving it a nice crust.
- Sprinkle with jalapenos and drizzle with taco sauce. Serve immediately with tortilla chips, or keep warm in an oven.

Make sure that you serve this dip with lots of tortilla chips. If you serve this at your next get together, your guests will never want to leave, as long as there is this dip around, it is awesome! This recipe makes about 3 cups, so you might want to double the recipe. Non-alcoholic beer can be purchased at any large food chain. recipe#168653 works well for this

Steps:
- In a large bowl, combine the cheese and flour.
- In a heavy-bottomed saucepan bring the beer to a boil; reduce heat and add in the cheese/flour 1/2 cup at a time, stirring constantly until the cheese is melted.
- Repeat with remaining cheese mixture, stir until thickened DO NOT BOIL.
- Stir in chiles, cilantro, jalapeno pepper and salt and pepper to taste.
- Immediately pour the mixture into a glass 8-inch baking dish.
- Drizzle with taco sauce.
- Serve immediately, or keep warm in oven.

WHITE CHEESE DIP (QUESO BLANCA)
My husband and I had this incredible cheese dip at a local mexican restaurant. We asked what ingredients were in the dip and they would only tell us a few. So, we made this up...it's almost exactly the same! SO GOOD!! Don't skip the jalapeno juice, it doesn't add any heat in this ratio, just taste--it tastes so much better with it than without it.

- In a large sauce pan, combine cream cheese, mozzarella and quesadilla cheese. Add whipping cream.
- On medium low heat, melt cheeses until smooth.
- Add sour cream, parmesan and jalapeno juice. Stir until combined and completely smooth.
- Remove from heat, store in an airtight container in the refrigerator (it will need to be reheated in the microwave and stirred to combine again if left in the refrigerator before eating).
- Delicious with chips, quesadillas, pizza, or macaroni and cheese!

- Preheat oven to 350F and lightly spritz an oven-safe bowl or dish with cooking spray (Pam).
- Cover the bottom of prepared dishl with salsa.
- Add half the Velveeta cubes, then the sausage on top, then 1/2 cup salsa, then the rest of the Velveeta cubes on top of that, then sprinkle with the jack cheese.
- Bake in oven for 20 minutes until bubbly.
- Remove and sprinkle with the green onions.
- Serve with tortilla chips.
