TAVA OR TURKISH STEW



Tava or Turkish Stew image

This is a delicious Turkish dish that was created for American palates close to the military base. The recipe for tava does not have to be exact, you can add more or less of your ingredients to taste. The secret ingredient for the Turkish taste is the red peppers. Serve over rice.

2 tablespoons olive oil, divided
1 ½ pounds skinless, boneless chicken breast halves - cut into 1 inch cubes
½ (12 ounce) jar roasted red bell peppers, drained
1 (14.5 ounce) can diced tomatoes with juice
1 (6 ounce) jar mushrooms, drained
1 onion, diced
1 tablespoon minced garlic
salt and pepper to taste
1 (16 ounce) package shredded mozzarella cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium casserole dish.
  • Heat 1 tablespoon oil in a skillet over medium heat, and cook the chicken until juices run clear.
  • Puree the roasted red peppers in a blender or food processor until smooth. In the prepared casserole dish, mix the cooked chicken, roasted red peppers, tomatoes, mushrooms, onion, and garlic. Season with salt and pepper. Drizzle with remaining 1 tablespoon olive oil, and top with mozzarella cheese.
  • Bake 30 minutes in the preheated oven, until cheese is melted and bubbly.

1 1/2 lbs boneless skinless chicken breasts, cut into 1 inch cubes or 1 1/2 lbs chicken legs with thigh
0.5 (12 ounce) jar ajvar
1 (14 1/2 ounce) can diced tomatoes with juice
1 (6 ounce) jar mushrooms, drained
1 onion, diced
1 tablespoon garlic, minced
salt and pepper, to taste

Steps:

  • Heat 1 tablespoon oil in a dutch oven over medium heat, and cook the chicken breast cubes until juices run clear or brown the chicken pieces. Mix the cooked chicken, ajvar, tomatoes, mushrooms, onion, and garlic.
  • Season with salt and pepper. Drizzle with remaining 1 tablespoon olive oil. Bring to a boil and then simmer on low for 1 hour and 30 minutes.

250 g dark chicken meat, cut in medium sized chunks
2 tablespoons extra virgin olive oil
9 -10 mixed mushrooms, cleaned, cut in halves
1 cubanelle pepper, cut in medium sized chunks
2 large tomatoes, peeled, sliced
6 -7 garlic cloves, peeled
3 tablespoons red pepper paste, mild-mixed with 2 tbsp water
2 tablespoons butter, cut in small size
1/2 teaspoon crushed pepper
salt
pepper

Steps:

  • Season chicken pieces with salt and pepper. Saute with olive oil for about 4-5 minutes while stirring in a medium sized pot. Place mushrooms over the chicken, and then the cubanelle pepers over the mushrooms. Arrange the tomato slices over the top side by side, don't leave empty spaces. Sprinkle crushed pepper paste all over tomatoes. Put the butter pieces over the tomatoes, close the lid. Turn the heat to high first. When the dish starts to boil, turn the heat down to medium-low heat. Cook for about 1 hr and 30 minutes.

This recipe is one of the handful of easy Turkish recipes that I learned while studying abroad in Turkey. The dish consists of cubed chicken in a tomato sauce...quite simple, but it tastes good! Turks usually eat it with bread, however it can be eaten alone as well. If the tomatoes don't seem to provide enough juices I have sometimes added a little water (probably not necessary, but you can judge this towards the end). Serve in a sided dish or shallow bowl. Afiyet olsun!

4 -5 tomatoes (peeled, cut into small-medium sizes)
2 chicken breasts (cubed)
10 garlic cloves (left whole or cut in half if large)
1 tablespoon red pepper paste
4 tablespoons oil

Steps:

  • In medium pot, mix oil and pepper paste over medium heat.
  • Add chicken and cook mixing 5-10 minutes until just white.
  • Add garlic and tomatoes, continue cooking over medium heat until chicken is done (approx. 15-20 minutes), stirring occasionally.
  • Stir in an extra large pinch of thyme.

6 chicken thighs, cut into thirds
2 table spoons olive oil
1 table spoon cumin
1 1/2 tea spoon paprika
1 1/2 tea spoon cinnamon
1 tea spoon coarse salt
3/4 tea spoon turmeric
1/4 cup fruit juice (eg orange)

Steps:

  • 1) Mix all seasoning with oil in a bowl.
  • 2) Place chicken pieces in bowl and toss to coat.
  • 3) Place in fridge for 10 min.
  • 4) Preheat oven to 450.
  • 5) Place chicken on one layer on a pan. Roast for 10 minute.
  • 6) Pour 1/4 cup of fruit juice (I ususally use cranberry or orange) on top.
  • 7) Roast for another 10 minute.
  • 8) Test that chicken is done by cutting one of the thickest pieces. Enjoy!

1 (6 ounce) can tomato paste
¼ cup water
8 cloves garlic, halved

4 medium potatoes, sliced
4 tomatoes, sliced
1 large onion, sliced
1 cup fresh mushrooms, sliced
8 pepperoncini peppers

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Trickle 1 tablespoon olive oil in the bottom of a roasting pan. Arrange chicken thighs in the pan. Mix the tomato paste and water, and spread over the chicken. Place garlic clove halves in the pan. Season chicken with salt and pepper. Arrange potatoes, tomatoes, onion, mushrooms, and pepperoncini over the chicken. Sprinkle with remaining tablespoon olive oil.
  • Bake 1 1/2 hours in the preheated oven, until vegetables are tender and chicken juices run clear. Periodically pour a little water into the pan if it starts to get dry.
