This delicious Mediterranean Galette is a healthy appetizer pie that will disappear in seconds! Serve this with a side of salad for a complete meal.

8 - 10 inch Store-Bought Pie Shell, thawed
1/4 cup Ricotta Cheese
1/4 cup Goat Cheese
1/4 cup Feta Cheese, crumbled
1/2 cup Grape Tomatoes or Cherry Tomatoes, sliced in halves
1 cup Artichoke Hearts
1/2 Green and Black Olives, pitted
1/2 cup Spinach
1 tbsp. Fresh Dill, chopped
1 tsp. Salt
1 tsp. Black pepper
1 tbsp. Olive Oil

Steps:

  • Preheat your oven to 450 F.
  • Lay the thawed pie shell on a parchment-lined baking tray.
  • In a small bowl, mix the ricotta cheese, goat cheese, salt, pepper, and chopped dill together until well combined.
  • Carefully dollop spoonfuls in the middle of the pie shell. Use the back of a spoon or spatula to smoothen it down making leaving at least an inch of a room away from the perimeters.
  • Layer the tomatoes down cut side up on the cheese, then follow with the artichoke hearts.
  • To fold the edges, carefully lift one edge and fold it inside towards the filling, then lift the next edge, fold it in again. Keep doing this till the edge is fully folded inside towards the filling.
  • Set it in a preheated oven and bake for 20 minutes.
  • Bring water to boil in a small pot, add the spinach, and blanch for 2 minutes. Turn it into a sieve and set it aside to drain.
  • Once the galette has been fully baked, garnish the top with green and black pitted olives, the blanched spinach, and crumble some feta cheese all over the top.
  • Lastly, drizzle some olive oil all over the top.

1 lb eggplant (about 2 medium )
1 tsp kosher salt
1 large sweet onion
1/2 lb zucchini (about 3 medium )
1 lb tomatoes (I like Roma tomatoes for this. About 5.)
2 cloves garlic - minced
3/4 C extra virgin olive oil
3/4 tsp oregano (dried)
3/4 tsp basil (dried)
1/2 tsp kosher salt
1/4 tsp pepper (freshly ground tastes best)
1 package pie crust (store-bought or homemade)
1/2 C grated parmesan cheese
2 C shredded mozzarella

Steps:

  • Preheat oven to 425° F.
  • Prep the eggplant by cutting 1/2 inch off both ends. Then slice all the skin off and cut in 1/2 inch rounds.
  • Place rounds on paper towels and sprinkle 1 tsp salt evenly over top. Place another layer of paper towels on top of slices and place something heavy on top to help absorb the moisture. I used my cutting board and then put a couple bowls on top.
  • Leave eggplant for 30 minutes and let the paper towels soak up as much moisture as possible.
  • While eggplant is resting, dice onion, garlic and zucchini into 1/4" pieces.
  • When eggplant is done resting, dice into 1/4" cubes.
  • Heat olive oil in skillet on medium heat. Add eggplant, zucchini, onion and minced garlic. Cook, stirring often, until tender (about 5 minutes). Set aside.
  • Combine oregano, basil, remaining salt and pepper in small bowl. Set aside.
  • Chop the tomatoes into 1/2" pieces, removing the seeds and as much wet stuff as you can.
  • Lay 1 crust into pie dish. Add 1/2 the vegetables and 1/2 the tomatoes. Sprinkle with 1/2 the herbs and 1/2 the parmesan and mozzarella cheeses.
  • Repeat layers.
  • Place second pie crust on top and crimp edges so the pie crusts are sealed around the edges. For a dark and shiny crust, brush with 1 egg yolk and then sprinkle with parmesan.
  • Place in the center of the oven for 25-35 minutes.
  • Once pie crust is fully cooked and pie is heated through, remove from oven and allow to rest 5 minutes before slicing. Best enjoyed with a crusty french bread to soak up the vegetable juices!

1 lb eggplant, peeled 1/4 inch slices
1 teaspoon salt
1 large onion, sliced
1 green pepper, seeded and sliced (optional)
1/2 lb zucchini, sliced
2 cloves garlic, minced
3/4 cup oil
1 lb tomatoes, cored seeded,sliced in 8 ths
3/4 teaspoon oregano
3/4 teaspoon basil
1/2 teaspoon salt
1/4 teaspoon pepper
1 package pie crust mix
1/2 cup grated parmesan cheese
2 cups shredded mozzarella cheese

Steps:

  • Place eggplant slices between several thickness of paper toweling; sprinkle with 1 teaspoons salt.
  • Weigh down with something flat and heavy; let stand 30 minutes.
  • Cut into 1/4 inch cubes.
  • Heat 1/4 Cup oil in a large skillet.
  • Add eggplant all at once.
  • Quickly toss to coat.
  • Cook, stirring constantly until tender (about 5 minutes); remove to large bowl.
  • Pour remaining oil into skillet, add onion, green pepper, zucchini, and garlic.
  • Cook, stirring constantly, until tender (about 5 minutes).
  • Set aside.
  • Combine oregano, basil, remaining salt, and pepper in measuring cup.
  • Set aside.
  • Prepare crust according to directions for a 2 crust pie.
  • Divide dough into 2 balls, 1 slightly larger than the other.
  • roll out larger into 12 inch circle; fit into 10 inch pie plate.
  • Trim overhang to 1/2 inch.
  • Sprinkle with 3 tablespoons of Parmesan.
  • Spoon half eggplant into pie plate; then half vegetables; sprinkle with half of herbs mixture, 1 tablespoons parmesan and half mozzarella.
  • Repeat, reserving 1 tablespoons parmesan.
  • Roll out remaining pastry; cut into 1/2 inch strips; arrange lattice fashion over pie; trim to within 1/2 inch of plate; turn edges under; flute.
  • Brush lattice strips with water; sprinkle with remaining parmesan.
  • Bake at 425 degrees F.
  • for 25 minutes or until pastry is golden brown and pie just begins to bubble.
  • Let stand 15 minutes before serving.

1 small red bell pepper (cored and chopped)
1 small zucchini (small diced)
2 green onions (white and light green parts only, roughly chopped)
4 ounces broccoli (cut into small florets)
Kosher salt and black pepper
3 tbsp Extra virgin olive oil
7 large eggs
¼ teaspoon baking powder (optional)
¼ cup whole milk
1/3 cup feta cheese (crumbled, more to serve)
1/3 cup finely chopped fresh parsley (more to serve)
1 teaspoon fresh thyme

Steps:

  • Preheat the oven to 450°F and position a rack in the middle. Put a rimmed sheet in the oven and allow it to heat.
  • In a mixing bowl, toss the bell peppers, zucchini, green onion and broccoli with a good pinch of kosher salt and black pepper. Add a drizzle of extra virgin olive oil (about 2 to 3 tablespoons) and toss to make sure all the veggies are well-coated in the oil.
  • Carefully remove the hot pan from the oven using oven mitts. Spread the veggies on the heated pan. Return the pan to the oven and cook for 15 minutes or until the veggies are soft and somewhat charred.
  • Turn the oven heat down to 400°F.
  • In your mixing bowl, whisk together the eggs, baking powder, milk, feta, parsley, thyme, and a good pinch of kosher salt and black pepper. Fold in the roasted vegetables.
  • Coat the bottom and sides of a 10-inch cast iron or oven-safe pan and warm the oil over medium-high heat until shimmering. Pour the egg an veggie mixture in the pan and cook for 2 to 3 minutes to allow the bottom of the eggs to settle.
  • Transfer the pan to the heated oven and cook for 8 to 10 minutes or until the center of the eggs are cooked through and the center of the frittata is firm and no longer runny).
  • Serve with more feta cheese and a garnish of fresh parsley.

1 lb cremini mushroom (or your favorite mushrooms)
1 onion
1 bunch asparagus
2 zucchini or 1 small eggplant
2 tablespoons olive oil or 2 tablespoons butter
2 roasted peppers
2 -3 ounces goat cheese
3 eggs
3 cups half-and-half
1 pinch sea salt (or kosher salt)
1 pinch nutmeg
pepper
1 pre-baked 9 inch pie shell

Steps:

  • Preheat oven to 375-degrees F.
  • Clean and chop all vegetables to bite size pieces.
  • In a large skillet over medium heat saute the onions in half of the olive oil or butter until translucent. Stir in mushrooms and saute for 3-5 minutes longer, season with salt and pepper. Set aside.
  • In a seperate skillet saute the zucchini and asparagus in the remaining oil or butter (1 tablespoon). Cook until tender. When vegetables have cooled squeeze out all excess moisture.
  • In a mixing bowl beat eggs, nutmeg, salt and pepper and half and half together.
  • In a partially baked 9-inch pie crust or crust fitted in a quiche pan, spread onion/mushroom mixture on bottom of crust, then add asparagus/zucchini mixture and then the goat cheese. Finally pour in the egg mixture.
  • Bake for 25-35 minutes or until cooked and top is set.
  • Place quiche under broiler very briefly to brown.

1 cup nonfat ricotta or fat-free cottage cheese
1 tbsp feta, crumbled
3 tbsp finely chopped fresh basil or dill, or 3 tsp dried basil or dill, divided into 2 equal portions
3 Roma tomatoes, sliced into 1/4-inch rounds
1 1/2 tbsp grated Asiago or Parmesan
1 1/2 tbsp grated lowfat mozzarella

Steps:

  • Heat oven to 350°. Coat a 9" pie plate with cooking spray. Line bottom of plate with potato slices. Cut remaining slices in half and arrange around side of plate. Bake 12 to 15 minutes. Remove from oven and set aside. Coat a sauté pan with cooking spray and sauté onion over low heat until tender, about 5 minutes. Add spinach to pan and let wilt, about 2 to 3 minutes. Remove from heat. Drain excess fluid from onion and spinach mixture. Stir in olives. In a bowl, beat eggs and egg whites. Stir in ricotta and feta. Add half the basil or dill and set aside. Spoon onion and spinach mixture into pie plate over potatoes. Layer on egg mixture, then slices of tomato. Bake 20 to 25 minutes or until egg is set and a knife inserted into pie comes out clean. Sprinkle grated cheeses evenly over top of pie and top with remaining basil or dill. Return to oven for 5 minutes or until cheese melts. Remove from oven and let sit for 5 minutes. Cut pie into 4 wedges. Serve immediately.
