MEDITERRANEAN STRATA WITH GOAT CHEESE
A staple for breakfast or brunch, stratas are comforting, warming, and satisfying. The egg-soaked bread and vegetables are topped with rich, creamy goat cheese, and then baked, creating a delicious mix of crispy edges and a tender interior. Here we've used red onion, cremini mushrooms, roasted red peppers, and sun-dried tomatoes to adds some additional oomph to this strata. The mushrooms and onion get sautéed in butter first to add an extra layer of flavor and remove some of the liquid so the strata doesn't get soggy. If you like, you can prepare the strata through Step 3 the night before, cover, and refrigerate. When you're ready to cook it, uncover the casserole dish, bring it to room temperature, and bake as directed.

- Preheat oven to 350°F.
- Melt butter in large nonstick skillet over medium heat. Add onion, mushrooms, salt, and black pepper; cook, stirring frequently, until water from mushrooms is released and evaporates and mushrooms begin to brown, 15−20 minutes. Remove skillet from heat; stir in Italian seasoning, roasted peppers, and tomatoes. Add bread cubes and toss gently to combine
- Spray 1½-quart casserole dish with nonstick spray. Spoon in bread mixture and sprinkle with goat cheese. Pour egg substitute over top.
- Bake, uncovered, until center is set, about 1 hour. Let stand 10 minutes; cut into 6 pieces and serve.

- Brush a 9" x 9" pan with oil. In a bowl, beat eggs, milk, Parmesan and 1/4 teaspoon each salt and black pepper. Add bread; toss until coated; ransfer to pan; let sit. Heat oven to 400°F. In a large nonstick pan, heat 2 tablespoons oil over medium-high heat. Sauté bell pepper, onion, thyme and remaining 1/2 teaspoon salt and 1⁄4 tsp black pepper until onion begins to brown, 10 minutes. Add bell pepper mixture to pan; spread evenly over bread mixture; dot with goat cheese. Bake until top is puffed and browned and center is firm, 25 minutes. Let rest 5 minutes. Garnish with thyme, if desired.
PROSCIUTTO AND GOAT CHEESE STRATA

- Line bottom of 13x9x2-inch glass baking dish completely with 1 layer of bread, cutting some slices to fit. Arrange half of prosciutto evenly over bread. Sprinkle half of goat cheese and half of provolone over. Sprinkle with half of green onions and half of basil. Top with second layer of bread. Layer remaining prosciutto, goat cheese, provolone, green onions, and basil atop bread. Cut remaining bread into 1/4-inch cubes. Sprinkle over top.
- Whisk eggs, milk, mustard, and salt in bowl. Season with pepper. Pour egg mixture over strata; press down on bread with spatula. Drizzle melted butter over strata. Cover and refrigerate overnight.
- Preheat oven to 350°F. Uncover strata and let stand at room temperature 30 minutes. Bake until center is set, about 1 hour. Remove from oven. Preheat broiler. Place strata under broiler until top is golden, about 30 seconds. Cut into large squares and serve.

- Preheat an oven to 350°F.
- Heat a large frying pan over medium heat. Remove the sausage from its casings, and cook the sausage thoroughly, crumbling it into small pieces. Drain the sausage on a paper towel and set aside. Pour off the remaining fat, then add the spinach to the pan and cook until wilted, about 2 minutes. Let cool, then squeeze the spinach so that excess liquid is removed.
- Place the butter in a 2-quart baking dish, and place in the oven to melt.
- In a large bowl, mix together the eggs, 2/3 of the goat cheese, sundried tomatoes, flour, salt and pepper. Add in the diced potatoes, spinach and sausage. Mix to combine.
- Carefully remove the dish with the melted butter from the oven, then pour the egg mixture into the dish. Crumble the remaining goat cheese over the top, then carefully place back in the oven.
- Bake the strata until the eggs are set in the middle, about 50-55 minutes. Let cool for 5 minutes before eating.

Recipe courtesy of my GF on the east coast and epicurious.com This will likely serve more than 6-9, depending on how large you cut the servings. Recipe can easily be halved in an 8x8 baking dish. Cooking time = bringing to room temperature before cooking & cooking time. Please note: The first time I made this, I sliced my bread thick and only had room in my baking dish for one layer, then I topped it with the cubed bread. It turned out beautifully. The 2nd time I made this, I had the bakery slice the bread and was able to fit 2 layers in the baking dish. I also topped the strata with Recipe #496356 and I have to say, that put this recipe over the top! Try it, you'll love it too.

- Preheat oven to 180 degC.
- Lightly butter 24cm pie plate.
- Place the semi dried tomatoes on a paper towel and pat to dry the oil off them.
- Cut them in half.
- Whisk milk and eggs and garlic together, add all the other ingredients except the bread and mix well.
- Add the bread and stir until moistened.
- Transfer the mixture to the prepared pie dish.
- Let it stand until the bread absorbs most of the custard, pressing several times to submerge the bred cubes, about 5 mins this takes.
- Bake uncovered until light brown and knife inserted into the centre comes out clean, about 20 minutes.
- Cut the strata into wedges.
- Serve with a salad of mesclun mix.
