Mozzarella and Fresh Fig Salad image

This sweet and savory salad makes a great appetizer or fancy side dish with grilled meat. You need to plan ahead, as the mozzarella needs to marinate for a couple of hours.

1 (8 ounce) package buffalo mozzarella, thinly sliced
2 tablespoons olive oil
1 lemon, juiced
1 pinch salt and freshly ground black pepper to taste
1 clove garlic, crushed
8 small fresh black figs, halved lengthwise
4 leaves fresh mint, finely chopped

Steps:

  • Combine mozzarella cheese, olive oil, lemon juice, garlic, salt, and pepper in a resealable plastic bag. Seal and refrigerate for 2 hours. Turn mozzarella a few times in the marinade.
  • Arrange mozzarella and figs on a serving plate and drizzle with marinade. Sprinkle fresh mint on top.

4 ripe figs
4 slices quality Parma ham or prosciutto
buffalo mozzarella cheese
1 bunch of fresh green or purple basil
extra virgin olive oil
1 lemon
1 tablespoon runny honey

Steps:

  • One thing I do is to criss-cross the figs but not quite to the bottom. Then, using your thumbs and forefingers, squeeze the base of the fig to expose the inside. At this point you'll think, 'Oooh, that looks nice, I think I'm quite clever ...' or at least I do. More importantly, it allows your dressing to get right into the middle of the fig. All these little things really help to make a salad special. Simply place the figs in a dish, weave around 1 slice of Parma ham or prosciutto per fig, throw in some slices of buffalo mozzarella and rip over some green or purple basil. Mix 6 tablespoons of oil, half the lemon juice, honey and some sea salt and freshly ground black pepper together in a bowl and drizzle everything with this dressing. As far as salads go, it's pretty damn sexy.

10 tablespoons balsamic vinegar (Aceto Balsamico di Modena IGP)20 mature figs2 pieces of fresh vegetarian mozzarella (or mozzarella di bufala)freshly ground black pepper

Steps:

  • Instructions Put the balsamic vinegar in a small saucepan. Boil until reduced by half, about two minutes. Allow to cool. Wash and dry the figs. Cut a cross in the top of each fig to about halfway down. Using your forefingers and thumbs, press on the outside of the fig so that it opens up at the top. Arrange five figs each on four serving plates in the shape of a cross. Cut the mozzarellas into quarters and then cut each quarter in half so that you have 16 pieces. 200g fine green bean , trimmed
6 small figs , quartered
1 shallot , thinly sliced
x ball mozzarella , drained and ripped into chunks
50g hazelnut , toasted and chopped
small handful basil leaves, torn
3 tbsp balsamic vinegar
1 tbsp fig jam or relish
3 tbsp extra-virgin olive oil

Steps:

  • In a large saucepan of salted water, blanch the beans for 2-3 mins. Drain, rinse in cold water, then drain on kitchen paper. Arrange on a platter. Top with the figs, shallots, mozzarella, hazelnuts and basil.
  • In a small bowl or jam jar with fitted lid, add the vinegar, fig jam, olive oil and some seasoning. Shake well and pour over salad just before serving.

3 cups cherry tomatoes (or your favorite tomatoes, sliced)
1 cup basil (fresh basil leaves)
2 Tablespoons basil pesto
1/4 cup balsamic syrup or balsamic vinegar
1/8 teaspoon salt (Kosher or sea salt)
1/3 cup Olive oil
3 cups bread (cut up into 1 inch chunks. Stale bread works best)
2 garlic cloves (minced)
1/4 teaspoon salt
1/4 teaspoon pepper
1 teaspoon oregano
1/2 teaspoon chili flakes
1/4 cup olive oil

Steps:

  • Start off by making the croutons. Preheat the oven to 375 degrees F.
  • Place the bread and all ingredients on a lined baking sheet and toss well.
  • Bake for 10-14 minutes until crisp and golden. Allow it to cool.
  • Make the dressing: combine all ingredients in a jar or medium bowl. Mix well.
  • Place the basil, mozzarella and tomatoes in a large bowl.
  • Add in as much or little of the homemade croutons as you like.
  • drizzle the dressing over the salad.
  • Serve and enjoy!
