Ingredients

SALAD:
1 pound rotini pasta
1 1/2 to 2 cups cooked, diced turkey breast (smoked is very good in this recipe)
1 cup dried cherries
1 medium yellow onion, diced
4 diced celery stalks, diced
1 cup whole toasted almonds
POPPYSEED DRESSING:
1/4 cup powdered sugar
2 tablespoons champagne vinegar
2 cups real mayonnaise
2 tablespoonds cold water
2 tablespoonds poppy seeds
2 teaspoons kosher salt
1/2 teaspoon black pepper

Steps:

Salad: Cook pasta according to package directions. Drain. Rinse in cold water. Chill. Combine pasta, turkey, dried cherries, onion, celery and almonds. Dressing: Combine powdered sugar and vinegar. Add mayo, water, poppy seeds, salt and pepper. Whisk to combine. Add to pasta mixture. Toss until pasta is coated with dressing. NOTE: May be refrigerated up to 3 days.

Dressing:
2 c. mayonnaise
2 T. Dijon mustard
1/4 c. powdered sugar
1 oz. champagne vinegar
1 oz. water
1/2 t. black pepper
1/2 t. poppy seeds
2 t. sea salt
Salad:
1 # rotelle pasta
1 T. olive oil
8 oz. sautéed/grilled chicken breasts, cut into bite size pieces (may use turkey)
3 oz. dried cherries (may use Craisins that have a cherry flavor)
1/2 c. yellow onion, medium diced
1/2 c. medium diced celery
1/2 c. slivered almonds

Steps:

Mix together all the ingredients for the dressing; set aside. Cook the pasta al dente, drain, toss in olive oil and cool completely. Combine pasta, chicken, cherries, celery, onion and ½ the almonds in a large bowl. Mix in dressing to desired consistency. Taste for salt and adjust if necessary. Transfer to a serving dish and top with the remaining almonds.

Ingredients

2 cups mayonnaise (I use light mayo)
2 tablespoons Dijon mustard
1/4 cup powdered sugar, to taste
2 tablespoons champagne vinegar (Can be hard to find. Try upscale grocer)
2 tablespoons water
1/2 teaspoon pepper
1/2 teaspoon poppy seed
1 -2 teaspoon salt (Original recipe calls for 2 t, but I found that to be a little too much for my taste.)
1 lb bow tie pasta
1 tablespoon olive oil
8 ounces cooked turkey, cubed (more may be used)
3 ounces dried cherries (may use 5)
1/2 cup diced yellow onion
1/2 cup diced celery
1/2 cup sliced almonds

Steps:

Cook pasta, drain,& toss in olive oil.
Cool.
Combine pasta, turkey, cherries, onion, celery,& ¼ c almonds.
Mix in dressing to desired consistency.
Top with other ¼ c almonds.
NOTE: I tried substituting dried cranberries with cherry flavoring, but the flavor is just not the same as the dried cherries!
