4 Jonagold Apples (or any other good cooking apple, such as Braeburn or Granny Smith)
2 tablespoons butter or margarine
4 tablespoons brown sugar

Steps:

  • Peel the apples and cut into quarters. Remove the cores and cut quarters into 1/2" thick slices. Place the slices in a bowl of cold lemon water to prevent browning. Soak for 5 or 10 minutes and then drain the apples and pat them dry with a paper towel. In a large skillet, heat the butter until it is bubbling. Add the apple slices to the skillet and continue to cook over medium high heat for approximately 5 minutes or until tender crisp and beginning to brown. Turn several times to brown evenly. Add the brown sugar and continue to cook until sugar has melted and started to caramelize. Apple slices should be tender. Serve as a side dish while still warm.

  • Melt the butter in a large skillet over medium heat.

Latkes are a labor of love and eagerly awaited by all during the holidays, but they are often incredibly time consuming as they are fried individually. With this large skillet latke you get all the flavor and crispiness in a fraction of the time.

Number Of Ingredients 12

2 large apples, each peeled, cored and cut into 8 wedges
3 tablespoons sugar
Kosher salt
2 tablespoons unsalted butter
2 pounds russet potatoes
1 small yellow onion
3 tablespoons matzo meal
1 large egg, lightly beaten
1/4 teaspoon baking powder
1/2 cup vegetable oil
1 tablespoon chopped fresh herbs, such as chives or parsley, for garnish
Sour cream, for serving

Steps:

  • Combine the apples, sugar and a pinch of salt in a medium bowl and toss to coat.
  • Melt the butter in a medium skillet over medium-high heat until just starting to brown around the edges. Add the apples and cook, stirring often, until they are a deep, dark golden color, about 8 minutes. Transfer to a plate and set aside.
  • Preheat a 10-inch nonstick skillet over medium heat. Set a wire rack inside a rimmed baking sheet.
  • Peel the potatoes and shred them in a food processor fitted with the shredding blade; transfer the shredded potatoes to a large colander as the food processor fills up. Press them firmly to remove any excess moisture, pat dry with paper towels and transfer to a large bowl.
  • Grate the onion in the food processor and stir into the potatoes along with the matzo meal, egg, baking powder and 2 teaspoons salt. Immediately move to cooking the potato mixture or it will purge too much water and not be crispy.
  • Add 1/4 cup of the oil to your preheated skillet and as soon as it shimmers add the potato mixture in handfuls, creating an even layer and leaving any excess moisture in the bowl. Cook until golden and crispy on the bottom, about 6 minutes. Slide the latke on to the wire rack.
  • Return the skillet to the heat and add the remaining 1/4 cup oil. Once it is shimmering cover the latke with a round platter or large pot lid and in one swift motion invert the rack with the latke cooked-side up onto your platter or lid. Carefully slide the latke back into the skillet and cook until golden and cooked through, about 5 minutes. Slide back on to the wire rack and let drain for a minute.
  • Transfer the latke to a serving platter, top with the sour cream, caramelized apples and sprinkle with the herbs.

2 Vidalia onions, sliced
2 Granny Smith apples, diced
2 pounds 80 percent lean ground beef
1 teaspoon salt
1 teaspoon black pepper
2 tablespoons chopped fresh thyme leaves
1/2 cup Dijon mustard
1 egg
1 cup seasoned bread crumbs
4 large crusty rolls, split
4 tablespoons mayonnaise
1 cup blue cheese

Steps:

  • Melt butter in skillet over medium-high heat. Add onions to hot pan and begin caramelizing, stirring occasionally. After 4 minutes or so, add apples to the onions and continue to cook until onions are golden brown, about 6 more minutes. Remove from heat when done.
  • While onions and apples are cooking, blend together in a large bowl the ground beef, salt, pepper, thyme, Dijon, egg, and bread crumbs. Be sure ingredients are well incorporated, but don't over work. Form mixture into 4 good-sized patties. (hint: If you create a concave burger, with the center thinner than the edges, when it cooks the burger won't swell up to look like a meatball, but will remain flat and patty-like)
  • Heat grill to medium-high heat.
  • Place burgers on grill and cook about 10 minutes per side, or until cooked through. As burgers are finishing (after the first flip), spread mayonnaise on both cut sides of each split roll. Place rolls on grill, mayonnaise side down, to toast for about 1 minute, or until golden.
  • Place each burger on the bottom half of a toasted roll. Top with about 1/4 cup of blue cheese, then with a generous scoop of the caramelized onion and apple mixture. Cover with the roll and serve.

10 medium-large firm apples, such as Cortland, Rome or Ida Red
Zest of 1 small lemon, grated
1 1/2 cups fresh apple cider
1 tablespoon vegetable oil
2 cups sugar
1 1/2 cups heavy cream
3 tablespoons crystalized ginger, cut into fine dice

Steps:

  • Preheat the oven to 375 degrees.
  • Wash and core to a half-inch of the bottoms of each apple. With a vegetable peeler, peel the tops and bottoms of each apple, leaving a band of skin approximately two inches wide. Place the apples one to two inches apart in a large baking dish. Sprinkle a little of the zest into the well of each apple. Add the cider to the dish and bake for 25 to 30 minutes or until tender but not mushy. Place the apples on a lightly oiled baking pan and allow to cool thoroughly.
  • When the apples have cooled, place one cup of sugar and a half cup cold water in a medium-size heavy saucepan over medium-high heat. Stir with a wooden spoon until the sugar has dissolved. When the sugar begins to turn golden, rotate the pan to even the color. When the caramel is light amber, using a wooden spoon, carefully coat each apple with the hot caramel. (Caramel burns quickly and must be watched carefully. It will continue to cook and become a darker amber as you are working with it.) Repeat the method with the remaining sugar, using a clean, cool, medium-size heavy saucepan.
  • Meanwhile, whip the cream into soft peaks and fold in the ginger and refrigerate until ready to serve the apples.
  • When ready to serve, pry the apples from the baking pans with a metal spatula and arrange them on a serving platter or serve on individual dessert plates, accompanied with the ginger cream.

2 stems fresh thyme
2 bay leaves
2 tablespoons butter
3 large white onions, peeled and sliced
Kosher salt and freshly ground black pepper to taste

Steps:

  • Heat half the olive oil in a large nonstick skillet over medium-high heat and add the apples and then one stem of thyme and one bay leaf. Cook, stirring occasionally, until the apples are golden brown but not mushy, 5 to 10 minutes. Remove from heat and throw away the thyme and bay leaf.
  • In another skillet over medium-high heat, add the remaining olive oil, the butter and the onions, then the remaining thyme and bay leaf. Season with salt and pepper. Reduce heat to medium low and cook, stirring frequently, until the onions are soft and golden brown, 20 to 30 minutes. Remove from heat and throw away the thyme and bay leaf.
  • To serve, warm the apples and onions over medium-high heat and spoon them around the pork chops on a warmed platter.
