2 cups sugar
2 teaspoons ground cinnamon
1 cup chopped macadamia nuts
1/2 cup grated coconut
3 eggs, beaten
1 cup vegetable oil
2 cups mashed ripe bananas
1 (8 ounce) can crushed pineapple, drained
3 teaspoons vanilla extract

Steps:

  • Preheat oven to 350°F.
  • In a large bowl, combine flour, salt, baking soda, sugar, and cinnamon.
  • In another bowl, combine remaining ingredients together, add to flour mixture, stirring just until dry ingredients are moistened.
  • Spoon batter into 2 greased and floured 8-1/2 x 4-1/2 x 3-inch loaf pans.
  • Bake for 1 hour and 10 minutes.
  • Remove from pans and let cool on wire racks.

We absolutely love this bread. My sister won't buy anything but. It's kinda expensive so when I came across this, I had to add it here so we (Mom, Chris, and I) could always have it and everyone else could enjoy it too. The first time I ever had it, it was with the Spinach Veggie dip...OMGOSH it was DEEEVINE! So...next time you don't wanna spend the money, whip it up yourself! It does take a while...but so worth it!

Number Of Ingredients 9

6 cups all-purpose flour, plus
1/2 cup flour
3 eggs
2 cups pineapple juice
3/4 cup sugar
1/2 teaspoon ginger
1 teaspoon vanilla
2 (1/4 ounce) envelopes yeast
1/2 cup butter (one stick) or 1/2 cup margarine, melted (one stick)

Steps:

  • Beat the eggs. Add the pineapple juice, sugar, ginger, vanilla, and butter.
  • Place 3 cups of flour in a large bowl. Stir in the egg mixture until well-combined. Sprinkle in the yeast, one packet at a time, and mix.
  • Add the remaining 3 cups of flour and mix in . Blending with a spoon will be hard, so you may have to use your hands. Make sure it is thoroughly combined. Cover the bowl with a cloth and set in a warm place to rise for 1 hour.
  • Remove from the bowl and knead in 1/2 cup flour. Knead about 10 times. Divide into three equal parts.
  • Place in greased and floured loaf pans or shape into rolls. Cover and place in a warm place to rise for 1 hour.
  • Bake at 350 degrees for 25-30 minutes or golden brown.

1 (8 ounce) can crushed pineapple in juice, drained and juice reserved
1/2 cup water
1/4 cup pineapple juice, that was reserved from the can
1 tablespoon butter, softened
4 cups bread flour
2/3 cup shredded coconut, toasted
1/2 cup pecan halves
1 tablespoon powdered milk
4 teaspoons brown sugar, packed
1 1/2 teaspoons salt
1 3/4 teaspoons yeast

Steps:

  • Measure carefully, placing all ingredients in bread machine in the order recommended by the manufacturer.
  • Select Sweet or Basic/White cycle. Use light or medium crust color. DO NOT USE DELAY CYCLE!
  • Remove baked bread from pan and cool on wire rack.

1/2 cup butter, softened
1 cup sugar
2 large eggs, room temperature
1 cup mashed ripe bananas (about 2 medium)
1/4 cup whole milk
1 tablespoon grated orange zest
1 teaspoon vanilla extract
1/2 teaspoon almond extract
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup sweetened shredded coconut
1/2 cup chopped nuts
1/2 cup crushed pineapple, drained

Steps:

  • Preheat oven to 350°. In a bowl, cream butter and sugar. Add eggs, one at a time, beating well after each addition. Beat in banana, milk, orange zest and extracts. , Combine flour, baking soda and salt; add to the creamed mixture just until moistened. Fold in coconut, nuts and pineapple. Transfer to a greased 9x5-in. loaf pan. , Bake 1 hour and 20 minutes or until a toothpick inserted in center comes out clean. Cool 10 minutes before removing from pan to a wire rack.

4 -4 1/2 cups all-purpose flour
1/3 cup sugar
1 teaspoon salt
1/2 ounce active dry yeast
1/2 cup warm water
1/2 cup warm milk
1/4 cup butter, softened
2 tablespoons honey
3 large eggs, divided

Steps:

  • Mix 1 1/2 cups flour, sugar, salt and yeast in a large bowl.
  • Add water, milk, butter, honey and 2 eggs. Mix very well, adding more flour if necessary, until a soft dough forms.
  • Knead dough on a lightly floured surface until it's smooth and stretchy, about 10 minutes.
  • Place dough in a greased bowl (I use the one I mixed everything in). Cover and let it rise in a warm place until it's doubled in size, about 1 hour.
  • Grease baking sheet. Punch down dough. Shape dough int oa ball. Place on baking sheet. Cover; let rise until doubled in size, 30-40 minutes.
  • Preheat oven to 350 degrees. Beat remaining egg in a small bowl until smooth.
  • Uncover the loaf and brush it with the egg. Bake the bread until golden, about 30 minutes.
  • Place on a wire reack to cool.

I love this recipe because it uses really ripe bananas that you can catch on sale so it saves money and because Splenda works well in it. I've never tried the other national brands of artificial sweeteners, so I can't comment on how they'll work. You can also make this with regular sugar. If you do, OMIT the honey. Macadamias are very expensive, but wonderful in this recipe. Pecans and walnuts work just as well. Use either or a mixture of the two for an extra kick. Try it for breakfast with a cup of hot tea or coffee. This recipe yields 2 good size loaves so you can enjoy one now and freeze the other or pass it along to a friend.

3/4 teaspoon salt

2 cups Splenda sugar substitute
1 teaspoon ground cinnamon
1 cup chopped nuts (macadamias are preferred)

1 cup canola oil or 1 cup olive oil
2 cups mashed ripe bananas
1 (8 ounce) can crushed pineapple, in its own juice, drained
2 teaspoons vanilla extract
2 tablespoons honey
bakers joy cooking spray (or extra flour and shortening)

Steps:

  • Your will need two (8 1/2x4 1/2x3) loaf pans.
  • Preheat oven to 350 degrees.
  • Spray two (8 1/2x4 1/2x3) loaf pans with Bakers Joy (or grease and flour) and set aside.
  • In a medium bowl, combine the first 5 ingredients and stir with a wire wh.isk to blend well.
  • Stir in nuts to combine and set aside.
  • In another bowl, combine the eggs, oil, mashed bananas, pineapple, vanilla and honey (if you're using Splenda) Stir lightly just to mix.
  • Add the wet ingredients to the dry and mix only enough to moisten the dry.
  • DO NOT overmix or your bread will be tough and heavy.
  • Its ok to have some lumps.
  • Spoon the dough into the two pans,making sure to divide it equally between the two.
  • Bake for about 1 hour to 1 hour 10 minutes.
  • A good rule of thumb is to check after about 50 minutes.
  • Insert a toothpick or bamboo skewer into the center to test for doneness.
  • This bread will crack--don't worry.
  • Once done, remove to wire racks and cool for about 10-12 minutes in pans.
  • Turn the bread out carefully onto the racks.
  • Allow it to sit for about 15 minutes upside down, then carefully turn right side up to finish cooling.
  • As with any bread, slice with a serrated knife and enjoy.
  • Just a note--if you use Splenda or any artificial sweetener, the shelf life will be shorter and texture may not be the same than if you had used real sugar.

One package .25 oz / 7 g active dry yeast
1/4 cup / 60 ml warm water
2 eggs
1/2 cup / 120 ml pineapple juice
1/4 cup / 60 ml water
1/3 cup / 75 g white sugar
1/2 tsp vanilla extract
1/4 cup / 55 g butter, melted
4 Cups / 500 g all-purpose flour
1/4 Teaspoon Salt (add it to the flour)

Steps:

  • 1. In small bowl dissolve yeast in 1/4 cup warm water, not so hot you can't touch it, just tepid warm, cover and leave for about 10 minutes. 2. In a stand mixer, beat the yeast mixture,eggs, pineapple juice, 1/4 cup water, sugar, vanilla, and melted butter. When all combined, gradually stir in salt & flour until a stiff batter like dough is formed. *** If your dough is too wet, don't be afraid to add more flour, a tablespoon at a time until it is dry enough to handle. It should come away from the mixing bowl in a 'ball' after kneading. Knead for 10 minutes using the dough hook, or by hand if you don't have a stand mixer. (again, use more flour if kneading by hand so it is not too sticky wet to handle) Watch the short video at the end of this recipe for kneading by hand. After 1 hour of rising 3. Cover with a clean cloth and place somewhere warm to let rise for 1 hour. 4. Punch the air out of the dough and turn it onto a well floured surface. 5. Divide into 2 equal pieces and then divide each of those two pieces into 8, so in total you get 16 pieces Use 2 x 9 inch baking pans, and grease and flour the pans. 6. Especially in the centre. If it sounds hollow, they're done. If not, return to the oven for another 5 - 10 minutes. Every oven is different but now you know the trick to see if they're done!

2 teaspoon(s) baking powder

2/3 cup(s) packed brown sugar

1 cup(s) mashed ripe banana
1/2 cup(s) chopped macadamia nuts or walnuts

Steps:

  • Drain maraschio cherries, reserving 2 tablespoons juice. Cut cherries into quarters; set aside. Combine flour, baking powder and salt in small bowl; set aside. In medium bowl, combine brown sugar, butter, eggs and reserved cherry juice; mix at medium speed of electric mixer until ingredients are thoroughly combined. Add flour mixture alternately with mashed bananas, beginning and ending with flour mixture. Stir in cherries and nuts. Lightly spray 9X5X3-inch loaf pan with nonstick cooking spray.
