6 large ripe peaches, peeled and sliced (about 6 cups)
2 tablespoons light brown sugar

TOPPING:
1 cup all-purpose flour
3/4 cup packed light brown sugar
1-1/2 teaspoons baking powder
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/8 teaspoon salt
1 cup old-fashioned oats
6 tablespoons cold butter, cubed
Whipped cream, optional

Steps:

  • Grease a 6-qt. oval slow cooker with 1 tablespoon softened butter. Toss peaches with brown sugar, lemon juice, vanilla and, if desired, rum; spread evenly in slow cooker., Whisk together first 6 topping ingredients; stir in oats. Cut in butter until crumbly; sprinkle over peaches. Cook, covered, on low until peaches are tender, 3-4 hours. If desired, serve with whipped cream.

Steps:

  • Combine the sugar, oats, flour, baking powder, allspice, nutmeg and kosher salt in a large bowl. Add the butter and work into the dry ingredients until a crumbly texture is formed. Fold in the peach slices.
  • Butter the bottom and sides of a 3-quart cooker. Add the mixture to the slow cooker and cook on low for 3 to 3 1/2 hours. Serve immediately.

2 tsp vanilla extract
1 1/2 tsp ground cinnamon
3 Tbsp cornstarch
1/2 cup salted butter (melted)

1 large egg
1 15.25 oz box yellow, butter or vanilla flavored cake mix

Steps:

  • Spray the crock of a 6 quart oval crockpot or similar with cooking spray.
  • Pour 2 cans of peaches with syrup, and peaches only from the 3rd can, into the bottom of the slow cooker. Add vanilla and cinnamon.
  • Dissolve cornstarch in just enough of reserved syrup (from 3rd can) to make it smooth. Pour into crock, gently stir to combine.
  • In a medium-size mixing bowl, whisk together butter, milk and egg. Add cake mix fluffing with a fork until fully moistened. Dollop evenly over peaches. They don't have to be completely covered. Leave a 1/2 inch border along the outer edge to allow for expansion.
  • Place doubled paper towels over opening of slow cooker, then place lid firmly on top.
  • Bake on high for 2 1/2 - 3 hours. Uncover and check center of cake for doneness at 2 hours with a toothpick or cake tester looking for a clean toothpick. If it needs additional time, replace paper towel and cover.

3 - 29 ounce cans sliced peaches in heavy syrup
2/3 cup granulated sugar
2 teaspoons cinnamon
2 tablespoons cornstarch
1/2 cup butter, melted
additional sugar and cinnamon to sprinkle on each layer

Steps:

  • Drain the peaches, reserving the juice.
  • Place peach juice, 2/3 cup sugar, 2 teaspoons cinnamon and cornstarch in a medium saucepan.
  • Whisk together.
  • Heat until bubbly.
  • Add peaches, stir and set off of heat.
  • Break the first roll of frozen dough in half, place in a food processor fitted with the grater attachment.
  • Shred one pie crust.
  • Add half of the peaches to a 4 to 5 quart slow cooker.
  • Top with grated pie crust.
  • Sprinkle with sugar and cinnamon.
  • Drizzle on half of the melted butter.
  • Add remaining peaches.
  • Shred the second frozen pie crust and add it to the top of the second layer of peaches.
  • Sprinkle with more sugar and cinnamon.
  • Drizzle the remaining melted butter.

1 tsp baking powder
Pinch fine salt
4 Tbsp cold unsalted butter, cut into small pieces
¾ cup milk
¼ - ½ tsp almond extract, optional
¼ tsp ground cinnamon

½ cup heavy cream
¼ cup sour cream
2 Tbsp confectioners' sugar

Steps:
