This simple, versatile dressing works well with green salads, but is also wonderful on hot & cold veggie dishes. You could even use it as a marinade to add a subtle little punch of flavor!

1 lemon, zest of
1 lemon, juice of
1 pinch rosemary
ground black pepper
1 whole bay leaf
1/2 tablespoon sugar
2 tablespoons white vinegar
2 tablespoons soy sauce
2 tablespoons olive oil

Steps:

  • In a small bowl, combine lemon juice, rosemary, pepper, and bay leaf.
  • Microwave for 1 minute.
  • Remove and discard bay leaf from lemon juice.
  • Pour juice into a small glass jar, or your favorite dressing cruet.
  • Add vinegar, sugar, soy sauce, and oil.
  • Shake thoroughly to blend all of the ingredients.
  • Don't forget to shake well before serving!

MARINARA SAUCE

Number Of Ingredients 9

1/4 cup extra-virgin olive oil
1 small onion, finely chopped
1 garlic clove, finely chopped
1 celery stalk, finely chopped
1 carrots, peeled and finely chopped
1/2 teaspoon sea salt
1/2 teaspoon freshly ground black pepper
1 (32-ounce) cans crushed tomatoes
1 dried bay leaves

Steps:

  • In a large pot, heat the oil over a medium-high flame. Add the onions and garlic and saute until the onions are translucent, about 10 minutes. Add the celery, carrots, and 1/2 teaspoon each of salt and pepper. Saute until all the vegetables are soft, about 10 minutes. Add the tomatoes and bay leaves, and simmer uncovered over low heat until the sauce thickens, about 1 hour. Remove and discard the bay leaves. Season the sauce with more salt and pepper, to taste.
  • (The sauce can be made 1 day ahead. Cool, then cover and refrigerate. Rewarm over medium heat before using.)

MARINARA SAUCE

Olive oil
3 to 4 whole cloves garlic, minced
1 whole small to medium onion, chopped
1/2 cup white wine (or chicken broth)
Three 15-ounce cans crushed tomatoes
Salt and ground pepper
Pinch sugar
Fresh parsley leaves
Fresh basil leaves

Steps:

  • Add a tablespoon or so of olive oil into a hot pan over medium-high heat and throw in the garlic and chopped onions and give them a stir.
  • Now add the wine (or chicken broth), whisking to deglaze the bottom of the skillet. Cook until the liquid reduces by half.
  • Add the crushed tomatoes and stir to combine. Add salt and pepper to taste and a pinch of sugar. Reduce the heat to low and simmer for 30 minutes.
  • Toward the end of the cooking process, chop up your fresh parsley and basil and add it to the sauce to taste, stirring to combine.

WASABI-SOY VINAIGRETTE



Wasabi-Soy Vinaigrette image

This all-purpose salad vinaigrette is reminiscent of the wasabi-tinged soy sauce you might have with a California roll. Soy sauce, rice vinegar and sesame oil waltz in time, while the wasabi paste adds nose-clearing excitement. As with any recipe, feel free to adjust the ingredient amounts to your taste preferences, especially the wasabi, which can be scaled down or up. Be sure to shake if it's been sitting in the fridge, as it wants to separate.

2 large garlic cloves, finely grated
2 tablespoons granulated sugar
2 tablespoons soy sauce
2 tablespoons rice vinegar
1 tablespoon toasted sesame oil
1 1/2 teaspoons wasabi paste, plus more to taste

Steps:

  • In a small liquid measuring cup or a glass jar with a tight-fitting lid, combine 1/4 cup water, the garlic, sugar, soy sauce, rice vinegar, sesame oil and wasabi paste. Whisk to combine, or, if using a jar, seal tightly and shake vigorously until emulsified. Taste and add more wasabi if you like; the wasabi flavor will intensify as the vinaigrette sits.
  • Use immediately or refrigerate in an airtight container for up to 1 week. This tastes great with any green salad, of course, but also with raw, crunchy vegetables, like cucumbers, sugar snap peas and thinly sliced asparagus.

When my husband was diagnoised with pancreatitis, we had to switched to a very low fat diet. We began eating alot more baked and grilled fish. This recipe is my favorite marinade for any type of light, white fish.

1/4 cup(s) soy saue
1 teaspoon(s) sugar
1/4 teaspoon(s) sea salt
1/4 cup(s) olive oil

Steps:

  • In a small bowl combine minced garlic and next 4 ingredients. Slowly whisk in olive oil until emulsified. Store in an airtight container 1-2 days. Remove from refrigerator and wish briskly to re-emulsify. Pour over (for oven bakeing) or brush over continuously (for outdoor grilling). I prefer to bake my fish using this recipe.
