You won't use all of the marinade for this sandwich, so add more tofu to it for another meal.

1 1/2 teaspoons sesame oil
2 tablespoons soy sauce, preferably low-sodium
1 tablespoon mirin
1 1/2 teaspoons rice vinegar
2 teaspoons minced or grated fresh ginger
1/2 teaspoon sugar
3 ounces tofu, sliced 3/4 inch thick
1 small tomato, preferably a plum tomato that isn't too juicy, sliced
1/2 small (3-ounce) avocado, sliced
A handful of salad greens, such as wild arugula
2 slices whole-grain bread
1 teaspoon Dijon mustard
1 tablespoon mayonnaise
1/2 teaspoon wasabi paste or oil

Steps:

  • Wrap the slices of tofu in a clean dish towel. Place on a cutting board and set another cutting board on top. Place a can of tomatoes or the equivalent on top of the cutting board to weigh down the board. Leave 20 minutes.
  • Mix together the sesame oil, soy sauce, mirin, rice vinegar, ginger and sugar in a wide bowl. Set the pressed tofu in the mixture, turn the slices over and leave to marinate 30 minutes.
  • Remove the tofu from the marinade, and pat dry with a paper towel.
  • Spread one piece of bread with mustard, and top with a mound of salad greens. Lay the tofu slices over the greens in a single layer. Lay the tomato slices over the tofu in a single layer. Top the tomatoes with the avocado slices. Stir together the mayonnaise and wasabi, and spread over the remaining piece of bread. Top the sandwich, press down firmly, cut in half and serve. Alternately, wrap in plastic, refrigerate and serve later.

After a quick fry, the crispy patty is ready to get stacked on a bun with shredded lettuce, dill pickles and a fast and delicious vegan Buffalo mayo. The key here is freezing the tofu overnight, which creates a sturdy sponge-like structure that's ready to soak up tons of flavor. One 14- to 16-ounce package extra-firm tofu
1 cup dill pickle juice (from a 16-ounce jar)
1 teaspoon chili powder
1 teaspoon smoked paprika
1 teaspoon sugar
Kosher salt
1 cup all-purpose flour
2 tablespoons cornstarch
1/2 teaspoon baking powder
1/2 teaspoon chili powder
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon dried oregano
1/2 teaspoon smoked paprika
Kosher salt and freshly ground black pepper
1/4 cup Dijon mustard
1/4 cup maple syrup or agave
Vegetable oil, for frying
4 burger buns
Vegan Buffalo Mayo, recipe follows
Shredded lettuce and dill pickles, for serving
One 12-ounce package silken tofu
2 tablespoons buffalo hot sauce
2 teaspoons Dijon mustard
Juice of 1 lemon
Kosher salt

Steps:

  • For the tofu: Slice the tofu in half widthwise and then across to create 4 large pieces. Arrange the pieces in a large microwave-safe airtight container (some overlap is ok) and freeze overnight.
  • Remove the lid from the container and microwave the tofu on high, stopping every 2 minutes to pour off the water and check if the tofu is thawed, about 6 minutes,. Transfer the tofu to a strainer while making the brine.
  • Whisk the pickle juice, chili powder, smoked paprika, sugar, and 1 teaspoon salt in the same airtight container. Gently press the tofu pieces between your palms to expel any excess water, then nestle in the brine in an even layer. Cover and marinate the tofu in the refrigerator for at least 1 hour or up to 8 hours.
  • For the sandwich: Whisk the flour, cornstarch, baking powder, chili powder, garlic powder, onion powder, dried oregano, smoked paprika, and 1/2 teaspoon each salt and pepper together in a medium bowl. Stir in 1 to 2 tablespoons of the pickle brine to create clumps. Whisk the Dijon and maple syrup plus 2 tablespoons of warm water together in a separate small shallow bowl.
  • Pour 2 inches of oil into a large high-sided skillet or a Dutch oven and set over medium heat until the oil reaches 350 degrees F.
  • While the oil is heating, dredge the tofu. Remove one piece from the brine and toss in the flour mixture to coat, shaking off the excess. Dip in the Dijon mixture, making sure all sides are coated, then dredge in the flour again, pressing to adhere the flour. Transfer the coated tofu to a plate while coating the rest.
  • Add all four pieces of tofu to the hot oil, leaving space between each piece. (Fry in batches if the skillet is getting crowded.) Fry until the coating is a deep golden brown, flipping the tofu halfway, about 5 minutes. Transfer the fried tofu to paper towels or a baking sheet lined with a wire rack to drain.
  • Spread some Vegan Buffalo Mayo on the burger buns, add a piece of tofu to each and layer with some lettuce and dill pickles.
  • Add the tofu, hot sauce, Dijon, lemon juice and 1 teaspoon salt to a blender or food processor. Blend on high, stopping to scrape the sides as needed, until the mixture is smooth, 3 to 5 minutes. Transfer to a pint jar or airtight container and refrigerate for up to 2 weeks.

1/4 cup low-sodium soy sauce
1 teaspoon Asian sesame oil
1 1/2 teaspoons packed dark brown sugar
1 1/2 teaspoons finely grated peeled fresh ginger
1 small garlic clove, minced
1/4 teaspoon Tabasco or dried hot red pepper flakes
1 tablespoon plus 1 teaspoon vegetable oil
2 (5-ounce) bags Asian greens or baby spinach

Steps:

  • Cut tofu crosswise into 6 slices. Arrange in 1 layer on a triple layer of paper towels and top with another triple layer of towels. Weight with a shallow baking pan or baking sheet and let stand 2 minutes. Repeat weighting with dry paper towels 2 more times.
  • Stir together soy sauce, sesame oil, brown sugar, ginger, garlic, Tabasco, and 1 tablespoon vegetable oil in a glass pie plate. Add tofu slices in 1 layer and marinate, turning over every couple of minutes, 8 minutes total.
  • Heat a lightly oiled well-seasoned ridged grill pan over moderately high heat until hot but not smoking. Lift tofu from marinade with a slotted spatula (reserve marinade) and grill, turning over once carefully with spatula, until grill marks appear and tofu is heated through, 4 to 6 minutes total.
  • While tofu grills, heat remaining teaspoon vegetable oil in a 12-inch skillet over moderately high heat until hot but not smoking, then sauté greens, tossing with tongs, until beginning to wilt. Add reserved marinade and sauté, tossing, until greens are just wilted, about 1 minute. Lift greens from skillet with tongs, letting excess marinade drip off, and divide between 2 plates.
  • Serve greens with tofu slices.

My friend Judy Ornstein has a popular neighborhood cafe on Pico Boulevard in Los Angeles called FOOD. I love all of the meals I've had there, but my absolute favorite signature dish that they make is a cilantro tofu sandwich. The tofu is dipped in a delicious cilantro-spiked marinade, briefly baked, then topped with a to-die-for roasted corn relish. Alayne Berman, FOOD's chef, shared the recipe with me. I've scaled the recipe down from 10 pounds of tofu to 1 pound, which will make four sandwiches. They are hearty, and I usually make a meal of half a sandwich, but the nutritional information is for a whole one.

A 1-pound block of organic extra-firm tofu (find one that is not too dry)
3 tablespoons soy sauce, preferably tamari
1/2 tablespoon minced ginger
1 garlic clove, minced
1/2 tablespoon minced shallot
1/4 teaspoon minced jalapeño
1/4 teaspoon cumin seeds, lightly toasted and ground
1 1/2 tablespoons honey
2 1/4 teaspoons lime juice
1/2 teaspoon lime zest
3 tablespoons canola oil
1/2 generous bunch cilantro, finely chopped
1 large ear white corn
1/4 large red bell pepper, roasted
1/4 large yellow bell pepper, roasted
1/4 generous bunch cilantro, finely chopped
Pinch of cumin seeds, lightly toasted and ground
Salt and freshly ground pepper to taste
1 4-ounce slice of tofu
1/4 large or 1/2 small Hass avocado, thinly sliced
1/2 to 3/4 cup corn relish
Sliced heirloom or good roma tomatoes, in season only
2 slices seeded sandwich bread
2 teaspoons Vegenaise
Arugula

Steps:

  • Heat the oven to 375 degrees. Pat the tofu dry with paper towels and cut laterally into 4 equal squares, approximately 1/3 inch wide. They should be just the right size for the sandwich bread.
  • Line a sheet pan with parchment. In a large, wide bowl, whisk together all of the ingredients for the marinade. Pat each square of tofu with paper towels, then dip into the marinade, making sure to coat both sides. Transfer to the baking sheet.
  • Bake the tofu for 7 to 10 minutes, until the edges are just beginning to color and the marinade sets on the surface of the tofu. Remove from the oven and allow to cool.
  • Meanwhile, make the corn relish. Grill the corn until it colors lightly, and allow to cool. Remove the kernels from the cob. Peel, seed and dice the roasted peppers. Combine peppers, corn and remaining relish ingredients in a medium bowl. Salt and pepper to taste.
  • For each sandwich, spread a thin coating of Vegenaise on each slice of bread. Top the bottom slice with a piece of baked marinated tofu. Fan thin slices of avocado over the tofu (the avocado helps the relish adhere to the sandwich). Top the avocado with 1/2 to 3/4 cup relish. Top the relish with slices of heirloom or good roma tomatoes and a handful of arugula. Top with the second slice of bread.

ASIAN STYLE SAVORY BAKED TOFU

This was absolutely delicious! It will make a tofu lover out of you yet (I hope!). I let my tofu sit overnight in the marinade, and then baked it, and I thought it turned out great. As I describe below, be sure to really "press" the excess liquid out of your tofu to ensure that it absorbs the marinade. Don't be afraid to put something really heavy on it to draw out the moisture. 2 tablespoons dark sesame oil

Steps:

  • For best results, tofu should be "pressed" in order to remove excess liquid and absorb the flavors of the marinade.
  • Press tofu block between two plates, weighted down with a cast iron pan, large bowl of water, or heavy cans, for about 30 minutes.
  • Halfway through, you may dump the plate of water and flip the tofu block.
  • To make marinade, simply whisk together the ingredients in a bowl.
  • After tofu is pressed, cut the block into small cubes or triangles.
  • Place pieces of tofu into baking dish, and cover with the marinade.
  • The tofu can sit overnight in the marinade, or can be prepared right away.
  • Preheat oven to 375 degrees.
  • Bake tofu about 35-45 minutes, or until all the liquid is absorbed.
  • Tofu can be eaten by itself, or added to stir-frys, salads, soups or sandwiches.

The idea for this comes from a great restaurant I worked at. Tofu is cooked in a great marinade and served in a sandwich with cheddar. For me, it's comfort food.

1 tablespoon olive oil
1 teaspoon soy sauce
2 garlic cloves, crushed
1/2 lime, juice of
1 tablespoon honey
3 slices firm tofu
2 slices whole wheat bread
2 slices cheddar cheese
2 teaspoons mayonnaise
1 teaspoon mustard
lettuce (optional)
fresh basil (optional)
onion (optional)

Steps:

  • To make the marinade, combine the oil, soy sauce, garlic, lime juice (lemon juice can also be used), and honey. Mix it with a fork until combined.
  • Place the tofu in the marinade until ready to cook (this can be a few minutes or a few hours, it doesn't really matter).
  • Cook the tofu in a pan with a little of the marinade, no oil is necessary as it is already in the marinade. Cook till golden brown (or to your liking).
  • While the tofu is cooking, lightly toast the bread. Then spread the mayonnaise on one slice and the mustard on the other.
  • When the tofu is cooked, place it on one slice of bread, put the cheddar on top, and place it bread-side down in the pan. Place the lid on the pan to let the cheese melt.
  • When the cheese has melted, remove the sandwich, place any veggies on top of the cheese, and place the last piece of bread on top.
  • Serve warm!
