My family loves the salsa from Carlos O'Kelly's. This is as close as I can come and it is delicious! You can add anything to this salsa, we've added different peppers or more garlic. It's always good.

4 large tomatoes, quartered and grated
4 scallions (green onions), chopped
1 clove garlic, pressed
2 slices canned jalapeno pepper, finely chopped
½ lime, juiced
2 tablespoons chopped fresh cilantro, or to taste
¼ teaspoon onion salt
salt to taste

Steps:

  • Mix tomatoes, scallions, garlic, and jalapeno pepper together in a bowl. Drizzle lime juice over mixture and add cilantro, onion salt, and salt; mix well.

This addictive salsa is restaurant quality, or maybe even better! It's fresh and flavorful, not too spicy, and easy to make in a food processor with a mix of ripe and canned Roma tomatoes. This makes a big batch which is good because it will go fast. Serve with lots of thin, crispy tortilla chips and a margarita, of course!

1 (28 ounce) can Roma tomatoes, drained
4 small Roma tomatoes, quartered
1 cup chopped white onion
1 clove garlic, smashed
1 small bunch fresh cilantro, stems removed
1 serrano pepper, seeded and chopped
1 medium jalapeno pepper, seeded and chopped
1 tablespoon freshly squeezed lime juice
1 ½ teaspoons kosher salt
¼ teaspoon ground cumin

Steps:

  • Combine canned and fresh tomatoes, onion, and garlic in a food processor; pulse 5 times to chop. Add cilantro, serrano and jalapeno peppers, lime juice, salt, and cumin and process for 10 seconds. Pulse further to desired consistency. Check and adjust seasoning as desired.

1/4 to 1/2 cup sliced scallions or to taste
1 to 2 cloves minced garlic

Red wine vinegar to taste
Salt

Steps:

  • Combine all of the ingredients and season to taste with salt. Transfer to a jar. Will keep in the fridge for a week.

Every summer(and winter too) my co-worker ask for me to bring this in for a snack. A friend of mine once took it to the local Farmers Market as a way of selling her produce. One man offered to buy the whole gallon container just to take home!

8 -10 large tomatoes (home-grown the best, but store bought in a crunch o.k.)
1 large onion
jalapeno pepper (to taste for desired hotness)
chopped fresh cilantro (to taste)
chopped garlic
cumin
green pepper
salt, to taste if desired

Steps:

  • Chop all vegetables.
  • If you like hot leave a few seeds of jalepeno.
  • Sprinkle with cumin and salt to taste.
  • I have also used this same recipe and cooked all ingredients down.
  • Canned in sterile jars and processed according to directions.
  • This is good to add to the homemade chile in the winter!
  • You will never go back to store canned tomatoes again!

Seen this on the PBS show Test Kitchen. Tried it and it was great! From TK website: "Heat varies from jalapeño to jalapeño, and because much of the heat resides in the seeds, we suggest mincing the seeds separately from the flesh, then adding minced seeds to taste. The amount of sugar and lime juice to use depends on the ripeness of the tomatoes. The salsa can be made 2 to 3 hours in advance, but hold off adding the salt, lime juice, and sugar until just before serving. The salsa is perfect for tortilla chips, but it's also a nice accompaniment to grilled steaks, chicken, and fish. Makes about 3 cups.

1/2 cup red onion, minced

1 1/2 pounds plum tomatoes (6 to 8), cored, halved, and seeded
1/2 medium red onion, minced (1/2 cup)
1 jalapeno or serrano chile (ribs and seeds removed for less heat, if desired), minced
1 small garlic clove, minced
1/2 cup chopped fresh cilantro
2 tablespoons freshly squeezed lime juice
Coarse salt
Tortilla chips, for serving (optional)

Steps:

  • Chop tomatoes into 1/4-inch pieces; transfer to a medium bowl. Add onion, chile, garlic, cilantro, and lime juice; season generously with salt. Mix to combine. Let stand 15 minutes to develop flavor. Salsa can be kept at room temperature up to 2 hours. Serve with tortilla chips, if desired.
