BULL'S EYE PEANUT BUTTER CANDY
These are just like little peanut butter cup balls. There is a bare circle on the top where the peanut butter shows through and this is the bull's eye (I guess). You could dip the whole thing and have just a chocolate covered ball. Anyway, they are delicious and they make a lot.

Steps:
- Mix the peanut butter mixture together well.
- Form into small balls and put in refrigerator over night.
- When ready to dip, use a double boiler and melt the wax, chocolate bits, and the squares of chocolate together.
- Using a toothpick (I sometimes use a fork so I don't have to get rid of the toothpick hole), insert it into the middle of the ball and dip in the chocolate mixture about 7/8 of the way, leaving a small eye at the top.
- Put on wax paper to cool.
BUCKEYES
Who doesn't love a confection inspired by nature? In this case, it's a peanut butter truffle dipped in chocolate, which resembles the nut from Ohio's state tree, the buckeye.

- Line a baking sheet with parchment. Beat the confectioners' sugar, peanut butter, butter, vanilla and salt with an electric mixer in a medium bowl until well combined. Scoop 2-teaspoonful mounds, and roll into balls; arrange them on the prepared baking sheet. Refrigerate until firm, about 20 minutes.
- Microwave the chocolate and shortening in a microwave-safe medium bowl in 30-second increments, stirring in between, until the mixture is completely melted and smooth, about 2 minutes.
- Stick a toothpick or skewer into the top center of a peanut butter ball. Dip the ball into the melted chocolate, leaving a circle of peanut butter visible on top. Let the excess chocolate drip off, then return the buckeye to the baking sheet. Repeat with the remaining peanut butter balls and chocolate.
- Chill the buckeyes until firm, about 30 minutes. Smooth out the hole left by the toothpick with an offset spatula. Serve at room temperature or well chilled. Refrigerate in an airtight container for up to 5 days.
PEANUT BUTTER EYEBALLS
Peanut Butter Eyeballs are a holiday variation of a popular candy called Buckeyes. These nutty treats are dunked white chocolate and then decorated to look like bloodshot eyes. - In the bowl of a large mixer, blend peanut butter and butter until creamy.
- Add powdered sugar and vanilla to peanut butter mixture and continue beating until it looks smooth.
- Cover a cookie sheet with aluminum foil or waxed paper.
- Using a spoon, scoop out balls of peanut butter and roll between your palms to get them as round as possible. Place on the cookie sheet and freeze for at least 30 minutes.
- Place the white chocolate coating in a microwave-safe bowl and microwave until melted. Stir thoroughly until it is smooth.
- Dip the peanut butter balls into the white chocolate coating. You can use two forks to balance the candy on, or just grasp it in your fingers and roll it around until it is covered completely. Return it to the cookie sheet and proceed to dip the rest of the peanut butter balls.
- While the chocolate is still wet, press an M&M candy in the center for the iris.
- Return the eyes to the refrigerator to harden.
- Once the eyeballs are firm, you can use the red decorator frosting to make squiggly blood vessels.
- Variation: Another option is to take a few drops of red candy coloring and drop them into the melted white chocolate. Use a fork to mix the chocolate around a bit, but don't stir too much: you want blood-red swirls, not pink chocolate! You can then dip your candies straight into your bloody mixture and skip step #9.

I made these a couple of weeks ago for my grand kids and they loved them. I have dinner for them on Thursday Nights. They are all grown but still love to come to grand kid night. - 1. In a large mixing bowl, add the cake mix, an egg and the oil. Beat with mixer until you have a nice crumbed mixture. Divide crumbs in half
- 2. In a 9x13 inch pan, press half of the mixture into the bottom, pressing well. On the top of the pressed crumbs, sprinkle half of the bag of chocolate chip chips and half of the nuts. In another bowl, mix condensed mix with the peanut butter. It will become very thick. This needs to be pressed over the nuts and chips. I had to butter my hands to spread it evenly. Spread the rest of the crumbs on top of mixture pressing well. Put in the oven for 25 to 30 minutes.
- 3. Melt the frosting in the microwave on high for one minute. Stir until pourable. Pour over the top of the baked dessert. Sprinkle the other half of the nuts and chocolate chips. Refrigerate after it cools. This is pretty hard to cut. It's almost like a candybar after it has set. So yummy. You can also substitute the chocolate chips for peanut butter chips.
PEANUT BUTTER CANDY

- Butter an 8x8x2 inch square pan. Set aside.
- In a 2 quart saucepan with a candy thermometer inserted, cook sugar, light corn syrup, milk, and salt, until thermometer reads 234 degrees F (112 degrees C). Remove from heat and stir in vanilla and peanut butter.
- Put peanut butter mixture in a large mixing bowl and beat until mixture begins to thicken. Pour into prepared pan. Chill until completely cooled. Cut into squares.

- Line a baking sheet with waxed paper; set aside.
- In a medium bowl, mix peanut butter, butter, vanilla, and confectioners' sugar with hands to form a smooth stiff dough. Shape into balls using 2 teaspoons of dough for each ball. Place on prepared pan, and refrigerate.
- Melt shortening and chocolate together in a metal bowl over a pan of lightly simmering water. Stir occasionally until smooth, and remove from heat.
- Remove balls from refrigerator. Insert a wooden toothpick into a ball, and dip into melted chocolate. Return to wax paper, chocolate side down, and remove toothpick. Repeat with remaining balls. Refrigerate for 30 minutes to set.
