TOMATILLO VERDE ENCHILADA CASSEROLE
A fast take on traditional enchiladas, this spicy casserole is easy to pull together and makes plenty for leftovers. Also, healthy ingredients can be substituted (especially if you're like me and have to make due with items in your fridge or pantry when you forget to pick-up the sour cream at the store). Can also be made ahead and reheated when desired.

Steps:
- Preheat over to 350 degrees.
- -Unpeel the tomatillos and rinse them in the sink. Cut them into quarters and throw them into a food processor (a blender can also be used).
- -Add the sliced jalapeno, garlic, as well as the squeezed lime and cilantro.
- -Add a few pinches of fresh ground salt and pepper and run food processor until all ingredients are blended together.
- -Pour mixture into a sauce pan over low heat. Let simmer for 10 minutes to bring out the taste in the tomatillos. They should slowly change from a bright green to paler shade.
- As the verde is simmering, you can start to get the rest of your ingredients ready for the casserole.
- -Cut up your cooked chicken breast and put it into your food processor. Course a few times until the chicken is shredded. Should yield just over a cup. Put into a bowl and put to the side.
- -Grate the jalapeno jack. Pending on your taste, a 1/2 cup - cup will do. Put into another bowl and to the side.
- I prefer a round pie dish, though a rectangular casserole dish can be substituted, as well.
- -Spray your dish with a non-stick spray and in the bottom, line with 3 corn tortillas and try to cover as much as the dish as possible though there will be overlap, as well as uncovered corners.
- The Tomatillo Verde sauce should now be a pale shade of green. Add the cottage cheese or sour cream and stir until well-blended. Leave on the heat for another 1-2 min stirring regularly.
- -With a spoon scoop onto the corn tortillas until covered. Add a handful of chicken and a handful of cheese until covered. Add a few sliced jalapenos for taste.
- -Repeat 3 more corn tortillas on top of the first layer; sauce, chicken and cheese.
- -You should finish the dish with 3 tortillas on top and enough sauce to drizzle over so they don't burn. I also like to finish with a sprinkling of cheese and a few jalapenos for garnish.
- -Put in oven for 30-35 minutes. Garnish with a sprinkling of fresh cilantro and a dollop of sour cream. Cut into pie slices and serve.

Steps:
- Cook first 4 ingredients in large nonstick skillet on medium heat 10 to 15 min. or until tomatillos are tender, stirring occasionally.
- Mix egg yolks, corn, sour cream and cornmeal in large bowl until blended. Stir in tomatillo mixture and cheese. Pour into 1-1/2-qt. baking dish sprayed with cooking spray.
- Bake 20 min. or until set. Let stand 10 min. before serving.

CREAMED CORN CASSEROLE
Creamed corn is one of my favorite comfort food dishes. Here, I've used my recipe for that dish in a different way that's perfect for gatherings with family and friends: a casserole! Boxed corn muffin mix, Cheddar cheese and sour cream are added to my creamed corn and bake up into an irresistible side dish that everyone will love.

- Preheat the oven to 350 degrees F. Coat a 3-quart baking dish with cooking spray.
- Cut the corn kernels from the cobs (about 8 cups) and scrape the cobs to remove all the liquid. Melt the butter in a large skillet over medium heat. Add the corn, milk, salt and pepper. Simmer until the corn is softened and the mixture begins to thicken, about 5 minutes. Remove from the heat.
- Stir together the cornbread mix, sour cream, eggs and half of the cheese in a bowl. Stir in the creamed corn. Pour the mixture into the prepared dish. Sprinkle with the remaining cheese. Bake until the casserole is browned and set, 35 to 40 minutes. Sprinkle with the green onions before serving, if desired.
CHARRED CORN SALAD WITH CREAMY TOMATILLO DRESSING

- For the guacamole: Combine the cilantro, tomatillos, garlic, avocado, jalapeno, onion, lime juice, cumin and salt in a food processor or blender and pulse until combined. Set aside 1/2 cup of the guacamole for the creamy tomatillo dressing, and use remaining guacamole for another recipe.
- For the charred corn salad: Preheat a grill pan over high heat. Brush or rub each ear of corn with the canola oil and sprinkle with salt and black pepper. Grill the corn until it gets a nice char, 2 to 3 minutes per side. Set aside until cool enough to handle, about 5 minutes. Stand each ear stalk-end down, in a wide, shallow bowl and slice the kernels off using your knife.
- Combine the corn kernels, lime juice, avocado, Fresno chiles and red onions in a large bowl.
- For the creamy tomatillo dressing: Mix together the mayonnaise, 1/2 cup tomatillo guacamole, hot sauce, chili powder and cumin. Add to the corn salad and toss to combine.
- Fold in the cilantro and crumbled cotija and season with salt.
- Serving suggestion: Portion the salad into small cups, squeeze additional lime over the top, and serve with a spoon.
CREAMY TOMATILLO SAUCE
This is from Fine Cooking and I would give it a 5 star rating. The aromas are amazing while the tomatillos and other veggies are roasting. I used heavy cream instead of creme fraiche as I did not have any. The addition of heavy cream or crème fraîche qualifies enchiladas made with this sauce as enchiladas suizas (Swiss-style enchiladas).

- Position a rack as close to the broiler as possible and heat the broiler. Arrange the tomatillos, fresh chiles (if using), onion slices, and garlic in a small, shallow baking pan. Broil, turning to ensure even cooking, until the tomatillos are soft and slightly blackened, about 10 minutes. Transfer the broiled ingredients to a blender and add the cilantro (if you're using a canned chipotle, add it now, too). Blend until smooth.
- Heat the oil in a medium saucepan over medium-high heat. Add the tomatillo mixture and cook, stirring, for 2 to 3 minutes. Add 2 cups of the broth and simmer until the sauce is thick enough to coat the back of a spoon, about 20 minutes. Taste the sauce. It should be a little tart, but it shouldn't make your mouth pucker. If it's too tart, add more broth and simmer until the sauce thickens again. Remove from the heat and whisk in the crème fraîche or heavy cream and the salt. Let cool slightly before making the enchiladas.

- The sauce can be made ahead and refrigerated for up to 2 days or frozen for up to a month.
CREAMY TACO CASSEROLE
This will get rave reviews from the family. It's easy, novel and filling. Serve with Spanish Rice and refried beans. Que Bueno!

- Brown the ground beef with the onions and garlic.
- When all the pink is out of the meat add the seasoning mix, water, cream cheese, corn, 1/2 the olives and Taco sauce.
- Let this simmer for 3 to 4 minutes.
- Crush the Fritos chips (I used the chili flavored ones, but plain will work fine).
- In an 8x12 casserole dish, layer 1/2 of the Fritos, then 1/2 the meat filling, and then 1/2 the cheese (regular cheddar will work also, I just prefer the combined cheese flavors).
- Repeat the layers and top with the remaining olives.
- Bake at 375° for 20-25 minutes, or until it is warmed completely and the cheese is melted.
- To serve, you can top with shredded lettuce, the diced green onions (tops included), diced tomatoes and a shot of the sour cream.

LAWRY'S SOUR CREAM TORTILLA CASSEROLE
This recipe is an inexpensive but filling side dish that was served at Lawry's California Center before closing its doors. It's from "Dear S.O.S. Thirty Years of Recipe Requests to the Los Angeles Times". It isn't low cal by any means, but every dieter needs a day off once in a while--and this is a splurge that is worth every bite! Heck, I'll run an extra mile for this!

Steps:
- Saute 1/2 cup onion until tender.
- Add tomatoes, seasoning mix, and chile salsa.
- Simmer 15 to 20 minutes.
- Set aside to cool.
- Fry tortillas lightly in small amount of oil, just until soft.
- Pour 1/2 cup sauce into bottom of 13x9-inch baking pan.
- Arrange layer of 4 tortillas over sauce (tortillas can overlap).
- Top with 1/3 of remaining sauce, 1/3 of remaining onions, and 1/3 of cheese.
- Repeat layering procedure twice.
- Combine sour cream and seasoned salt, spread over cheese to edge of pan.
- Sprinkle lightly with seasoned pepper.
- Bake at 325 degrees for 25 to 30 minutes.
- Cut into squares.

SOUR CREAM CASSEROLE
This is a family favorite. My mom found this in a Catholic school cookbook. Even our exchange student from Finland loved it - he made my mom write down the recipe so his mom could make it when he went back home. Today, my children love it. My 5 year old says it is his favorite dish. If you want to make it healthier, you can use low sodium and low fat/no fat ingredients.
