BAKED BUTTERFISH SARATOGA
Steps:
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking dish.
- In a bowl, cream together the butter, chopped parsley, and chives.
- Arrange the butterfish in the prepared baking dish. Sprinkle with lemon juice, and season with salt and pepper. Dot the fish with about 2 tablespoons of the butter mixture.
- Bake 5 minutes in the preheated oven, until the butter is melted. Turn fillets, brush with remaining butter mixture, and continue baking 10 minutes, or until fish is easily flaked with a fork. Garnish with parsley sprigs and lemon wedges to serve.

FRIED BUTTERFISH
Steps:
- Have the fishmonger scale and remove the heads from the fish. Wash and clean the fish and pat them dry with paper towels. Preheat 2 inches of oil for frying to 375 degrees in a deep, heavy skillet. While the oil is heating, mix the cornmeal, flour, salt, and pepper and coat both sides of the fish with the mixture. Place the butterfish in the hot oil and fry for 5 to 8 minutes, turning occasionally so that both sides are well browned. Drain them on paper towels and serve hot. They are as good for breakfast accompanied by grits and biscuits as they are for dinner with smothered cabbage or collard greens and cornbread.
HERBED UP BUTTERFISH

Steps:
- In a bowl mix the butter, thyme, onion powder, garlic powder, salt and white pepper.
- Place the ingrediets from the bowl into a frying pan on medium heat.
- Once the butter has melted add the butterfish fillets and cook for 3-5 minutes on each side or until it is cooked to your satisfaction.
- Squeeze the lemon wedge over the fish once cooked or serve as a garnish.

I learned about butterfish in Saratoga, California at the Race Street Market where I first tried it. I wouldn't eat fish as a child and am very particular which fish and shellfish I'll eat.
