ONION PARMESAN ROASTED RED POTATOES
Very easy, very little prep. I use to buy a product made by Lipton, which came in a bottle and you poured it over your diced potatoes and baked/grilled the dish. They have since discontinued the product, so I have found this to be the next best thing.

Steps:
- Combine all ingredients in a large plastic bag, seal and shake until well coated.
- Empty bag into a 13x9 dish, cover and bake at 350 degrees for 35 minutes, stirring occasionally.
- Uncover and bake 15 minutes longer or until potatoes are tender.
- *I think they even taste better more browned and crispy, so you may want to turn up the temp after uncovering and cook them longer.
- You could also make this on the grill, covered in foil in an aluminum pan. Grill for 1 hour, turning potatoes occasionally.

PARMESAN RED POTATOES
"Ever since I bought a pressure cooker, my busy family hasn't had to miss out on otherwise time-consuming suppers," relates Coleen Morrissey. In Sweet Valley, Pennsylvania, she prepares tender cheesy potatoes that soak up flavor from chicken broth and seasonings.

Steps:
- 1. Wash and dry potatoes. Cut in half. In a microwave safe (glass) dish, put butter in dish and melt (about 10 sec).
- 2. In a seperate dish put parmesan cheese and parsley and mix together. Dip cut side of potato into butter and then dip into parmesan mixture. Press down just a little. Set potato, cut side up (with the parmesan)into the same buttered dish and finish dipping the rest of the potatoes and set in dish. If you run out of butter or parmesan just mix a little more.. Melt extra butter if you want and drizzel over potatoes..Make sure there is a little butter in bottom of the potato dish.
- 3. Cover with plastic wrap and microwave 6 to 8 minutes. Being careful, use fork to lift one side of plastic wrap and test a potato to see if it is done..adjust time for larger sized potatos. You can use freshly grated parmesan if you have it. I do not use salt and pepper, but you may season to your liking.
PARMESAN-CRUSTED POTATOES
Tender roasted potatoes get an extra boost of flavor and crunch, thanks to a crispy layer of golden Parmesan. We added a simple stir-together paprika aioli for dipping, but these flavorful little nuggets are equally delicious on their own. Serve them as a fun appetizer or as a side dish.

Steps:
- Line a rimmed baking sheet with aluminum foil and place on the center rack of the oven. Preheat the oven to 425 degrees F (see Cook's Note).
- For the Parmesan potatoes: Toss the potatoes, thyme sprigs, olive oil, 1 teaspoon salt and several grinds of black pepper in a large bowl until combined. Carefully remove the hot baking sheet from the oven and spray with nonstick cooking spray. Lay the potatoes cut-side-down in an even layer. Bake until tender and golden brown, about 35 minutes.
- For the smoked paprika aioli: Meanwhile, whisk together the mayonnaise, lemon juice, Dijon, paprika, garlic, a pinch of salt and a couple grinds of black pepper in a small bowl until smooth. Cover with plastic wrap and refrigerate until ready to serve.
- Remove the baking sheet from the oven and push the potatoes to one side of the pan (try to give yourself as much empty surface area as possible). Lightly spray the foil with more cooking spray, then sprinkle the Parmesan in an even layer over the empty space on the baking sheet, making sure to go all the way to the edges to create a roughly 14-by-12-inch rectangle. Place the potatoes on top of the Parmesan layer, cut-side down, so that all the potatoes are sitting on the cheese.
- Return the baking sheet to the oven and bake until all the Parmesan is golden brown and crisp, 8 to 10 minutes more. Cool slightly, about 5 minutes, then use a spatula to lift the crispy, cheesy potatoes off the pan (some potatoes will come off individually while others will come off in pairs). Serve with the smoked paprika aioli on the side.

Steps:
- Preheat the oven to 400 degrees.
- Place the potatoes and 1 tablespoon salt in a large saucepan and add enough water to cover the potatoes. Bring to a boil, reduce the heat, and simmer for 17 to 20 minutes, until the potatoes are tender when pierced with a skewer. Drain the potatoes and place on a sheet pan. With a potato masher or metal measuring cup, press each potato until it's about 1/2 inch thick (they will be messy). Toss the potatoes with the olive oil, 1 teaspoon salt, and 3/4 teaspoon pepper.
- Roast the potatoes for 25 to 30 minutes, turning once, until the skins have become nicely browned. Sprinkle the potatoes with the Parmesan cheese and roast for another 2 to 3 minutes, just until the cheese melts. Sprinkle the potatoes with the chives and fleur de sel and serve hot.
OVEN ROASTED PARMESAN POTATOES

- Place the potatoes and 1 tablespoon of salt in a 4-quart saucepan and add cold water to cover. Bring to a boil, lower the heat and simmer covered for 25 to 35 minutes, until completely tender. Drain.
- In a small saucepan, heat the half-and-half and butter.Put the potatoes into the bowl of an electric mixer fitted with a paddle attachment and mix the potatoes for a few seconds on low speed, to break them up. Slowly add the hot cream and butter to the potatoes, mixing on the lowest speed (the last quarter of the cream should be folded in by hand). Steps:
- -Preheat oven to 425.
- -Cut up potatoes (and celery and carrots, if using) and put in an 8x8 glass baking dish.
- -Chop onion and shallot in food processor and mix with potatoes/veggies.
- -Mix garlic in with potatoes/veggies, onions and shallots.
- -Pour on enough olive oil to coat the potato/veggie mixture (I usually put sandwich baggies over my hands and mix it all with my hands. You want to completely cover the potatoes with the olive oil so that the seasonings will stick).
- -Sprinkle seasonings over potato/veggie mixture (I used the ones listed above, but use whatever kinds you like). Do not add parmesan cheese yet.
- -Pour 3 tbsp of butter over everything if you want to add a buttery flavor, or skip this step if you prefer the olive oil only.
- -Bake for 55 mins, stirring once halfway through cooking.
- -Remove from oven and add shredded parmesan, then bake for another 5 mins or until cheese is melted.

Steps:
- Heat oven to 220C/fan 200C/gas 7. Place the potatoes into a pan of salted water, bring to the boil and simmer for 2 mins exactly. Drain well and toss in a little of the oil to coat.
- Stir the flour, parmesan, herbs and nutmeg together in a dish with a small pinch of salt and toss the potatoes in the mix until evenly coated. Heat a good layer of oil in a shallow, non-stick roasting tray on a hob or in the oven, then carefully add the potatoes to the tray. Turn the potatoes to coat them in the oil and roast for 40 mins, turning once. If they feel like they are sticking to the pan, don't move them, just leave them for the full time. Roast until golden brown and crisp, and serve straight away.
