MAPLE PECAN BARS

Maple Pecan Bars image

Time 2h30m

Number Of Ingredients 15

Crust:
----------------
1 1/4 cups all-purpose flour
1/3 cup firmly packed golden brown sugar
1/4 teaspoon salt
1/2 cup cold butter cut into 3/4 inch pieces
----------------
Filling:
----------------
6 Tablespoons butter
1/3 cup pure maple syrup

2 cups coarsely chopped pecans
1/2 cup quick cooking oats

Add the butter and using a pastry blender, mix butter into flour mixture until pea sized crumbs form. Line 8-inch square baking pan with parchment paper or non-stick foil, letting it extend up the sides of pan. Press the crumb mixture into the bottom of the prepared pan. Bake the crust until the edges are lightly browned and the top feels firm when lightly touched, 12 - 17 minutes. Set aside. ---------------- To Make the Filling: ---------------- In a saucepan over medium heat, combine the butter, maple syrup, and brown sugar and stir together until the butter melts and the brown sugar dissolves. Bring to a boil and boil for 1 minute. Remove from the heat and immediately stir in the cream. Then stir in the pecans and oatmeal. Pour the hot filling over the partially baked crust, spreading it evenly to the edges with an icing spatula. Bake at 350F until the filling is set when you give the pan a gentle shake, 22-25 minutes. Transfer to a wire rack to let cool until firm, about 1 1/2 hours. Using the ends of the paper or foil liner, carefully lift the maple-pecan square in its liner from the baking pan. Loosen the paper or foil from the edges and cut into 20 - 25 small squares. Store in an airtight container at room temperature for up to 3 days.

BROWN BUTTER PECAN PIE BARS

Brown Butter Pecan Pie Bars image

These ultra flavorful brown butter pecan pie bars made with maple syrup are so much easier than baking an entire pie.

Provided by Sally

Categories     Pie

Time 4h

Number Of Ingredients 12

1 cup (230g; 2 sticks) unsalted butter
1/2 cup (100g) granulated sugar
1 teaspoon pure vanilla extract
1/2 teaspoon salt
2 cups (250g) all-purpose flour (spoon & leveled)
1/2 cup (115g) unsalted butter
1/2 cup (100g) packed light or dark brown sugar (I prefer dark here)
1/2 cup (120ml) pure maple syrup
2 Tablespoons (30ml) heavy cream
2 large eggs, beaten
3 cups (300g) coarsely chopped shelled pecans
optional: sea salt for sprinkling

Steps:

  • Preheat the oven to 350°F (177°C) and grease a 9×13 inch pan or line with parchment paper leaving an overhang on the sides to lift the finished bars out. Set aside.
  • Slice the butter up into pieces and place in a light-colored skillet. (Light colored helps you determine when the butter begins browning.) Melt the butter over medium heat, stirring occasionally. Once melted, the butter will begin to foam. Keep stirring occasionally. After 5-8 minutes, the butter will begin browning- you'll notice lightly browned specks begin to form at the bottom of the pan and it will have a nutty aroma. Once browned, remove from heat immediately and allow to cool for 5 minutes.
  • In a large bowl, stir the brown butter, granulated sugar, vanilla extract, and salt together in a medium bowl. Stir in the flour until evenly combined. Press the mixture evenly into the prepared baking pan. Bake for 15 minutes.
  • Combine the butter, brown sugar, maple syrup, and heavy cream in a medium saucepan over medium heat. Whisk to combine the ingredients and dissolve the sugar. Bring to a boil and allow to boil for 3 minutes. As it is boiling, carefully spoon 1/2 cup of the mixture into a glass measuring cup. Slowly drizzle it into the beaten eggs. Stir frequently to keep it moving so the eggs do not scramble. Once the 1/2 cup mixture is added to the beaten eggs, slowly drizzle and whisk this back into the pot. The trick is to always be stirring/whisking to avoid scrambling the eggs. Remove from heat, stir in the pecans, and pour evenly over the crust.
  • Bake for 30-35 minutes. A toothpick inserted in the center should come out *mostly* clean. If the top is getting too brown as it bakes, loosely cover with aluminum foil. Remove from the oven, set on a wire rack, and allow to cool completely before cutting into squares. Cover and store leftover bars at room temperature or in the refrigerator for up to 1 week.

Provided by Michelle Berteig

Categories     Bar Cookie

Time 1h30m

Yield 2-3 dozen

Number Of Ingredients 13

2 1/2 cups flour
1/2 cup sugar
1 cup butter, cold, cut into pieces
3/4 cup butter
1 1/2 cups dark brown sugar
1/3 cup maple syrup
1/3 cup dark corn syrup
2 eggs, beaten
2 tablespoons heavy cream
1 teaspoon vanilla
1 pinch salt
2 1/2 cups chopped toasted pecans
1 pinch salt

Steps:

  • To make the crust, preheat the oven to 350 degrees F. Grease a 9x13 inch baking pan. Line the bottom of the pan with aluminum foil, and lightly grease the foil. Set aside.
  • In the bowl of a food processor, combine the flour, sugar, and salt. With the machine running, add the butter pieces and continue to process until the mixture resembles very fine, moist crumbs. The mixture won't come completely together in the processor.
  • Turn the crumbs out onto the prepared baking sheet and using your hands, gently press to form a smooth, even layer. Bake until the crust is a light golden brown, 30 to 35 minutes. Set aside.
  • While the crust is baking, combine the butter, brown sugar, maple and corn syrups in a saucepan. Heat over medium heat, stirring constantly, until the butter has melted and the mixture is completely combined and smooth. Cook one additional minute, then remove from heat and set aside.
  • In a large mixing bowl, whisk together the eggs, cream, vanilla and salt. Slowly whisk in about 1/4 cup of the warm sugar mixture to temper the eggs. Slowly whisk in another 1/4 cup, then slowly stir in the rest. When fully combined, stir in the pecans.
  • Pour the pecan mixture over the prepared crust. Return to the oven and bake until the pecan mixture is bubbling and jiggles when gently tapped, an additional 20 to 25 minutes.
  • Remove from the oven and place the sheet on a rack to cool completely. Lift the foil from the sheet to get the bars out of the pan. Cut into squares. Store in an airtight container.

  • Place a rack in the center of the oven and preheat the oven to 350 degrees F. Grease an 9x13-inch pan or line with parchment paper leaving an overhang on the sides to lift the finished bars out. Set aside.
  • Make the crust: in the bowl of a stand mixer fitted with the paddle attachment or a large mixing bowl, beat the butter and granulated sugar on medium high speed, until light and fluffy, about 2 minutes. Scrape down the bowl. Beat in the eggs and the vanilla, just until incorporated.
  • In a separate mixing bowl, whisk together the flour, baking powder, and salt. With the mixer on low speed, slowly add the dry ingredients to the butter mixture, stopping as soon as the flour disappears. Transfer the dough to the prepared pan. Press it evenly into the pan, building it up on the sides all the way around by about 1-inch. The dough will be very sticky, so if it clings to your hands, use a sheet of plastic wrap to press it down and avoid sticking. The crust will seem fairly thick, but go with it. Bake the crust for 15 minutes, until it is set but not yet browned. If it puffs up unevenly in the center, use the tines of a fork to prick it lightly on the surface. Set aside to cool.
  • While the crust cools, prepare the filling: in a large, heavy-bottomed saucepan, combine the butter, maple syrup, brown sugar, and lemon zest. Cook over low heat, stirring the mixture with a wooden spoon, until the butter is melted. As soon as the butter melts, increase the heat to a boil. Boil for 3 minutes (set a timer!) then remove from the heat.

  • To a large bowl, add the flour, brown sugar, and cut in the butter using two forks or a pastry cutter. Keep working until butter is evenly distributed and pea-sized lumps and sandy bits form. The softer the butter is, the quicker and easier it is.

Sprinkle the mixture into the baking dish and press, creating an even layer of shortbread crust. Bake for 20 minutes or until golden brown in color.
  • In a medium bowl that is microwave safe, melt the remaining 1/2 stick of butter. Whisk in the corn syrup, remaining 3/4 cup of brown sugar, maple syrup, eggs, remaining 1/2 teaspoon salt, and vanilla extract. Continue to whisk until all the lumps from the brown sugar have been worked out. Add the pecans and stir. Pour into the prepared shortbread crust. Bake for 20 - 25 minutes until the center is set and the pecans start to brown. Cool the baking pan on a wire rack. Remove from baking pan and allow to cool completely before cutting and serving. Serve by themselves, with whipped cream, or a big scoop of vanilla ice cream.

MAPLE PECAN PIE BARS (WITHOUT CORN SYRUP) - ROBUST RECIPES

  • Remember to remove your butter and eggs from the fridge a few hours in advance so that they can come up to room temp. Adjust your oven racks so one rack is farthest away from your heat source. Also, just before you toast the pecans, line a 8×8 baking dish with parchment paper, that has an overhang on the sides for easy removal, and then grease the parchment paper. These bars love to stick, so don’t skip the parchment paper.
  • Preheat your oven to 350 degrees Fahrenheit. Spread the pecans onto a small rimmed baking sheet. Place them in a preheated oven and toast for 5 to 7 minutes, tossing them halfway. Make sure to keep an eye on them the last few minutes so they don’t burn. You will know they are done when you can smell a nice nutty aroma in the kitchen, and the pecans are golden brown. Set aside to cool.
  • Measure out all your ingredients for the filling and have them ready to go. Whisk your eggs and vanilla extract together in a liquid measuring cup with a pour spout, set aside. In a medium sauce pot begin melting the butter over medium heat, once melted, stir in the maple syrup. Spoon about 2 tablespoons of the butter and maple syrup into a small bowl with the corn starch, whisk so no lumps remain, whisk the corn starch slurry into the sauce pot. Whisk in the salt and cinnamon, and brown sugar. Bring to a low simmer (careful, because the mixture can boil over easily). Whisk constantly for 3 to 5 minutes, or until the mixture has thickened, and coats the back of a spoon. Remove from the heat. Transfer the maple mixture to a medium mixing bowl – a 4 cup spouted liquid measuring cup is perfect for pouring onto the crust, if you have one – allow it to cool while you make the crust.
  • In a large mixing bowl add the room temp, cubed butter, along with the granulated sugar, and the egg. Use an electric hand mixer to cream the ingredients together on low, until well combined, and smooth, about 3 minutes. Mix in the vanilla. Add the salt, almond flour and 1/4 cup of the coconut flour, whisk until a dough forms. If any flour remains loose on the bowl, use spatula to stir it in. If the dough seems really sticky then stir in the 1 to 2 tablespoons extra coconut flour. Transfer the dough to the parchment lined baking dish, use your fingers, or, a rubber spatula to spread the dough evenly, and press it into the pan. The dough will be a little sticky, I find it’s helpful to wet my fingers just slightly.

  • Preheat the oven to 375 degrees. In a large mixing bowl, cream the butter and 1 cup brown sugar. Add the flour and beat until coarse crumbs form. If the mixture is too soft, add a little more flour. It should be crumbly but stick together when pressed.
  • Press the crust into a 9×13 baking dish. Bake for 12-15 minutes or until top appears dry and slightly puffed. I like to underbake mine so the crust stays softer, but if you like more of a shortbread-type crust, bake a few minutes longer.
  • For the filling, whisk the eggs, corn syrup, brown sugar, maple syrup, and vanilla. Stir in the pecans and pour the mixture over the crust. The filling should not be more than just a light layer of sauce over the crust. Arrange any stray pecans and return to the oven for 15-20 minutes. Remove from oven when the filling appears mostly set. Sprinkle with coarse sea salt.

  • In a large bowl, combine flour, sugar, and salt. Add the cubed butter and use your fingers or a pastry blender to cut the butter into the flour, doing so until the butter is broken down into pea-sized pieces. Add 1/4 cup ice water and stir with a wooden spoon or rubber spatula until the dough starts coming together. Then use your hands to bring the dough together. If necessary, add another tablespoon of cold water. The dough should just be sticking together. Try not to overwork it.
