- Set a frying pan over medium heat. Add the pecans and stir occasionally until they start to smell delicious, or until they barely start to brown. Set aside to cool.
- In a large mixing bowl or stand mixer, cream the butter to within an inch of its life. Just kidding, beat it for a couple minutes until it's high and fluffy.
- Add 2 cups of powdered sugar and maple syrup. Beat well.

- Preheat grill to medium. Grill the bacon on a baking sheet until the fat is golden, then lay the rashers on kitchen paper to allow them to crisp up. Preheat oven to 180°C (160°C fan) mark 4 and lightly grease and line a 20.5cm (8in) square tin with baking parchment.
- Snip or break the bacon into small pieces; put into a bowl with the maple syrup and pecans. Mix and set aside.
- Put the butter and sugar into a large heatproof bowl and sift in the cocoa powder. Put bowl over a pan of barely simmering water (make sure the base of the bowl doesn't touch the water) and heat until the mixture is melted and smooth, stirring occasionally - initially it will look like the mixture won't come together, but it will. Lift the bowl off the pan and set aside to cool slightly.
- Beat the eggs, one at a time, into the chocolate mixture. Sift over the flour and beat vigorously until the mixture is shiny and smooth. Stir in most of the bacon mix.
- Scrape the chocolate mixture into the prepared tin, level and scatter over the remaining bacon mixture. Bake for 20-30min or until set. - In a food processor, pulse flour, salt and sugar. Add bacon grease and butter, and pulse until it forms small, pea-sized pieces. Slowly pour water into the blender, and continue pulsing until it forms a ball. Mold the dough into a disc roughly 6 inches in diameter. Cover the disc tightly with plastic wrap and refrigerate at least 2 hours, preferably overnight.
- On a lightly floured surface, roll the dough into a circle large enough to fit into a 9-inch pie dish. Carefully place the dough into dish, and using the back of a fork, crimp the edges. Chill the formed shell for 20 to 30 minutes before filling.
- Preheat oven to 350 degrees,
- Cook bacon in a heavy-bottomed pot on medium-high heat for 5-6 minutes or until cooked, but not crisp. Drain fat and add maple syrup, brown sugar, corn syrup, and butter to saucepan with bacon. Cook over medium0heat until sugar dissolves and butter melts. Increase heat and boil for 1 minute. Remove from heat and stir in bourbon.
- Beat eggs, vanilla, and salt, gradually add maple syrup mixture and pecan halves. Pour filling into crust. Bake pie until filling is set, about 55 minutes. Cool pie completely before serving. Can be prepared 1 day in advance. Let pie come to room temperature before serving.

- Mix flour, sugar, salt, vanilla and cinnamon in a large bowl. Add cubed butter on top. Using a pastry cutter, cut the butter into the dry ingredients until flour is coated.
- Add 4 tbsp of ice water. If it needs additional cold water, add 1 tsp at a time. It should look crumbly, but if you pinch it in your hands it will hold together. rm.)
- Form a dough ball and wrap in saran wrap. Place in fridge for at least 30 minutes before rolling out slightly larger than pie tin.
- Cut edge off, around pie tin and crimp edges, or use a fork to press edges. Using fork poke holes a few times in bottom of pie crust.
- Place in freezer 30 min while preparing filling.
- Melt 5 Tbsp butter in a small pan, then add brown sugar and stir for 2 min. Remove from heat and let cool.
- Combine eggs, whiskey, maple syrup, sea salt, Sweet Honey Pecan rub, and vanilla, as well as cooled brown sugar mixture. Mix well.
- Place Pecans in bottom of frozen pie crust and pour filling mixture over pecans
- Place on smoker at 350ºF (177ºC) for 1 hour.
- Chop bacon into small pieces and cook till crisp. Add in maple syrup and brown sugar. Stir to coat. Place evenly on top of warm pie.
- Serve with fresh homemade Whip Cream.

- Preheat oven, grease& line the base of a 9x5 loaf pan with baking/parchment paper.
- Sift flour and baking powder into a bowl.
- Cut butter into the flour and mix until the mixture looks like fine breadcrumbs.
- Add in the sugar and pecans.
- Beat eggs together with milk and lemon zest in a seperate bowl.
- Stir in maple syrup.
- Add this to the flour mixture and gently mix together.
