2-1/2 cups mini marshmallows
1-1/2 cups roughly chopped walnuts (divided)
1-14 oz can sweetened condensed milk
8 x8 baking dish
1 large sheet parchment paper

Steps:

  • Begin by lining a baking dish with parchment paper and sprinkling 2 tablespoons of chopped walnuts & mini marshmallows on the bottom and set aside.
  • In a large saucepan pour sweetened condensed milk over chocolate chips. Over low heat melt chocolate chips stirring constantly.
  • Fold in remaining marshmallows and walnuts and pour into prepared dish. Refrigerate for 1 hour and then cut into squares and serve.

14 ounces sweetened condensed milk
1/4 cup butter
1 teaspoon vanilla extract
2 cups miniature marshmallows
1 cup salted peanuts

Steps:

  • Combine the milk, the chocolate, and the butter in a medium size glass bowl and heat in the microwave for 90 seconds. (If you aren't a fan of the microwave, you can easily melt the chocolate, milk and butter in a double boiler on the stove top.)
  • Stir to combine and heat another 15 seconds if needed. Add the extract and stir until smooth. Stir in the peanuts and marshmallows and scoop the mixture onto a parchment lined tray.
  • Spread with a spatula to approximately 1-inch thickness. Chill until ready to serve. Slice into squares and store in an airtight container in the refrigerator for up to two weeks. Enjoy!

18 ounces semi-sweet chocolate, roughly chopped
(1) 14 ounce can sweetened condensed milk
2 tablespoons unsalted butter, cut into 1/2-inch pieces, at room temperature
1 teaspoon vanilla extract
1/2 teaspoon almond extract
1/8 teaspoon salt
1 and 1/4 cup slivered almonds
1 and 1/2 cups mini marshmallows

Steps:

  • Lightly grease an 8 x 8-inch baking pan. Line the pan with foil or parchment paper, allowing the excess paper to overhang the sides, set aside.
  • Place the chopped chocolate in a large, heatproof bowl. Fill a saucepan with a few inches of water (you want it about 1/4 full) and bring it to a boil. Reduce the heat to barely a simmer.
  • Place your heatproof glass bowl holding your chocolate on top of the pot. Stir frequently, until the chocolate has melted and is completely smooth, about 8 minutes.
  • Add in the butter and continue cooking until butter has melted. Add in sweetened condensed milk and stir well to combine.
  • Remove from heat. Stir in the vanilla and almond extracts. Stir in the salt.
  • Fold in the almonds and marshmallows and stir until combined.
  • Using a sturdy spatula, scrape the fudge into the prepared pan and smooth the top. Refrigerate for at least 2 hours.
  • Gently run a butter knife around the edge of the pan to loosen the fudge. Remove the fudge and transfer it to a cutting board.
  • Peel off parchment paper, then slice the fudge into small pieces. Serve at once or store in the refrigerator for up to 1 month.
  • You may also freeze the fudge, in an airtight freezer safe container for up to two months.

1/4 pound (1 stick) unsalted butter
1/2 7-ounce jar marshmallow creme
2 1/2 cups chopped bittersweet chocolate or chips (65 percent dark)
1/2 bag large Jet-Puffed marshmallows, cut into quarters
3/4 cup roasted peanuts
1/2 teaspoon vanilla extract
1/4 teaspoon salt

Steps:

  • In a medium-size saucepan over medium-high heat mix the sugar and milk together. Bring to a boil and cook for exactly 8 minutes (this registers as the soft ball stage on a candy thermometer, if you are using one).
  • Remove the mixture from the heat and add the butter and marshmallow creme and stir until smooth. Add the chocolate and mix until melted (if the mixture looks "broken," beat with a wooden spoon or the paddle attachment of a stand mixer until smooth and fluid). Add in the marshmallows, peanuts, vanilla, and salt and mix until incorporated.
  • Pour into a greased 9-inch square pan. Cool completely in the refrigerator before removing from the pan and cutting into squares, 3 to 4 hours.

2/3 cup Dutch-process cocoa powder
2/3 cup whole milk
1 teaspoon pure vanilla extract
1/2 teaspoon kosher salt
3/4 cup unsweetened peanut butter
1 cup mini marshmallows
1/2 cup halved walnuts, toasted
Flakey salt, for garnish
Sprinkles, for garnish

Steps:

  • Line an 8-inch square baking dish with parchment paper to overhang the edges by an inch.
  • Whisk the sugar and cocoa together in a medium saucepan. Whisk in the milk until smooth. Set the pot over medium heat, stirring to keep the mixture smooth, and bring to boil. Continue to boil, stirring the edges to keep from burning, until the mixture reaches 220 degrees F, about 60 seconds. (The mixture should be thick, smooth and glossy, not crystallized.) Remove from the heat and stir in the vanilla and salt, beating until smooth. Add the peanut butter and stir in, leaving pockets of peanut buttery goodness intact if desired. Let cool until warm but still stirrable, about 5 minutes.
