SPAGHETTI WITH HAM AND BRIE



Spaghetti with Ham and Brie image

Kosher salt
12 ounces spaghetti
2 tablespoons extra-virgin olive oil
1 large shallot, minced
1/4 cup dry white wine
1 5-ounce container brie cheese spread
1 teaspoon dijon mustard
4 ounces deli-sliced Black Forest ham, cut into 1/2-inch pieces
1/2 cup finely chopped fresh parsley
Coarsely ground pepper

Steps:

  • Bring a large pot of salted water to a boil. Add the spaghetti and cook as the label directs for al dente. Reserve 1 cup cooking water, then drain.
  • Meanwhile, combine the olive oil and shallot in a large pot over medium heat. Cook, stirring occasionally, until the shallot is softened, 3 to 5 minutes. Add the wine and simmer until mostly reduced, 2 to 3 minutes. Add the cheese spread, mustard, ham, spaghetti and 1/2 cup of the reserved cooking water. Cook, tossing, until the spaghetti is coated with the sauce, 1 to 2 minutes, adding more cooking water as needed to loosen (the pasta will absorb the sauce as it sits). Season with salt, add the parsley and toss again.
  • Divide the spaghetti among shallow bowls. Spoon any remaining sauce on top and season generously with pepper.

2 Granny Smith apples, peeled, cored and cut into 1/4-inch thick slices
1 tablespoon chopped fresh thyme leaves
8 (1/2-inch) thick slices country-style white bread
1/2 cup whole-grain mustard
2 cups (8 ounces) shredded Gruyere
8 slices (8-ounces) Black Forest ham

Steps:

  • In a 12-inch skillet, melt the butter over medium heat. Add the apple slices and thyme. Cook, stirring occasionally, until the apples are slightly soft, about 4 minutes. Cool for 5 minutes.
  • Preheat a panini press. Spread each bread slice with 1 tablespoon mustard. Arrange 1/4 cup of cheese on each of 4 bread slices and top with 2 slices of ham. Divide the apple mixture evenly on top of the ham. Add the remaining cheese and cover with the remaining 4 bread slices. Grill in the panini press until the cheese has melted and the tops are golden and crispy, about 5 to 6 minutes.

1 tomato Ripe, thinly sliced

2 Half Ciabatta with Tomato
4 Thick slices Normandy Brie

Steps:

  • Slice the ciabatta in half lengthways and spread the bottom half of each with pesto. Arrange the tomato on top, then the ham, folded in half, and the brie. Season well and replace the top of the ciabatta. Wrap in foil and place on a baking tray in a preheated oven at 220?C, 425F, gas mark 7 for 15 minutes. Serve immediately, either on its own or with a fresh green crispy salad. NOTES : Panini are traditional Italian snacks. 1/3 cup apricot preserves
4 slices deli ham, quartered
8 ounces Brie cheese, cut into 16 pieces

Steps:

  • Preheat oven to 400°. On a lightly floured surface, unfold puff pastry. Roll pastry to a 12-in. square; cut into sixteen 3-in. squares. Place 1 teaspoon preserves in center of each square; top with ham, folding as necessary, and cheese. Overlap 2 opposite corners of pastry over filling; pinch tightly to seal., Place on a parchment-lined baking sheet. Bake 15-20 minutes or until golden brown. Cool on pan 5 minutes before serving. , Freeze option: Freeze cooled pastries in a freezer container, separating layers with waxed paper.
