STUFFED BUFFALO CHICKEN BREASTS
Buffalo Chicken breast stuffed with cheese, shredded carrots and minced celery, then rolled, breaded, baked and drizzled with hot sauce. Sound enticing? It should be, this is good stuff!

Steps:
- Preheat the oven to 400°F.
- Lightly spray a baking dish with oil.
- Mix cheddar, laughing cow cheese, celery, green onion, carrot, salt and pepper in a dish.
- Lay out the chicken cutlets, placing even amount of mixture in the middle and spread in the center.
- In one bowl make a breading station out of crushed ritz crumbs.
- In another bowl combine mayonnaise, 1 tablespoon of hot sauce, and lemon juice as a dredging mixture.
- Roll chicken breasts in the mayonnaise mixture, then into cracker crumbs, and put on a lightly greased pan, seam side down.
- Lightly spray top of chicken with cooking spray.
- Bake 30 minutes.
- While the chicken cooks, melt butter and mix with the remaining hot sauce and garlic powder.
- Drizzle buffalo sauce over finished chicken breast and serve.

CHICKEN WITH LAUGHING COW (MY OWN)
I could not find the Chicken with Laughing Cow cheese; so I made this one up by myself. My adult children loved it. I hope you do too. BTW-I did find the laughing cow one online & it uses ham. I was trying to make this especially healthier and did not use ham, but one could use it if desired. Enjoy!

Steps:
- 1. Pre- heat oven to 375 degrees-Prepare a large baking dish with cooking spray.
- 2. Rinse and pat dry each chicken breast. Dip into Ranch dressing covering both sides.
- 3. Place chicken breast one at a time-into a pie pan holding the dry indredients-covering both sides.
- 4. While still in the pie pan-place one triangle of Laughing Cow cheese into the breast and roll up to keep it inside-securing with a toothpick. Place each breast into the sprayed cooking dish or pan.
- 5. Bake for one hour uncovered- Check meat with a sharp knife to see that the juices run clear. When done, serve.

These are not your ordinary scrambled eggs. I was getting bored with regular old eggs and came up with this recipe on Sunday. Even my two boys who don't like eggs, ate these.....they were scraping the bowl for the last little bit.

Steps:
- Over medium to medium low heat, melt butter in frying pan.
- Add the wedges of laughing cow cheese and slowly melt.
- In mixing bowl, crack and whisk eggs until puffy (or until the cheese has melted in the pan).
- Add eggs to pan & turn with a spatula (you don't want them to get brown marks).
- When the eggs are pretty well set, add the shredded cheddar and take the pan off the heat. Mix the cheddar in by folding over the eggs until cheddar is melted.
- Serve immediately.
