1-1/2 lb. fresh green beans, trimmed, cut into 1-inch lengths
3 slices OSCAR MAYER Bacon, chopped
1/2 cup finely chopped onions
2 Tbsp. flour
1-1/2 cups milk
1 pkg. (8 oz.) KRAFT Shredded Triple Cheddar Cheese with a TOUCH OF PHILADELPHIA
8 round buttery crackers, crushed (about 1/3 cup)

Steps:

  • Heat oven to 350°F.
  • Add beans to large saucepan of boiling water; cook on medium heat 4 to 6 min. or until crisp-tender. Rinse with cold water; drain.
  • Cook bacon in same saucepan on medium heat until crisp. Remove bacon from skillet with slotted spoon; drain on paper towels. Discard all but 2 Tbsp. drippings from skillet. Add onions to reserved drippings; cook and stir 4 min. or until tender. Stir in flour. Gradually stir in milk until well blended; cook and stir 3 min. or until thickened. Add cheese; cook and stir 3 min. or until melted.
  • Stir in beans and bacon; spoon into 1-1/2-qt. casserole sprayed with cooking spray. Top with cracker crumbs.
  • Bake 25 min. or until heated through.

2 (9 ounce) packages frozen French-cut green beans, thawed and drained
1 onion, sliced into rings and separated
2 ounces Canadian bacon, cut into 1-inch strips
1/4 cup sugar
1/4 cup white vinegar
2 tablespoons canola oil
1/2 teaspoon salt
1/4 teaspoon liquid smoke
1/4 cup slivered almonds

Steps:

  • In a 1 1/2 quart baking dish, layer the beans, onion and bacon. Set aside.
  • In a small bowl, combine the sugar, vinegar, oil, salt, and liquid smoke. Stir until the sugar and salt are completely dissolved. Pour over the bean mixture. Cover tightly and refrigerate overnight.
  • Preheat the oven to 350°. Sprinkle the almonds over the bean mixture. Bake for 45 minutes, or until bubbbly and the almonds are toasted.

3 pounds sliced bacon, diced
3 medium sweet onions, chopped
6 cans (28 ounces each) baked beans, undrained
6 cans (16 ounces each) kidney beans, rinsed and drained
6 cans (16 ounces each) butter beans, rinsed and drained
4 packages (12 ounces each) miniature smoked sausages, cut in thirds
3 cups packed brown sugar
1-1/2 cups ketchup
1-1/2 cups cider vinegar
1 tablespoon garlic powder
1 tablespoon ground mustard

Steps:

  • In a Dutch oven, cook bacon over medium heat until crisp. Using a slotted spoon, remove to paper towels; drain, reserving 3 tablespoons drippings. Saute onions in reserved drippings until tender. , In a very large bowl, combine the beans, sausages, bacon and onions. Combine the remaining ingredients; stir into bean mixture. , Pour into four greased 13-in. x 9-in. baking dishes. Bake, uncovered, at 350° for 45-55 minutes or until heated through.

3 shallots, sliced thin
salt
pepper
3 tablespoons flour
5 tablespoons vegetable oil
10 ounces mushrooms, stems discarded and caps sliced 1/4 inch thick
2 tablespoons butter
1 onion, minced
2 garlic cloves, pressed (or minced garlic)
1 1/2 lbs green beans, trimmed
3 sprigs fresh thyme
2 bay leaves
3/4 cup heavy cream
3/4 cup chicken broth or 3/4 cup vegetable broth

Steps:

  • In a small bowl toss together shallots, 1/4 teaspoon salt, 1/8 teaspoon pepper and 2 tablespoons flour. Set aside.
  • In a skillet heat 3 tablespoon oil over medium high heat; add shallots and cook until golden and crisp (5 minutes).
  • Transfer shallots with the oil to baking sheet lined with paper towels.
  • Wipe out skillet and return to medium high heat, adding remaining oil (2 tablespoons), mushrooms and 1/4 teaspoon salt, cooking stirring until browned (8 - 10 minutes). Transfer to plate and set aside.
  • Wipe out skillet and heat butter over medium heat, adding onion when butter melts, cooking stirring occasionally until edges brown (2 minutes).
  • Stir in garlic and remaining flour (1 tablespoon), green beans, thyme and bay leaves.
  • Stir in cream, broth, increasing heat to medium high, cover and cook until beans are tender (4-5 minutes).
  • Stir in mushrooms, continuing to cook uncovered until beans are tender and sauce thickens (4-5 minutes). Remove from heat.
  • Discard bay leaves and thyme, season with salt and pepper.
  • Transfer to serving dish, sprinkling with reserved shallots.

This is another holiday staple at my house. I have had it every way known, and it seems to have become an American holiday staple, but I still like it this way best. I think the frozen green beans is the closest to summer as you can get in the middle of winter. Canned just does not cut it.

1 (16 ounce) package frozen French-cut green beans
1 (2 7/8 ounce) can French-fried onions
1 (10 3/4 ounce) can low-fat cream of mushroom soup

Steps:

  • Put the frozen green beans in a casserole dish.
  • Put the cream of mushroom soup in and mix to combine.
  • Add about two tablespoons of water to dish and put the French fried onions on top and press down slightly to compact the mix.
  • Bake at 350°F for about 30 to 45 minutes or until the onions are browned.
  • If you like your green beans a little crunchy, cut the cooking time, if you like them really soft, then cook them longer.
  • Serve hot.

A new twist on an old favorite. I don't generally care for the cream of whatever versions, so for RSC #15, I developed my own version with an Asian flair inspired by the panko bread crumbs in the ingredient list. Full of flavor & fresh ingredients!

2 tablespoons butter
1 medium onion, chopped
1/4 cup fresh ginger, minced
4 ounces cream cheese, softened
1 head roasted garlic
1 lemon, zest of
1 1/2 cups sour cream
2 tablespoons soy sauce
2 teaspoons toasted sesame oil
1 lb green beans, cooked until tender-crisp
1/3 cup panko breadcrumbs (bread crumbs)
2 tablespoons toasted sesame seeds

Steps:

  • Preheat oven to 450°F.
  • Melt butter in small saucepan. Add chopped onion & ginger. Saute until softened. Remove from heat & add cream cheese through sesame oil. Combine thoroughly.
  • In a large bowl, combine sauce with cooked green beans. Pour into a small casserole dish.
  • Top with panko bread crumbs & sesame seeds.
  • Bake until bubbly, about 15 minutes.
