Want French toast without the hassle? Make this easy Overnight French Toast Casserole with sweet, buttery streusel topping instead! Simply prep it the night before and bake the next morning for a breakfast that's full of the flavor you love with minimal effort.

1 loaf Brioche (mine was 17.6 ounces)
8 whole eggs
1 cup whole milk
4 tablespoons Challenge unsalted butter, melted and cooled
1 tablespoon vanilla extract
½ cup packed light brown sugar
½ teaspoon ground cinnamon
Pinch of salt
½ cup all purpose flour
⅓ cup packed light brown sugar
½ teaspoon ground cinnamon
Pinch of salt
½ cup cold Challenge unsalted butter, cubed
⅓ cup rolled oats
Maple syrup and additional butter for serving

Steps:

  • Butter or spray a 9 x 13-inch casserole dish with cooking spray.
  • Cut the brioche into 1-inch cubes and place the cubed bread into the prepared pan.
  • In a large bowl whisk the eggs until well beaten. Add in the milk, melted butter, vanilla, cinnamon, salt and light brown sugar. Vigorously whisk all ingredients together until completely combined.
  • Pour the egg mixture evenly over the brioche cubes. You can gently stir any areas that seem to be a bit dry, but do not overmix. Cover with plastic wrap and refrigerate for at least 4 hours or overnight (up to 12 hours).
  • Prepare the topping: In a large bowl, stir together the flour, brown sugar, cinnamon and salt. Use a pastry blender or 2 forks to cut the butter into the dry ingredients until small clumps are formed. Gently stir in the oats. Place the topping into a sealed container and refrigerate until you're ready to bake.
  • When you're ready to bake, preheat the oven to 350 degrees F. Remove plastic wrap from the casserole dish and evenly sprinkle on the refrigerated topping.
  • Bake for 50-60 minutes or until the top of the casserole is golden brown and the french toast is firm.
  • Serve warm with Challenge butter and maple syrup.

2 cups half-and-half
1 cup eggnog
2 tablespoons granulated sugar
2 tablespoons packed light brown sugar
1 tablespoon pure vanilla extract
1 1/2 teaspoons freshly grated nutmeg
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1 loaf challah bread (about 15 ounces), sliced 1/2 inch thick
3 tablespoons turbinado sugar
Confectioners' sugar, for dusting
Whipped cream and/or maple syrup, for serving

Steps:

  • Whisk the eggs in a large bowl. Whisk in the half-and-half, eggnog, granulated sugar, brown sugar, vanilla, 1 teaspoon nutmeg, the cinnamon and salt. Arrange the challah slices in 2 lengthwise rows in a 9-by-13-inch baking dish, shingling the slices. Pour the egg mixture all over the challah and gently press down. Cover with plastic wrap and refrigerate overnight.
  • Preheat the oven to 350 degrees F. Combine the turbinado sugar and remaining 1/2 teaspoon nutmeg in a small bowl. Uncover the challah and sprinkle with the sugar mixture. Bake until browned and puffed, 35 to 40 minutes. Let sit 10 minutes. Dust with confectioners' sugar. Serve with whipped cream and/or syrup.

1 16-ounce loaf day-old challah or brioche bread cut into 1-inch cubes
8 large eggs
2 cups egg nog
1 cup whole milk
4 tablespoons brown sugar
1 teaspoon salt
2 teaspoons vanilla paste (or extract)
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
For the Streusel Topping:
¼ cup light brown sugar
¼ cup all-purpose flour
¾ teaspoon ground cinnamon
½ teaspoon salt
6 tablespoons cold butter cubed

Steps:

  • 1. In a greased 9x13 casserole pan, spread the cubed bread evenly over the pan. 2. In a medium bowl, whisk together the eggs, egg nog, whole milk, brown sugar, salt, vanilla paste, cinnamon, and nutmeg until no lumps remain. Pour the custard over the bread. Cover and soak overnight in the refrigerator. 3. An hour before serving, remove the pan from the refrigerator and preheat the oven to 350°F. 4. While the oven preheats, prepare the streusel topping. In a small bowl, whisk together brown sugar, flour, cinnamon, and salt. With forks or a pastry cutter, integrate cold, cubed butter into the streusel mixture until it resembles a pebble-like crumb consistency. Sprinkle streusel on top of the soaked bread. 5. Bake for 45 minutes, or until puffed and golden brown. Serve hot out of the oven with a sprinkling of powdered sugar or a drizzle with warm maple syrup.

1 large loaf day-old French bread
1/3 cup brown sugar
1/4 cup butter
1 tablespoon flour
1/3 cup quick oats
1/2 teaspoon cinnamon
1/4 cup chopped pecans

Steps:

  • In a bowl, whisk together the eggs, milk, cinnamon, salt, vanilla, and sugar; pour half the mixture into a 13 x 9 inch pan sprayed with nonstick cooking spray.
  • Cut bread into slices 1 1/2 inches thick and lay in pan, filling completely.
  • Pour remaining egg mixture over top; cover and refrigerate overnight.
  • Remove from refrigerator and bring to room temperature, about 30 minutes.
  • Bake, uncovered, at 450° for 15 minutes.
  • Mix topping ingredients together and sprinkle over casserole, bake for 10 minutes more.

Delicious and so easy, it'll become a Christmas morning tradition! Needs no syrup. Whipped cream and sliced fruit like strawberries and bananas are great on top! Instead of eggnog, you can use whole milk and add a 1/2 teaspoon of cinnamon, 1/4 teaspoon of nutmeg, and a tablespoon of vanilla.

1 cup brown sugar
½ cup butter
2 tablespoons light corn syrup
1 loaf French bread, cut into 1-inch slices
8 eggs
2 cups prepared eggnog

Steps:

  • Lightly grease a 9x13-inch baking dish.
  • Heat the brown sugar, butter, and corn syrup in a small saucepan over medium heat. Cook and stir until the mixture begins to boil; remove the mixture from heat, and pour into the prepared baking dish. Place the bread slices atop the brown sugar mixture.
  • Whisk the eggs and eggnog together in a large bowl; pour over the bread slices. Cover the baking dish with aluminum foil, and refrigerate 8 hours to overnight.
  • Preheat an oven to 325 degrees F (165 degrees C). Remove the baking dish from the refrigerator.
  • Bake in the preheated oven for 35 minutes. Increase heat to 375 degrees F (190 degrees C), remove the aluminum foil, and continue baking until the the top begins to brown, 5 to 7 minutes more.
