BEER AND ITALIAN SAUSAGE FONDUE

Eighteen 1/3-inch-thick baguette slices, cut diagonally
1/2 cup extra-virgin olive oil
3 cloves garlic, minced
2 tablespoons finely chopped fresh oregano
2 teaspoons fennel seeds, crushed using a mortar and pestle or place in a zip top bag and crush with a rolling pin
Freshly ground black pepper
1 cup beer, such as a brown ale, pale ale or lager, at room temperature, plus extra, as needed
1 tablespoon Dijon mustard
2 tablespoons extra-virgin olive oil
1 pound sweet Italian sausage, casings removed
1 medium onion, chopped (about 1 1/2 cups)
2 teaspoons fennel seeds, crushed using a mortar and pestle or place in a zip top bag and crush with a rolling pin
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
3 tablespoons all-purpose flour
2 cups packed coarsely grated extra-sharp white Cheddar (about 8 ounces)
2 cups packed coarsely grated fontina (about 8 ounces)
1/2 cup finely grated Parmesan

Steps:

  • For the crostini: Preheat the oven to 375 degrees F. Arrange the baguette slices in a single layer on a large baking sheet. Mix the oil, garlic, oregano and fennel seeds in a small bowl. Brush the oil mixture over the top of the baguette slices. Sprinkle lightly with pepper. Bake the baguette slices until lightly toasted but still slightly soft, 12 to 15 minutes.
  • For the fondue: Mix together the beer and mustard in a small bowl. Heat the oil over medium-high heat in a large nonstick skillet. Add the sausage, onions, fennel seeds, salt and pepper. Break the sausage into smaller pieces with a wooden spoon and cook until browned and cooked through, about 10 minutes. Stir in the flour. Add the beer mixture and bring to a boil. Reduce the heat to medium-low. Gradually add the Cheddar, fontina and Parmesan, stirring constantly, until the cheese is melted and smooth. Keep warm over low heat. If the fondue becomes too thick, gradually stir in extra beer, 1 tablespoon at a time.
  • Serve the fondue with the crostini.

1 cup chopped fresh mushrooms
1 medium onion, chopped
1 garlic clove, minced
1 tablespoon cornstarch
1-1/2 teaspoons fennel seed
1-1/2 teaspoons dried oregano
1/4 teaspoon garlic powder
2 cans (15 ounces each) pizza sauce
2-1/2 cups shredded cheddar cheese
1 cup shredded part-skim mozzarella cheese
2 tablespoons chopped ripe olives
Breadsticks, bagel chips, baked pita chips and/or tortilla chips

Steps:

  • In a large skillet, cook the beef, mushrooms and onion over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer. Drain. Stir in the cornstarch, fennel, oregano and garlic powder until blended. Stir in pizza sauce. , Bring to a boil; cook and stir for 1-2 minutes or until thickened. Gradually stir in cheeses until melted. Stir in olives. Keep warm. , Serve with breadsticks, bagel chips, pita chips and/or tortilla chips.

  • In a large skillet, cook bacon over medium heat until crisp. Using a slotted spoon, remove to paper towels. In the drippings, saute onion until tender. ¼ cup all-purpose flour
Dash of salt and pepper
¼ teaspoon nutmeg
2 apples, cored and thinly sliced
1 small French baguette, sliced 1/4 inch thick and toasted

Steps:

  • Chop 8 Lit'l Smokies smoked sausages and reserve the rest. In a saucepan over medium-high heat, heat chopped smoked sausages in olive oil with garlic until just browned.
  • Add white wine and milk. In a separate bowl, toss the brie and Cheddar cheeses with flour, thoroughly coat. Slowly whisk cheese mixture into the saucepan. Continue to whisk until smooth and thick, about 5 minutes. Remove from heat and season with salt, pepper and nutmeg.
  • Saute the remaining smoked sausages in a skillet until browned. Serve warm fondue with Lit'l Smokies smoked sausages, apple slices and toasted baguette. Drizzle fondue and apples with honey.

8 slices bread
1 lb sausage
2 cups cheddar cheese, grated
4 eggs
2 1/4 cups milk
1 (10 1/2 ounce) can cream of mushroom soup
1/4 teaspoon salt
1/2 cup milk

Steps:

  • Grease 9x13-inch pan.
  • Cube bread and layer in pan.
  • Brown and drain sausage.
  • Layer sausage over bread.
  • Sprinkle cheese over sausage.
  • Beat together eggs, 2 1/4 cups milk, and salt.
  • Pour over all layered ingredients.
  • Mix 1/2 cup milk and soup.
  • Pour over all.
  • Cover and refrigerate overnight.
  • Bake, uncovered at 300°F for 1.5 hours.
  • Let stand for a few minutes until firm.

4 eggs
3/4 teaspoon dry mustard
2 1/2 cups milk
1 (10 3/4 ounce) can cream of celery soup
1/2 cup milk
1/2 teaspoon salt

Steps:

  • Alternate first 3 ingredients in layers in greased 9x13 pan.
  • Blend eggs, dry mustard and 2 1/2 cups milk.
  • Pour over mixture in pan.
  • Mix remaining ingredients and pour over other mixture in pan.
  • Refrigerate overnight.
  • Bake at 300 for 1 1/2 to 2 hours.
  • (May be frozen and then baked).

1 1/2 lbs processed swiss cheese (2 packages sliced Swiss American from Safeway or Winco)
2 cups Chardonnay wine or 2 cups chablis
2 garlic cloves, mashed
1/2 teaspoon white pepper
1/8 teaspoon cayenne pepper (optional)
1/8 teaspoon nutmeg
1/2 loaf rye bread
1/2 loaf French bread
1 lb smoked sausage, 1/2 inch slices

Steps:

  • cut cheese stack into cubes.
  • In bottom of double boiler, start water boiling.
  • In top of double boiler directly on burner, simmer white wine, garlic, nutmeg, white pepper and cayenne pepper for approximately 10 to 15 minutes to reduce wine and let alcohol cook out.
  • Place top of double boiler on bottom and place cheese cubes in wine mixture.
  • Stir with wooden spoon until cheese completely melts.
  • If too thick, add more wine.
  • Place in fondue pot and keep hot.
  • Serve with toasted rye and French bread, and a favorite sausage.
  • Cut bread into 1/2 inch sized cubes. Place on a baking sheet and toast in a hot 400 degree oven for about 10 to 15 minutes.
  • Cut sausage into 1/2 inch slices and brown in skillet.
  • Serve with fondue.
  • This is also great with Apples, Celery, Cauliflower, use your imagination.
