Ellie's Macaroni and Cheese image

Easy-to-make macaroni and cheese that I've been making for years. This is a great end-of-the week recipe using up leftover deli cheese with American cheese and left over hot dogs or meatloaf.

Number Of Ingredients 7

1 (16 ounce) box macaroni (we like the wheels or elbows)
1 1/2 cups 1% low-fat milk
1 tablespoon flour
2 tablespoons butter or 2 tablespoons margarine
1 lb American cheese, reserve 4 slices (or a mixture of American and assorted deli cheese torn into pieces, does not matter what size as it)
2 -4 cooked hot dogs, cut into slices (optional) or 2 -4 leftover meatloaf, crumbled (optional)
paprika (optional)

Steps:

  • Preheat oven to 350°F.
  • Prepare macaroni according to package directions, drain.
  • Melt butter or margarine in large sauce pan.
  • Add flour and stir until cooked.
  • If using hot dogs or leftover meatloaf add to flour and butter and cook until heated.
  • Add milk to pan.
  • Cook until heated and thickened.
  • Add cheese to pan and stir well until cheese melts.
  • Add cooked macaroni to pan and mix well.
  • Put macaroni/cheese mixture in casserole (2-3 quart).
  • Cut or tear the 4 reserved slices of cheese and layer it over macaroni.
  • Sprinkle with paprika.
  • Cook uncovered in oven for 30-45 minutes until hot and bubbling.

A wonderful and easy Macaroni and cheese recipe. Have dinner ready for the hungry kids quickly. Serve alone or as a side dish.

230 g macaroni (uncooked)
3 cups milk
1 teaspoon salt
1 1/2 teaspoons all-purpose flour
1/4 cup butter
1 1/2 cups shredded cheddar cheese

Steps:

  • Melt butter in a saucepan over a medium heat.
  • Stir in flour and salt.
  • Add milk and macaroni to saucepan, and bring to a boil.
  • Reduce heat, and cover.
  • Simmer for 15 minutes or until pasta is tender, stirring occasionally.
  • Add cheese, and stir until cheese melts.
  • Serve.

1 (8 ounce) package elbow macaroni
5 tablespoons butter
5 tablespoons all-purpose flour
1 quart warm milk (110 degrees F/45 degrees C)
salt and pepper to taste
1 pinch cayenne pepper
1/4 pound cubed ham
5 ounces cubed Cheddar cheese
5 ounces mozzarella cheese, cubed
5 ounces Monterey Jack cheese, cubed
paprika to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9 x 13 baking dish. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • In medium saucepan, melt butter and stir in flour to make a roux. Cook 1 to 2 minutes, stirring constantly, then whisk in warm milk a little at a time to make a white sauce. Bring to a boil, then reduce heat and simmer. Mix in salt, pepper, and cayenne, and stir frequently until sauce thickens.
  • Remove pan from heat and stir in cheddar, mozzarella, jack and ham. Combine pasta with sauce and stir well. Pour into baking dish. Use paprika to make a decorative pattern on top. Bake 45 to 60 minutes, or until top is the desired crispiness. Let rest 20 minutes before serving.

1 cup half-and-half
1 pinch cayenne
salt and pepper
2 cups sharp cheddar cheese
1 tablespoon butter, melted, for the casserole

Steps:

  • Boil the macaroni for 4 minutes or until half-cooked (salt the water!)
  • In a medium saucepan heat the half-and-half with cayenne, salt and pepper. Add macaroni and 1 1/2 cups of the cheese and cook on medium heat until the cheese melts. Pour into a buttered casserole and top with remaining cheese.
  • Bake in a preheated 350F oven for 15 minutes until the cheese melts.
